Chicken tenders

Tomato,

Marinate chicken and prepare gyro fixings

In a larger mixing bowl, combine the marinade ingredients, mix well. Add the chicken tenders and mix to make sure chicken is well coated with the marinade. Cover and refrigerate for 30 minutes (or refrigerate overnight.) Meanwhile, make Tztaziki sauce according to this recipe, and prepare the pita and other gyro fixings.

Cook chicken

Heat 1 tbsp extra virgin olive oil in a non-stick skillet over medium-high until shimmering but not smoking. Add chicken tenders to the pan (make sure to shake off any excess marinade before adding chicken to the pan.) Cook on one side undisturbed for 5 minutes until browned. Using a pair of tongs, turn chicken over and cook on other side for another 5 minutes or until chicken is done. (See notes for outdoor grilling)

Assemble the chicken gyros

Warm up some pita. Spread Tztaziki sauce on top, then add chicken (about 2 to 3 tenders) and top with tomato, cucumber, green pepper, red onion and olives as you like. Wrap the pita up and enjoy!

My husband and I spent our honey moon in Greece this past September. We loved the gyro and we have been craving them ever since. I came across this recipe and thought I would give it a try. Wow it was so delicious!! We will make this again that's for sure. We both agreed that it reminded us of the ones in Greece.

Made this with chicken breast cut into cubes and served with home made pitta, fom this site, mediterranean salad, homemade chips and tadziki. Everyone enjoyed it. Lovely flavours. Next time i will also serve home made hummus. Thankyou, great recipe.

🔹 2 tbsp red wine vinegar
🔹 3 garlic cloves, minced
🔹 Kosher salt, generous pinch to taste

🔹 1 tbsp oregano
🔹 1 tsp sweet paprika 
🔹 1 tsp ground cumin
🔹 1 tsp ground coriander
🔹 pinch cayenne pepper, optional

How to Make Greek Chicken Gyros | The Mediterranean Dish

The best homemade Greek chicken gyro recipe with fluffy pita breads and creamy tzatziki sauce for you to recreate this authentic Greek delight from scratch!

Homemade Greek Chicken Gyro recipe

800 grams/ 28 oz. boneless chicken thighs

onion

red pepper

olive oil

tsps smoked paprika

tsp honey

lemon juice

salt and pepper

cucumber

garlic, minced

yogurt (18 ounces)

red wine vinegar

salt

pita breads

tomato, sliced

red onion, sliced

potatoes (optional)

romaine (cos) lettuce (optional)

paprika

To prepare this chicken gyro recipe, start by preparing the marinade for the gyro. In a large bowl, combine marinade ingredients and stir well.

On a cutting board, place a piece of plastic wrap over the chicken thighs and pound until about 1 1/2 cm thick with a meat mallet or heavy pan.

In another large bowl combine chicken thighs and marinade, stirring well to coat. Cover with plastic wrap and refrigerate for at least 2 hours and up to one day.

Skewer the chicken thighs individually on a spit (make sure to skewer them pretty tight). In between the chicken pieces skewer the onion and peppers.

Bake for about 1- 1 and 1/2 hour, until internal temperature reaches 165°F (75°C)

Let it rest for about 8 minutes and then carve slices with a sharp knife.

For the chicken gyro

In the meantime prepare the tzatziki sauce for the chicken gyro. Pour in a blender the olive oil and grated garlic and blend until combined.

Remove the skin and seeds of the cucumber and grate it into a large bowl. Season with salt and pepper and leave aside for 10 minutes. Wrap the grated cucumber in a towel and squeeze, in order to get rid of the excess water.

In a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 tbsps of red wine vinegar, a pinch of salt and blend, until the ingredients are combined.

Store the tzatziki sauce in the fridge and always serve cold.

For the tzatziki sauce

Prepare the pita breads. Preheat the oven to 250C. Use a cooking brush to oil the pita breads on both sides and season with salt and oregano. Place a large oven tray (upside down) at the bottom of the oven and place the pita breads on top of the tray. Bake for 2-3 minutes.

Chicken gyro is usually served wrapped, like a sandwich. Spread some tzatziki sauce on the pita breads and top it with the chicken gyro, some slices of red onion, some sliced tomato and fried potatoes and wrap.

For an easier version of this traditional Greek souvlaki with chicken gyro recipe you can serve with Greek yogurt or some mustard and mayonnaise sauce. Enjoy!

