Easy Keto Homemade Chicken Nuggets Recipe

Place the chicken breast in a large pot with enough water to cover it. Bring to a boil and cook on medium to high heat for 10-15 minutes.

Once the chicken is fully cooked, remove the chicken from the pot and shred it with 2 forks or place it in a stand mixer and turn it on low speed to shred the chicken breasts.

After the chicken is shredded, place it into a large bowl.

Next, stir in almond flour, eggs, mozzarella, basil, chives, parsley, garlic powder, salt, and pepper. Mix well to combine.

In a large non-stick pan, add oil and heat over medium-low heat. Use an ice cream scoop, cookie scoop, or a large spoon to scoop the chicken mixture. Form into the shape of a chicken nugget and transfer it to the pan. Be sure to not overcrowd the pan as it will be harder to flip them. It is best to cook them in batches.

Fry until golden brown on both sides for about 6-8 minutes. Keep in mind that you need to cook them at medium-low temp, otherwise they will burn on the outside but won't get well cooked on the inside.

Adjust the oven rack to the center position and preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper; set aside.

In a gallon-sized plastic baggie, measure the dried breadcrumbs, salt, garlic powder, onion powder, paprika, and pepper. Seal the bag and shake to combine. Add oil to the bag, seal again, and shake until well-incorporated.

Cut the chicken into 1- to 1 1/2-inch chunks. Add half of the chicken chunks to the bag of seasoned breadcrumbs. Seal the bag and gently shake, turning the bag to make sure that all of the nuggets are evenly coated. Use tongs to remove each nugget from the bag, shaking excess coating back into the bag, and arrange the nuggets on the prepared baking sheet (close but not touching). Repeat with the remaining chicken chunks.

Bake for 18 to 22 minutes or until the chicken nuggets are completely cooked through but not overdone. Serve warm with Honey Mustard Dipping Sauce or your favorite dipping sauce.

panko bread crumbs

olive oil cooking spray (or other non-stick spray)

Place a wire rack on a baking sheet and spray with olive oil spray. Set aside.

In a shallow bowl combine panko, spices and salt and pepper.

Using one hand, dip a chicken cube into the egg and then using the same hand remove it and place it into the panko spice mixture. Using the other hand toss the chicken in the panko spice mixture. Remove with hand and place onto wire rack.

Repeat until all chicken has been coated with egg and panko mix.

Spray chicken with olive oil spray to give it a light coating.

Bake in oven for 15-20 minutes or until chicken is golden brown and inside is tender and no longer pink. Internal temperature of chicken should reach 165 F before serving.

Serve with ketchup, honey mustard, BBQ sauce or dip(s) of choice.
