Asian Meatloaf

panko breadcrumbs

milk

chicken

onion (finely chopped)

soy sauce

garlic (grated)

water chestnuts (diced)

tsp salt

tsp pepper

tbs brown sugar

ketchup or chili sauce

tsp chili paste

Preheat oven to 400F/200C. Line a baking sheet with parchment and spray with non-stick spray.

Place breadcrumbs in a large bowl and stir in the milk, making sure to coat the breadcrumbs. Let this stand for 5 minutes.

Add the ground chicken, onion, soy sauce, garlic, water chestnuts, egg, salt and pepper. Mix very well.

Mix glaze ingredients in a small bowl.

Shape the meat mixture into a loaf about 10-inches/25-cm long on the prepared baking sheet.

Brush the top with half the glaze. Bake for 30 minutes. Brush remaining glaze on top of the meatloaf and bake for an additional 30 minutes. Internal temp should be 165F/75C.

Let meatloaf rest 10 minutes before slicing.

Add the ground chicken to the bowl and break the ground chicken up into pieces. Use your hands to work the ground chicken into the wet mixture until completely combined (being careful not to overmix).

Transfer the chicken mixture to the center of the prepared baking sheet, then use your hands to form a loaf. Make sure the meat is pressed tightly together to keep it from separating while cooking. Also make sure to keep it an even height and thickness across the entire loaf (to ensure even cooking).

Place the meatloaf into the preheated oven and bake for 50 minutes, then turn the broiler on and broil the meatloaf for about 3 minutes to caramelize the glaze. The meatloaf will be done when an instant read thermometer inserted at the thickest point reads 165 F.

Chicken and Pork Meatloaf (A Family Favorite)

Lipton’s Onion Soup Mix

Preheat oven to 400. Place bread in food processor and pulse until fine crumbs form. Transfer to a large bowl. (Dried bread crumbs don&#8217;t make for a tender meatloaf.)

Place carrot, onion, garlic and parsley in the bowl of the processor and pulse until veggies are minced and about the same size. Add to bowl with breadcrumbs.

Add 1/2 c ketchup, meats, eggs, salt, pepper, Tabasco, onion soup mix and rosemary. With your hands knead mixture together until thoroughly combined. Don&#8217;t over knead or your meatloaf will be tough.

Set a wire rack in an 11 x 17&#8243; baking pan and cover it with parchment. Form meat into a loaf that will fit on the parchment. Mine was long and wide. You could place this directly in the pan, but this way the juice drains off.

Combine remaining ketchup, mustard and brown sugar and brush all of it over the loaf.

Bake 30 minutes and then sprinkle with more rosemary. Continue baking about another 25 minutes until an instant read thermometer inserted into the center of the loaf registers 160.

Let sit a few minutes covered before slicing to get better slices. Garnish with French fried onions.

I had bits of food I wanted to use before going on vacation and this was the perfect solution.  I use a pork chop and a chicken breast, spinach instead of parsley, spaghetti sauce instead of ketchup and with the rest of your recipe it was a great meal - plus sandwiches for traveling to the vacation.

I made the meatloaf. I didn't have the lipton's onion soup mix. I used dried bread crumbs which I soaked in onions and baked in muffin pans.  It was moist and delicious. My family loved it. I was even able to convert the non meatloaf lovers. I will be making this recipe again as I don't eat beef.