To serve

This wholesome chicken gyro is a flavor-intense lunch combining savory marinated chicken, crisp summer veggies fresh tzatziki on a warm fluffy pita.

Chicken Gyro Recipe

chicken breasts (cut into 1 inch pieces)

water

parsely (minced)

honey

oregano (crumbled)

tomatoes

romaine lettuce

feta cheese (crumbled)

tzatziki sauce

In a large mixing bowl, stir the salt in water until completely dissolved. Place chicken in brine and refrigerate for 30 minutes.

Preheat oven to 350 degrees (to heat pita). Wrap the pita bread in aluminum foil and seal tightly.

Meanwhile, make the marinade; In a small mixing bowl, whisk together the oil, parsley, lemon zest, lemon juice, honey, oregano, and 1/2 teaspoon black pepper. Pour 1/4 cup into a large mixing bowl (large enough to accommodate cooked chicken later) and set aside.

Remove chicken from brine and pat dry with paper towels. In a large mixing bowl, toss the chicken pieces with the remaining marinade until evenly and well coated. Thread chicken onto skewers.

Place foil wrapped pita in oven and heat until warm, about 10-15 minutes or until warmed through.

Cook chicken skewers on grill or grill pan 5-7  minutes per side, or until chicken is cooked through and registers 160 degrees on an instant thermometer. Using a fork, push hot chicken off skewers and into the bowl with reserved marinade. Toss gently to evenly coat; cover with foil and let sit for 5 minutes.

Assemble the Gyros; Place a pita on a piece of parchment or foil, place a layer of chicken down the center, tzatziki sauce, and veggies. Serve immediately.

With super juicy marinated chicken and a fresh tzatziki sauce, these Greek Chicken Gyros are the perfect light summertime meal to cool you down and fill you up!

Greek Chicken Gyros

boneless (skinless chicken breasts)

garlic (minced)

apple cider vinegar

½ cup full-fat plain Greek yogurt

cumin

pepper

seasoning salt ((I used Lawry’s))

Greek seasoning ((I used Cavender’s))

pita wraps

full fat plain Greek yogurt

cucumber,

Tablespoons fresh dill, (chopped)

Pound the chicken flat, to about ¼ inch thickness.

Place all of the marinade ingredients: garlic, apple cider vinegar, lemon juice, olive oil, Greek yogurt, oregano, cumin, paprika, salt, pepper, seasoned salt and Greek seasoning into a bowl and combine.

Pour the marinade into a large ziploc bag. Place the chicken into the bag with the marinade and squish everything around to cover every bit of the chicken.  Place this into the refrigerator for at least 2 hours.

While this is marinating, make the tzatziki sauce. Grate the cucumber using the large holes of a box grater. There is no need to peel the cucumber.

Place the grated cucumber into a cheese cloth or paper towels and squeeze to thoroughly drain all of the excess water from the cucumber. (This is important because if there is too much liquid, it will water down the sauce over time.)

Add all the ingredients in a medium bowl: Greek yogurt, grated and drained cucumber, fresh dill, fresh lemon juice, olive oil, and salt.

Mix everything until combined.

Let this sit for at least 5 minutes to allow the flavors to blend.

When the chicken is finished marinating, remove it from the marinade (discard the marinade) and place it into a large skillet (or on the grill) with a tablespoon of oil. Turn the heat to medium and cook the chicken for 3-4 minutes on one side (searing the chicken as it cooks), then flip and continue cooking until fully cooked through (internal temperature should be at least 165F degrees.) 

Place the cooked chicken on a cutting board and allow it to rest for at least 5 minutes before cutting it into strips.

Prepare pita bread (or flatbread) by warming it. Then fill each pita with chicken, shredded lettuce, sliced onion, diced tomatoes and drizzle with some tzatziki sauce. Fold and serve!

Grilled Chicken Gyro

½ pounds boneless skinless chicken breasts

lemon juice (plus 1 tablespoon zest)

garlic

black pepper

Pat chicken dry and pound chicken if some parts are too thick. Combine the olive oil, lemon juice, oregano, garlic, salt and pepper in a bowl or resealable freezer bag. Add chicken and toss well to combine. Marinate for at least 30 minute

Preheat grill or grill pan to medium high heat. Place chicken on the grill for 5-7 minutes. Use tongs to flip over and cook until juices run dry, approximately 5-7 more minutes. Discard extra marinade.
