Healthy Chicken Fajita Bowls have a bed of rice loaded with seasoned chicken, peppers, onions, beans and corn for a simple, delicious dinner.

Healthy Chicken Fajita Bowls

chicken breast

rice

poblano pepper (sliced thin)

red pepper (sliced thin)

onion (sliced thin)

black beans

corn (drained)

fajita seasoning

Optional ingredients: shredded cheese, sour cream, avocado, salsa, limes

Preheat a large skillet to medium high heat and add oil. Season chicken, onions, and peppers with half of the fajita seasoning.

When skillet is hot, add the chicken, peppers, and onions. Cook 3-4 minutes per side, or until chicken is cooked through. Transfer chicken and vegetables to a plate and cover with foil to keep warm.

To the same skillet, add corn and black beans with the remaining fajita seasoning. Cook, stirring frequently, until warmed through.

Fill bowls with rice, then top with chicken, onions, peppers, corn, and black beans. Add additional toppings as desired, like sour cream, salsa, avocado and a squeeze of lime.

Assembly

These chicken fajita quinoa bowls come together in about 30 minutes for an easy weeknight dinner. They feature spiced-up chicken, sautéed peppers and a creamy avocado goat cheese sauce all served over a bed of quinoa.

Chicken Fajita Bowls

Tablespoons lime juice

yellow bell pepper (sliced)

chili powder

½ Tablespoon chili powder

garlic powder

cumin

½ teaspoon ground pepper

romaine lettuce

cilantro

pico de gallo

hot sauce (optional)

Prep Sauce

Prepare avocado goat cheese sauce. Add avocado, goat cheese, lime juice and sea salt to a blender and blend until smooth. Add to a bowl and place in the fridge until ready to serve. 

Cook Quinoa

Rinse and drain quinoa. Place water, salt and quinoa into a saucepan and bring to a boil. Reduce to a simmer. Cover and cook for about 15 minutes, or until all liquid is absorbed. Remove from heat and let pot sit, covered for 2-3 minutes. Remove lid and fluff with a fork.

Sauté

While quinoa is cooking, get started cooking everything else. Heat a large skillet with 1 teaspoon oil over medium-high heat. Add in garlic, onions, red and yellow bell pepper, salt and chili powder. Sauté until veggies are tender, but still crisp, about 5 minutes. Transfer veggies to a plate.

Cook

Using the same skillet, add chicken, lime juice, oil and seasonings (chili powder, garlic powder, cumin paprika, salt and pepper) and cook over medium-high heat for about 6 minutes or until chicken is no longer pink and internal temperature reads 165°F. Remove from heat and set aside.

Assemble

Once everything is cooked and dressing is prepped, make bowls by adding a base of quinoa, 1/4 of the chicken and 1/4 of the bell peppers. Add chopped romaine, pico de gallo or salsa and freshly chopped cilantro for serving. Drizzle on the avocado goat cheese sauce. To make it look really pretty you can add the sauce to a zip-lock baggie, cut the tip and squeeze the sauce over each bowl in a zigzag pattern. Add a little hot sauce (if using) and dig in!

Excellent. I made it almost exactly like the recipe. I added some plain full fat Greek yogurt to the avocado dressing. And that was the only change. It’s definitely a keeper. I will be taking it for lunch all week. My coworkers are always wanting to know what I am eating today. Most of them eat frozen meals out of a box.  Not me. These Chicken Fajitas Bowls are perfection. Truly everything you’ve ever wanted, steamed white rice, black beans, charred corn, pico, guacamole and more! And best part about it… you serve it in a bowl. Which if you’re new here, is my all time favorite way to eat anything. Bowls all day, every day.

Easy Chicken Fajitas Bowl

Chicken Breasts

garlic, (minced)

Cumin

Chili Powder

Red Pepper Flakes

Slice the chicken breasts into thin strips, about the size of your finger. Combine the lime juice, olive oil, garlic, salt, cumin, chili powder and red pepper flakes in a bowl and whisk to combine. Add the chicken and marinate for 1 hour.

Heat a large cast iron skillet over high heat. Add a tablespoon of olive oil. Add the chicken mixture, marinade included, and sauté until fully cooked. Using a pair of tongs, remove the chicken from the skillet and add the vegetables. Sauté until tender and charred. Add the chicken back into the cast iron skillet and toss to combine.

Serve in a bowl with rice, black beans, charred corn, chopped tomatoes, a big spoonful of guacamole and a wedge of lime.

This was delicious! The addition of the poblano pepper was a fun addition to a typical meal in our house. The seasoning was delicious as well! I made a cilantro lime rice and used sofritas black beans to add flavor to an already delicious meal!

This was a big hit with the family. Flavor was great and heats up wonderfully the next day for lunch.

This was so easy to make- a perfect busy weeknight meal!

I made this last night, but used flap steak. I followed the directions exactly (except for the chicken!) but I felt it didn't have enough moisture/seasoning. The corn... huge mistake because I bought a can of charred corn- expensive waste of money. Did I miss a sauce? 
I made the lamb meatballs the night before and would give them a rating of 10, so this recipe surprised me a bit.
I honestly hate giving less than a 4 or 5 star, but this wasn't my favorite.

Something about a meal in a bowl makes it even more delicious!! This one looks amazing!

Yum yum yum! Tried to find simple healthy dinners and this was delicious going to be a regular in this house

So. dang. good. . A little prep work and time-intensive? Yep. Worth it? 100%. And don't overlook this detail: a searing hot cast iron skillet is pretty critical to get that amazing char on your veggies and caramelization on your chicken. Don't push the veggies and chicken around too much. Leave them alone and let them develop some color and flavor.

So yum! Your guacamole is REALLY GOOD! Quick question for weeknight ease...do recommend “charring” frozen corn? It’s not in season yet here - I can’t wait for grilled corn in summer salad season!

These were easy to make and very tasty!  The teenager and husband loved them. We used riced cauliflower and also had tortillas as an option.  These fajitas were awesome especially with our homemade guac!
