Better than restaurant chicken lollipop where chicken drumettes are marinated with spices and fried or baked. Lastly tossed in a spicy sweet and tangy finger licking sauce.

Chicken Lollipop Recipe

½ kg chicken (drummettes (or 1 lb))

oil (as needed for frying)

Ginger garlic paste

½ teaspoon any spice powder (or garam masala

salt

cornstarch ((white corn flour) rice

onion (finely chopped)

ginger (minced)

garlic (minced)

soya sauce

vinegar

red chili sauce

sugar

water

celery onions

This section is optional but will tenderize the chicken &amp; keeps it juicy.

Add 3 to 4 tbsp yogurt to a bowl, whisk it.

Then pour 1 ¼ cup water and salt.

Transfer the chicken and brine for 1 hour to overnight to tenderize the chicken.

Preparation

Drain off the buttermilk and add chili powder, ginger garlic, spice powder &amp; salt.

Rub these well and then sprinkle corn flour. Coat the chicken well.

Heat oil until hot enough.

Then fry the chicken on a medium heat until crisp and golden.

Remove to kitchen tissues.

Alternately you can grill then in a preheated oven at 220 C for 20 to 22 mins until cooked through.

Frying or grilling chicken

Add 1½ tsp oil to a pan for seasoning and heat it.

Saute ginger garlic until aromatic. Add onions &amp; fry until transparent.&nbsp;

Stir in red chili sauce, sugar, vinegar and soya sauce.&nbsp;

When the sauce begins to bubble pour water and stir.

Taste and check the salt, sweet, sour &amp; spice.

Add more if needed. Cook until the sauce thickens.

Add the fried chicken. Toss them well to coat the sauce.

Garnish chicken lollipop with spring onions or celery.

How to make chicken lollipop

step by step recipe for making restaurant style chicken lollipop at home from scratch

chicken lollipop pieces

tbsp red chilli paste

tbsp ginger garlic paste

soy sauce

tsp chilli vinegar

tbsp corn flour

tbsp rice flour

tbsp maida / all purpose flour

tbsp kashmiri chilli powder

tsp red chilli powder

tsp black pepper powder

In a large bowl, mix together red chilli paste, ginger garlic paste, soy sauce, chilli vinegar, and salt.

Mix in the chicken lollipop pieces, and let the chicken marinate in the spice mix for 15-20 minutes.

First Marination

In a bowl, mix together corn flour, rice flour, maida, red &amp; kashmiri chilli powder, salt &amp; pepper powder, and add the mix to the marinated chicken, along with some water, and mix everything together. Adjust the quantity of water required little by little as there will be some moisture from the earlier marinade.

The goal is to get a semi thick paste-like marinade, that you will need to ensure is applied somewhat evenly over the lollipop pieces right before frying them. You might also need to re-shape the lollipop pieces before spreading out the marinade on them, just before you fry them.

Second Marination

In a frying pan, heat up the oil, and drop the lollipop pieces, a few at a time, so as to not overcrowd the pan, and fry for 5-7 minutes till the chicken has cooked, and has turned crisp and golden brown.

Sprinkle chaat masala, and serve with schezwan chutney or green chutney.
