This chicken foil packets recipe is great for summer and can be made in the oven, grill, or over a campfire. Whichever cooking method you choose, this is a fun way to make a meal for the whole family to enjoy!

Chicken Foil Packets

chicken breasts (cut lengthwise into 4 pieces each)

1lb 8 oz bag Petite Red Potatoes (cut lengthwise into 4 pieces each)

yellow onion ( finely chopped)

tbsp butter

tbsp minced garlic

tsp smoked paprika

tsp chipotle chili powder

tsp salt

tsp black pepper

garlic powder

bacon

Colby Jack cheese (shredded)

chives (chopped)

Preheat the oven to 400 degrees. Rip 4 long pieces of foil, and fold each piece in half to make it stronger and prevent leaks. Set aside.

Place the cut Petite Red Potatoes in a large pot and cover with cold water. Bring water to a boil over medium-high heat and allow to cook for 6 minutes. Drain potatoes, return to pot, and let cool.

Add chicken pieces, chopped onions, melted butter, minced garlic, smoked paprika, chipotle chili powder, salt, ground black pepper, and garlic powder. Toss to coat all pieces of chicken and potatoes.

Place about 1 ½ cups of potatoes in each foil packet (you’ll want to divide the potatoes equally between the 4 foil packs), top with 4 chicken pieces. Bring up the two lengthwise pieces of foil and fold over to seal. Roll the two edges of foil together. Place the foil packets on a baking sheet.

Bake in the oven at 400 degrees for 30-35 minutes, or until the potatoes are tender and the chicken juices run clear.

Remove from the oven and open each chicken packet. Drain the liquid from each packet and place the packet back down on the baking sheet, still open.

Divide the Colby Jack cheese evenly between each packet and sprinkle directly on top of the chicken. Add cooked and chopped bacon to the tops of the cheese and place back in the oven for 2-3 minutes, or until cheese is melted.

Top with chives, serve and enjoy!

Little Potatoes (about 16-20, halved)

ham (cubed)

canola oil

seasoning salt

Italian seasoning

dry mustard

black pepper

Swiss cheese

Preheat the grill to medium-high, or about 400 degrees F.&nbsp;

In a large bowl, combine all ingredients except for the cheese (chicken through pepper). Stir well.

Lay one piece of tin foil on top of another and spray the center lightly with non stick spray. Spoon 1/4 of the chicken mixture into the center of the foil, and fold to seal completely.

Grill over direct heat for about 20 minutes, until a meat thermometer inserted in the thickest piece of chicken reaches 165 degrees F.&nbsp;

Open packets and sprinkle each with 1/4 cup cheese. Close the grill for 2-3 minutes, just until melted. Serve.

Grilled Pineapple Chicken Foil Packets - chicken, pineapple, peppers, and onions slathered in a sweet and savory teriyaki sauce and cooked on the grill!

Grilled Pineapple Chicken Foil Packets

chicken breasts

red bell pepper (chopped)

green bell pepper (chopped)

onion

pineapple chunks

teriyaki sauce ((see note))

Asian toasted sesame dressing ((see note))

Preheat the grill. Lay out 4 large (about 24 inches long) pieces of foi. In a bowl whisk together teriyaki sauce and sesame dressing.

Distribute chicken, peppers, onions, pineapple chunks, and sauce between the sheets of foil. Fold the the sides of the foil over the fillings and seal shut.

Grill packets for about 10-15 minutes, turning over once half way through. Carefully unfold foil packets and check chicken to make sure it is cooked through. Garnish with cilantro and sesame seeds if desired, serve immediately.

Caprese Chicken Foil Packets

mini new potatoes

mozzarella ball

Preheat the grill or oven to 400 degrees F. Lay out 4 large squares of foil.

Cut the potatoes into quarters and divide them onto the four pieces of foil. Drizzle each pile of potatoes with 1 teaspoon olive oil and sprinkle with salt and pepper.

Lay one chicken breast over each pile of potatoes. Spread 1 tablespoon of pesto over each chicken breast, and sprinkle with salt and pepper. Fold each piece of foil around the potatoes and chicken, sealing on the top and sides.

Grill or bake the chicken packets for 30-35 minutes. Meanwhile, slice the mozzarella ball into four rounds, and cut four slices of tomato.

Once the chicken is cooked through, carefully open the foil packets and place one slice of mozzarella and one slice of tomato over the top of the chicken. Brush a scant amount of pesto over the top of each tomato. Place the packets, open, over the grill for 5 minutes to let the mozzarella melt.

Simply toss the ingredients in a sealed foil packet and place on a grill grate over your campfire to cook and you&#039;ll have yourself a homemade dinner in the great outdoors.

Campfire Foil Packets

soy sauce

Tablespoons olive oil (divided)

garlic

smoked paprika

boneless skinless chicken breasts (thin sliced)

baby potatoes

green beans (trimmed)

Tablespoon fresh chopped parsley (for garnish)

salt and pepper (to taste)

In a medium mixing bowl, whisk together soy sauce, lemon zest, lemon juice, brown sugar, 2 tablespoons olive oil, minced garlic, and smoked paprika to make the marinade.

Place chicken in the marinade and cover (or place chicken and marinade in a Ziploc bag). Refrigerate for at least 30 minutes, even better if you can marinate overnight.

Just before assembling the foil packets, toss together baby potatoes, green beans, 2 tablespoons olive oil, 1 tablespoon of chopped parsley, and salt/pepper to taste.

Tear off four large (18”x18”) sheets of aluminum foil. Fold in half once to form a double layer rectangle.

Place 1⁄4 of the veggie mixture in the center of the foil. Place one chicken breast over the top of the vegetables. Fold in each side to the center and then fold in the top and bottom to form a secure packet. Repeat for the remaining ingredients to form four foil packets.

Cook over grill or campfire at 400°F for about 25-30 minutes or until potatoes are fork tender and the chicken registers 165°F internal temperature.

Season with salt, pepper, and a fresh sprinkle of parsley, if desired.
