A Mexican-inspired pasta dish... Chicken fajitas meets pasta night! This easy chicken dinner is made in one pot, for an easy dinner ready in under 30 minutes!

One-Pot Chicken Fajita Pasta

olive oil

lb boneless (skinless chicken breasts, cut into bite-sized pieces)

tsp kosher salt

tsp cumin

paprika

tsp chili powder

garlic powder

onion

red bell pepper (sliced)

yellow bell pepper (sliced)

garlic (minced)

less-sodium chicken broth

Mild Ro-Tel Diced Tomatoes & Green Chiles

oz pasta (use gluten-free pasta

sour cream

scallion (diced)

cilantro

oz diced avocado (from 1 small)

Season chicken with 3/4 tsp salt, 1 tsp cumin, 1/2 tsp paprika, 1/4 tsp chili powder and 1/4 tsp garlic powder.

In a large deep nonstick skillet, heat 1 teaspoon olive oil over high heat. When the oil is very hot, add the chicken and cook until browned, stirring about 5 to 6 minutes.Transfer to a plate and set aside.

Reduce heat to medium, add the remaining teaspoon of olive oil to the skillet.

When the oil is hot, add the onions, bell peppers, and remaining 1/2 tsp cumin, 1/2 tsp paprika, 1/4 tsp chili powder and 1/4 tsp garlic powder, 1/4 tsp salt. Cook, stirring occasionally, until soft, about 10 minutes.

Add minced garlic, and stir until fragrant and well combined, about 30 seconds.

Remove from heat and transfer to the plate with the chicken.

In the same skillet, add the broth, diced tomatoes and uncooked pasta. Stir to combine and bring to a boil, then cover, reduce heat to medium-low, and cook for 15 minutes until pasta is tender and liquid is mostly absorbed.

Add the chicken and veggies back into the skillet and stir to combine until heated through, about 2 minutes.

Mix in the sour cream and top with scallions and cilantro. Serve with avocado on top.

Instant Pot Chicken Fajita Pasta

chicken

tbsp taco seasoning

lb large pasta shells

cheddar cheese, grated

Add olive oil, chicken, taco seasoning, garlic, onion, chicken broth, salsa and shells to the Instant Pot in that order, making sure to leave the shells sitting on the top of all the other ingredients.

Cook on high pressure for 3 minutes, then do a quick release of the pressure. Instant Pot will take about 10-15 minutes to preheat, then pressure cook for 3 minutes.

Remove lid when safe to do so and stir in bell peppers, sour cream and cheddar cheese, stirring well. Replace lid and let sit for five minutes.

Remove lid again and stir in cilantro, then serve among 6 bowls, topping with avocado. Serve and enjoy!

This Chicken Fajita Pasta is a great alternative to using wraps - and a proper tasty, slimming friendly meal for the whole family!

Chicken Fajita Pasta | Slimming &amp; Weight Watchers Friendly

chicken breasts

400 g dried pasta

onion (sliced)

peppers (sliced)

tomato puree

water

tbsp cumin

tbsp coriander

chilli powder (to taste)

0.5 tsp chilli flakes

tsp garlic salt

low calorie cooking spray

Cook

Cook the pasta as per the instructions on the packet. In a pestle and mortar, mix the cumin, coriander, chilli flakes, garlic salt and chilli powder until thoroughly combined.

Spray

Spray a pan with low calorie cooking spray and cook the  sliced chicken for 5 minutes. Add the spice mix and tomato puree and cook for 3 minutes. 

Add the sliced peppers and onions, along with 200ml of water and mix well. Leave to cook for 10 minutes until the chicken is cooked through and the peppers and onions have just started to soften.

Drain

Drain the pasta and combine with the chicken fajita mix. Serve with a dollop of fat free yoghurt, or a different topping of your choice!

CHICKEN FAJITA PASTA

oz fusilli pasta

cream cheese

fajita seasoning

bell peppers (tri

white onion (sliced about ½ inches thick)

garlic (minced (about 1 ½ tablespoons minced))

tomatoes

Salt

OPTIONAL : Fresh cilantro and/or ¼ cup Parmesan or cotija cheese

In a dutch oven or a deep skillet, add olive oil over medium heat. Once oil is hot, add chicken strips and cook for 2 minutes on each side. Remove any excess liquid, return to the pot and add 1 1/2  tablespoons of fajita seasoning. Stir to combine and cook for another 1 minute. The chicken should be cooked through at this point, but if you have thicker pieces, you may need to cook a little bit longer. Make sure the internal temperature of the chicken is 165° to be safe. Set aside.

COOK THE CHICKEN

In the same skillet saute the bell peppers and onions with 1 tablespoon of fajita seasoning until they start to become soft (about 2-3 minutes). Set aside.

COOK THE VEGGIES

Add the chicken broth, tomatoes and fusilli to the pot. Bring the mixture to a gentle simmer over high heat, then reduce the heat to low and cover with a lid. Cook for 10-15 minutes or until pasta is al dente. At this point you will have a little extra water in the pot (it will not evaporate completely). That's totally fine!

COOK THE PASTA

Add dollops of cream cheese, stir to combine.

Return the veggies and chicken to the pot, taste for seasoning and add some salt and pepper if needed. (If you want even more flavor, you can add a little smoked paprika, cumin, and cajun spice.) Stir in shredded cheese. If desired, serve with fresh cilantro and parmesan or cotija cheese sprinkled on top.

PUT IT ALL TOGETHER!

In a small bowl combine the fajita marinade ingredients.&nbsp;

Place the chopped chicken in one large ziplock bag, and the veggies in another large ziplock bag. Pour half of the marinade into each bag and toss them to coat. Refrigerate for 15 minutes, or up to a few hours.

When ready to cook, heat oil in a large skillet over medium-high heat. Once hot, add the chicken (discard any remaining marinade), and cook for 3-4 minutes. Flip chicken to cook on the other side until cooked through (about 165 degrees F). Remove to a plate and cover with aluminum foil. Add veggies and garlic to the pan and sauté for a few minutes, until tender. Remove to the plate with the chicken.

In the same skillet, add the broth, milk, diced tomatoes, uncooked pasta, and salt.

Stir to combine and bring to a boil. Once boiling, cover, reduce heat to medium-low, and cook for 13-15 minutes or until pasta is tender and liquid is mostly absorbed.&nbsp;

Add the chicken and veggies back into the skillet and stir to combine until heated through.&nbsp;

Serve immediately, topped with salsa and sour cream, if desired.
