I picked this recipe because it looked like something I could make for a quick dinner without a trip to the market. Consequently, I used wide paparadelle noodles and chicken thighs.  I also added some peas for bright color and thinned the sauce with cream instead of the pasta water.  

I was worried about the garlic burning so I took it out of the pan when it had browned but the bacon was still not finished.  

We really enjoyed it.  Nice balanced flavors.

Wow, this was fantastic. And quick. Perfect for a weeknight dinner. I think I'll add veggies next time so that it can be a one-pot meal. 

The only thing I didn't see in the instructions was to chop up the bacon after it was cooked, which I assume we should do (I did).

Excellent dish. The whole family loved it. Will definitely be making it again. 
I did make a couple tweaks such as seasoning the chicken with more than salt and pepper. I added way more Parmesan because we love cheese and I needed to add more pasta water.

This dish was amazing! My family all fell in love with it! I did not make it exactly the way that the recipe is. I made a few modifications. For instance, I only used yoke for it, and I increase the amount of Parmesan. Definitely play with this recipe, but it was a real hit!

Cooked it tonight for the fam. It turned out pretty good. Need more pasta water at the end than directed. Substituted sliced beef sausage instead of bacon and that was a good move for us. We were wondering about the raw egg too. We just let it cook on low for a while before we served. Will do it again!

I thought this recipe was great! I cut down on fat by using turkey bacon, and I used some pre-cooked chicken because I'm a college student who needed to study, and it was still delicious!

My husband is a good sport because this was just bad.  Followed the recipe to the T and the process just like on the video.  Eggs do not result in a creamy sauce.  Flavor was OK but it was not even close to creamy or any carbonara I've ever had

First food review ever:  Carbonara is a really delicious, inexpensive and easy limited ingredient family meal. Almost everyone has these ingredients in the fridge.  The cook and prep time is accurate. About 30 to 40 minutes. The serving size is accurate, too. The only thing I didn’t like was using whole eggs. I made it with whole eggs because that’s what the recipe called for but it sort of made me queasy with all the eggy liquid and did take extra time to be sure the egg whites had the right texture and were cooked. Next time I’ll use only the yolks and maybe 5 or 6 yolks. No whites.  I think it will be creamier.  The residual heat from the bacon and the hot pasta water will heat the eggs enough to cook them. Hasn’t anyone ever had over easy or over medium eggs?  Unless your eggs are cracked, weeks and weeks old and expired you aren’t going to die. (Caesar dressing uses raw egg yolks).  A lot of people skip the parsley but don’t. It needs the color and flavor.

Was clumpy and not running and creamy at all!

Chicken Carbonara

Pasta:

Pasta: Cook the spaghetti in a large pot of salted boiling water until al dente according to package instructions. Reserve 1 1/4 cup of the pasta cooking water.

Eggs:

Eggs: Whisk the 2 whole eggs and 2 egg yolks with 1 1/4 cup of the parmesan cheese, salt, and pepper. Set aside.

Meats:

Meats: Cook the bacon in a skillet over medium high heat. When almost crisped, add the chicken and cook for another 2-3 minutes, until the bacon is done. Remove the bacon and chicken with a slotted spoon and set aside.

Start the sauce:

Start the sauce: Reduce the heat in the skillet to medium. Add the garlic and cook for 30 seconds to 1 minute. Add the pasta cooking water into the skillet along with the spaghetti. Toss the spaghetti until the sauce starts to become thickened and glossy. Turn off the heat.

Finish the sauce:

Finish the sauce: Pour the egg and Parmesan mixture into the skillet, and toss the pasta. Continue to toss the pasta until the sauce is thick and the eggs are fully cooked. Add the bacon and chicken back to the skillet and stir to combine.

Garnish:

Garnish: Top with the remaining cheese and freshly ground black pepper.

Chicken Carbonara Recipe

chicken (shredded)

heavy whipping cream

Parmesan

basil leaves (chopped)

Italian parsley leaves (chopped)

Cook pasta per package directions, aiming for al dente.

In a large bowl, whisk together egg yolks, cream, parmesan cheese, lemon zest, oregano, basil, and parsley until combined.

Place a large frying pan over medium heat and add olive oil.  Once hot, add diced bacon, and cook until crispy, for about 4-5 minutes.

Add onion and garlic and continue to cook and stir for another 2 minutes.

Add the chicken to the pan, toss and stir and cook for 4-5 minutes, until the chicken is warm.

Reduce heat to low-medium and add the spaghetti to the pan, toss to combine and pour the cream mixture on top. Toss again to combine and ONLY cook for about 4-5 minutes. Cooking longer will make the eggs turn into scrambled eggs.

Taste and adjust for salt and pepper.

Garnish with parsley, more grated parmesan cheese and serve.

Boil

Bring a large pot of water to a rolling boil. Season liberally with salt.

Bacon

Heat a large skillet to a medium heat. Add bacon. Cook bacon until is crisp. Use a slotted spoon to remove. Drain on a paper towel.

Whisk

While the bacon cooks, add egg yolks, parmesan cheese, cream, salt, and pepper to a medium bowl. Whisk to combine.

Cook

Season chicken tenders with salt and pepper on both sides. Add to the rendered bacon fat and cook until golden brown on both sides, about 2-3 minutes per side. Set aside and slice.

Pasta

While the chicken cooks, drop the pasta into the water. Cook until just under aldente (it will continue to cook when you toss the pasta with the sauce.)

Garlic

Remove the chicken from the pan and set aside. Lower the heat to medium and add garlic. Cook for 1-2 minutes until fragrant.

Toss

Use the tongs to transfer the pasta to the garlic and bacon fat. Toss to combine. Reserve starchy cooking liquid.

Combine

Remove the pan from the heat and while tossing the pasta, pour in the egg, cream, and cheese mixture.  Toss together and place back over a low flame. Continue to toss the pasta until the cheese melts and the sauce is thick, about 2-3 minutes. Do not turn the heat up too high or you could curdle the eggs, a very low heat works great. Add the bacon back in and toss again. If needed, add pasta water ¼ cup at a time to reach desired consistency of sauce.

Season

Season to taste with salt and pepper. Arrange chicken on top. Serve!

Prepare ingredients: Ensure all ingredients are chopped/measured/prepared before you start cooking. 1. Heat a large pot of water with a tablespoon of salt. Bring to a boil. Then reduce the heat to maintain a gentle simmer until you are ready to bring it back to a boil to cook the pasta.2. Lay chicken breasts in between two layers of plastic wrap and flatten to 1/2&quot; thick using a meat tenderizer or a rolling pin. Coats both sides with salt and pepper.
