Keto Cheesy Chicken Fritters

chicken

mozzarella cheese (shredded)

dill (chopped)

In a bowl, combine ground chicken, beaten egg, almond flour, cheese, dill and seasonings. Mix well until smooth.

With a tablespoon, scoop the mixture and form patties.

Heat the oil in a frying pan over a medium-high heat and fry the cutlets for 3-4 minutes on each side or until cooked through.

Transfer to a plate and serve with some leafy greens and aioli or any other sauce of your choice.

Cheesy Chicken Fritters Recipe

1.5 lb (700 grams) skinless boneless chicken breast

almond flour

(110 grams) shredded mozzarella cheese

basil (finely chopped)

Tbsp chives (chopped)

Tbsp parsley (chopped)

garlic powder

sea salt black pepper (or to taste)

Tbsp olive oil (or more to fry)

Place the chicken breast on a chopping board and using a sharp knife, chop it into tiny pieces, then place them in a large mixing bowl. 

Into the large bowl, stir in almond flour, eggs, mozzarella, basil, chives, parsley, garlic powder, salt, and pepper. Mix well to combine.

Heat oil in a large non-stick pan, over medium-low heat. With an ice cream scoop or a large spoon, scoop into the chicken mixture and transfer it to the pan, then slightly flatten to create a fritter. Don&#039;t overcrowd the pan, cook the fritters in batches, about 4 per batch.

Fry until golden brown on both sides, about 6-8 minutes. Keep in mind that you need to cook them at medium-low temp, otherwise they will burn on the outside but won't get well cooked on the inside.

As you will see in other recipes, there are many ways of preparing the mixture for the cheesy chicken fritters. But I wanted to make them Ketogenic so I had to stick within the rules and use only approved ingredients.

The first thing to keep in mind is that you need to chop the chicken in very small pieces. Then, add eggs, almond flour, and shredded mozzarella. This will make the mixture hold together nicely.

Next, you need to add the flavorings such as fresh chopped herbs, dried herbs, garlic, chili, salt & pepper, or any other seasonings of your choice.

Mix everything well, shape the fritters and you can make right away or refrigerate them until you’re ready to cook them. You can even refrigerate them overnight, so if you have a special occasion the next day, like a potluck, for instance, you can make them the night before and cook them just before guests arrive.

Now that you know how to make the mixture for chicken fritters, let’s see how you can adapt this recipe to your taste.

2. Adapt this easy chicken fritters recipe to your taste

I made these cheesy chicken fritters with mozzarella, but you can replace it with any shredded cheese. It’s worth noting here that the cheese should be a melty one (like cheddar, gouda or provolone) to hold the mixture together.

As for the seasonings in these cheesy chicken fritters, the sky is the limit. Actually, it’s your taste buds and the ingredients available but you get the point.

You can use any of your favorites and here are a few good ideas:

    dried oregano
    Italian mix
    smoked paprika
    chili
    ground cumin

Furthermore, you can replace the chicken with turkey and you can use ground meat or chopped skinless breast or thighs.

Cheesy Chicken Fritters

lbs chicken breasts ((3 large))

all-purpose flour (or cornstarch or potato starch

mozzarella cheese ((1 1/3 cups shredded))

Tbsp chopped fresh dill

tsp salt

Using a sharp knife, dice chicken into 1/3" thick pieces and place them in a large mixing bowl. Tip: If chicken breast is partially frozen, it will be a little bit easier to slice.

Into the mixing bowl, add remaining batter ingredients: 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour, 1 1/3 cups shredded mozzarella, 1 1/2 Tbsp dill, 1/2 tsp salt and 1/8 tsp black pepper, or season to taste. Stir the mixture until well combined, cover with plastic wrap and refrigerate 2 hours or overnight.

Heat a large non-stick pan over medium heat and add 2 Tbsp oil. When oil is hot, add the chicken mixture a heaping Tablespoon at a time. Slightly flatten out the tops with the back of your spoon and sauté uncovered 3-4 min on the first side, then flip and saute 3 min on the second side or until outsides are golden brown and chicken is fully cooked through* Repeat with remaining fritters adding more oil as needed.

To make the aioli (if using), combine all ingredients in a small bowl or measuring cup and stir together until smooth.

Juicy and tender chicken fritters that are so flavorful and the perfect for lunch or light dinner.

Broccoli Chicken Fritters

lb. Chicken breasts (or ground chicken)

breadcrumbs

broccoli

Eggs

dill

Onion powder

Garlic powder

Salt

Pepper

tbsp Oil (for frying)

Cut the chicken into chunks and place them in a food processor.

Pulse for about 1minute for finely chopped pieces or less for coarsely ground meat (be careful not to over-process the meat into a paste). The meat should hold together when pinched. Alternatively, you can use ground chicken.

Next, hold the broccoli with the stem facing up and using a sharp knife, carefully separate the florets, making downward cuts from the stem.

