These Chicken Gyros are everyones favorite, with warm pitas piled high with marinated chicken, tzatziki, tomato, cucumber and onion.

Chicken Gyros

Add chicken to a large bowl or ziplock bag. Combine marinade ingredients and pour over chicken. Stir well to coat and marinate for 1-4 hours.

Meanwhile, make the tzatziki sauce by combining all ingredients. Taste it and add more seasoning (lemon juice, garlic, salt, pepper or cumin)if needed. Refrigerate.

Heat grill to medium and oil the grates (or if cooking on the stove, add a little oil). Remove chicken from marinade, letting any excess sauce drip off. 

Grill chicken for a few minutes on each side, flipping once, until cooked through. Remove to a plate to rest before chopping into bite-size pieces.

Toast or warm your pitas. Layer with chicken, lettuce, tomato, red onion, cucumber and sauce. Enjoy!

These Chicken Gyros are easy to make and loaded with so much flavour. Once you start, you&#039;ll never stop making them!

Ridiculously Good Chicken Gyros

1.3lb / 600 grams boneless skinless Chicken Thighs

Garlic, (minced/finely diced)

1.5 tbsp Olive Oil

Lemon

tbsp Dried Oregano

tsp Smoked Paprika

tsp EACH: Ground Coriander, Salt

tsp Black Pepper

large or 6 smaller Flatbreads, (or Pita Breads)

Tzatziki,

Tomatoes, (sliced)

Red Onion, (finely sliced)

Greek Fries, (or regular fries (optional))

Pound Chicken: One by one lay a chicken thigh on your chopping board, rest over cling film and gently pinch around the edges. Pound with a rolling pin until even thickness, but not so thin it starts breaking apart. Repeat with remaining thighs.

Marinade: In a medium sized mixing bowl combine yogurt, 1 tbsp olive oil (save other 1/2 tbsp for later), lemon juice, garlic, oregano, smoked paprika, ground coriander, salt and black pepper. Add in the chicken thighs and mix to combine.

Marinate: Tightly cover the bowl and pop in the fridge. I recommend 4 hours+ (up to 1 day), with a minimum of 2 hours. Take out the fridge around 30mins before needed, just so you&#39;re not frying cold chicken.

Grill: Brush a griddle pan with the remainder of your oil, adding more as needed to lightly cover the base of the pan, and bring to medium-high heat. Add chicken thighs (work in batches if you need) and leave until they begin to char (4-5mins), then flip and continue frying until charred on the second side and piping hot through the centre. Place to one side to rest and slice when needed. Timings will depend on thickness and size of thighs.

Serve: Spread flatbreads with Tzatziki, then top with onion, tomato and sliced chicken. Add fries (optional) then roll up and enjoy! You might need to tightly secure with parchment paper if there&#39;s a lot of filling.

Greek Chicken Gyros Recipe with Authentic Tzatziki Sauce

pita breads

Make this Authentic Greek Tzatziki Sauce a few hours in advance or overnight.

lbs. chicken breast tenders (boneless, skinless)

extra virgin olive oil

Greek yogurt (plain, full fat)

white wine vinegar

garlic

marjoram

rosemary

oregano

salt

tomatoes

cucumbers (peeled or unpeeled)

red onion

feta cheese

finely diced flat leaf (Italian Parsley (optional))

Make the Tzatziki SauceMake this Authentic Greek Tzatziki Sauce a few hours in advance or overnight.

Marinate the Chicken

Measure the marinade ingredients and put them into a 1 gallon zip top bag, close the bag and then massage the bag to mix well.

Add the chicken tenders to the zip top bag, close the bag and then massage the bag so that each chicken tender is well covered by the marinade.

Place the bag in the refrigerator and let it marinate for at least 3 hours. 12 hours works the best, but don’t marinate it longer than 24 hours or your chicken will be too mushy.

Warm the Pita Bread

Preheat your oven to 250 degrees Fahrenheit.

Just before you cook the chicken, place the pita breads on a baking sheet and place them in the oven to be warmed.

Cook the Chicken

You can cook the chicken on an outdoor grill or an indoor grill pan. Brush the grill / grill pan with olive oil, then preheat using medium high heat.

After the grill / grill pan is hot, remove the chicken from the marinade bag and place on the grill / grill pan.

Cook the chicken for 3 to 5 minutes on each side (cooking time depends on the size of chicken tenders), until they are golden brown and thoroughly cooked with an internal temperature of at least 165 degrees Fahrenheit.

Remove the chicken from the grill / grill pan and place onto a cutting board. Cover with foil and allow to rest for 5 minutes.

Slice the chicken tenders and put on a serving plate.

Assemble the Gyros

Lay out a warmed pita bread.

Place sliced chicken down the middle of the pita bread.

Top the chicken with an ample amount of tzatziki sauce.

Garnish the top of the tzatziki sauce with cucumber, tomatoes, red onions, feta cheese and optionally parsley.

Fold up the pita bread and enjoy!
