This chicken and kale salad is fresh, light and has a tasty creamy dressing! Easy to make, enjoy this dairy free salad as a summer lunch or as a side dish.

Chicken Kale Salad

olive oil (divided)

chicken breasts (or equivalent rotisserie chicken*)

kale (shredded)

apple (diced)

red onion (or white onion, finely diced)

pumpkin seeds

sesame seeds

celery (diced)

salt

black pepper

tbsp tahini

tsp apple cider vinegar

tsp herbs

Slice your chicken breasts into 2-3 pieces lengthways. Drizzle 1 tbsp olive oil into your skillet and sear and cook the chicken pieces for 4-5 minutes each side, or until they reach an internal temperature of 165F using a meat thermometer. Once cool enough to handle, shred with two forks or using a stand-mixer.

Remove the tough stems of the kale, finely shred and add to a large bowl. Drizzle on 1/2 tbsp of olive oil and a good pinch of salt. Massage the kale between your fingers for a few minutes until it wilts and softens.

Whisk together the tahini, apple cider vinegar, mixed herbs and a tablespoon of water until it becomes a creamy dressing. Add more water to thin, and more tahini to thicken to preference.

Add the cooled shredded chicken to the bowl, along with the diced apple, red onion, celery, pumpkin seeds, sesame seeds and half the tahini dressing. Toss to coat all the ingredients in the dressing, and then add more dressing to preference. Transfer to your serving bowl and enjoy!

The most amazing Chicken Kale Salad

tsp extra virgin olive oil

red onion (, very finely sliced)

chicken

eggs (, halved (optional))

cherry tomatoes

tsp cooking salt/kosher salt

tsp black pepper

400 g/ 14 oz can chickpeas (, drained but not dried)

olive oil

tsp smoked paprika

garlic powder, onion powder

tsp EACH cooking salt / kosher salt & black pepper

tbsp (60 g) tahini (, hulled (Note 3))

lemon juice

tbsp extra virgin olive oil

garlic (, peeled)

water ((plus more, if needed))

Oven - Roast tomatoes 12 min at 200°C/425°F (180°C fan). Roast plain chickpeas 10 min, toss with oil &amp; seasonings, roast 20 min until crispy (same temp).

Salad - Massage kale, leave 20 min. Blitz dressing. Toss kale, chicken, tomatoes, onion with half. Pile on chickpeas, drizzle with remaining dressing, shower with parmesan. EAT!

SHORTFORM RECIPE:

Preheat the oven to 200°C/425°F (180°C fan).

Roast tomatoes - Toss the tomatoes with the oil, salt and pepper on a small tray. Roast 12 minutes, then cool on the tray.

Crispy chickpeas - Drain the chickpeas then spread on a tray (still wet). Bake 10 minutes (same time as tomatoes). Push the oven dried chickpeas to one side of the tray. Drizzle with the oil and sprinkle with the chickpea spices, salt and pepper. Toss well using a rubber spatula, then return to the oven for a further 20 – 25 minutes until they&#39;re crispy (They should clatter! Note 4).

Soften kale - Rub/scrunch the kale with the oil, salt and pepper in a large bowl. Put the kale in a large bowl then drizzle with the oil and add the salt and pepper. Set aside for 20 minutes (softens leaves).

Tahini dressing - Put the ingredients in a jug just large enough to fit the head of a stick blender. Blitz until smooth, using extra water if needed to loosen into a thick but pourable consistency (see video).

Toss - Pour half the dressing over the kale and toss. Add onion, chicken and most of the tomatoes (save a few for decoration). Toss again.

Serve - Transfer into a serving bowl or individual bowls. Top with remaining tomatoes, all the chickpeas and eggs if using. Drizzle with remaining sauce then sprinkle with extra parmesan. DIG IN. SWOON!

I buy kale just for this salad! I don’t like all the steps because I’m lazy but I DO IT because the results are so so yummy!

This was freaking delicious. I didn't have cherry tomatoes, added currants for a pop of sweetness instead. Will make sure I have them for next time.

It was ok,  I've never er had tahini before and it didn't taste like I thought it would being from sesame seeds. It was edible and nice, but don't think I'd rush to make it again or use Tahini again.

Really love this one.  Had to use regular kale, and popped in some cucumber and bell pepper that needed to be used.  Anyone else notice that the chick pea seasoning is pretty much a base in a lot of recipes?  I just mixed up a bunch of it and modify if necessary, but I find myself reaching for it a lot!