Bring a pot of water to boil over medium-high heat. Once the water starts to bubble, place the broccoli florets on a steam basket and add it on top of the boiling water.

Cover with a lid and let the broccoli steam for 2-3 minutes. Once the broccoli is done, remove from heat and allow it to cool. Chop it into small pieces.

Place the ground chicken, broccoli, bread crumbs, eggs, dill, and seasonings to a bowl.

Using your clean hands, mix until all the ingredients are evenly combined. Rub your hands with a bit of oil and pinch off a piece of meat mixture; shape it into a mini patty, about 1/2-inch thick.

Heat oil in a non-stick skillet over medium heat.

Cook the patties on each side until nicely golden brown, about 3-4 minutes per side.

Serve the fritters with your favorite dip and enjoy!

CHICKEN FRITTERS

Chicken Breast Tenders- 1 kg

Mozzarella cheese- 100 gm

All purpose flour*- 1/2 cup

Dry dill- 2 tbsp

Black pepper-

Salt-to taste

Canola oil/ Coconut oil

**Dice the chicken breast tenders 1/2" or 1 cm thick pieces using a sharp kitchen knife. Transfer them to a large container, then add in the remaining ingredients (eggs, Mozzarella cheese, mayonnaise, all purpose flour, dry dill, garlic cloves, black pepper &amp; salt) and mix well.

Heat 5-6 tbsp. coconut oil in a large frying pan, place spoonfuls of the chicken mixture into the frying pan using an ice-cream scoop. Fry until the chicken fritters are lightly browned ( 3-4 min per side), then transfer them on a rack or a plate lined with paper towels.

Repeat the process with the remaining fritter mixture, add extra oil if necessary.

These easy chicken fritters make the best keto appetizers. They have a delicious cheddar crust and are perfect for dipping in your favorite sauce or dressing.

Cheesy Keto Chicken Fritters

Cabot Seriously Sharp (grated)

garlic (minced)

parsley

salt

tsp pepper

½ tsp red pepper flakes

olive oil

½ tbsp butter

Line a large baking sheet with parchment or waxed paper.

In a large mixing bowl, combine the chicken, cheddar, almond flour, egg, garlic, parsley, salt, pepper, and red pepper flakes. Use your hands to mix everything well.

Using 2 tablespoons at a time, form the mixture into small patties about 2 ½ to 3 inches across. You should get 24 to 26 patties. Place on the prepared baking sheet and refrigerate one hour.

Set a large skillet over medium heat and add 1 tablespoon of the oil and ½ tablespoon of the butter. Once hot, add 8 to 10 of the chicken patties. Cook about 3 minutes per side, until cooked through (the internal temperature should reach at least 165ºF on an instant read thermometer).

Place the finished patties on a paper towel lined plate to dry and repeat 2 more times, until all of the patties are cooked. Note: you may want to scrape out some of the baked-on cheese between batches, to avoid burning it.

Serve warm, with some ranch or bleu cheese dressing for dipping.

These Chicken Fritters are quick and easy to make and are crispy on the outside, and soft, juicy, and tender on the inside with a hint of garlic!

Easiest Chicken Fritters Recipe (Perfect Every Time!)

Start by soaking clean chicken breasts in cold water for a couple of hours, and changing the water periodically. This is certainly optional, but it's my preferred way to cook meat while ensuring that it's thoroughly clean.

Cut all fat off the chicken breasts and rinse well, again. Place clean beasts into a strainer for excess water to drain.

Then cut the chicken into tiny cubes, about ¼”. Place chicken cubes into a large mixing bowl for easier mixing.

How to Prep Chicken for Chicken Fritters

Next, add eggs, shredded yellow onion, crushed garlic, mayonnaise, Mrs. Dash seasoning, salt, and black ground pepper to the chicken.

Stir everything together, then add flour and mix it again. The mixture should thicken a little after adding the flour.

How to Make Chicken Mixture for Chicken Fritters

Now heat a large non-stick skillet or large frying pan over medium-low heat. That will be 3.5 if your stove is digital.

Add 2-3 tablespoons of olive oil to the pan. When oil gets hot, place one large ice cream scoop of chicken mix onto the pan and pat down to flatten into a fritter.

I like to cover the pan with a Frying Pan Splatter Screen Guard as the fritters splatter during sautéing, the guard contains most of the splatter. A regular lid traps the steam while a screen guard releases the steam but contains the splattering.

This is an optional step but I love the results with it; I've noticed that covering with a pan lid causes the fritters to water, release their juice, then later become too dry.

Sauté fritters for 5 minutes on each side. I prefer sautéing a tad longer on a lower temp to ensure the meat is well done. Then flip the fritters over and sauté for 5 more minutes.

Once done, place sautéed fritters onto a plate or cutting board lined with paper towels to soak in excess oil, then place the fritters onto a serving dish of your choice before transferring another set of sautéed fritters to the lined paper towel surface.

You may need to replace the paper towels every couple of batches as they get oily fast.
