Chicken pakora is a quick Indian appetizer made with gram flour, chicken, spices &amp; herbs. These are amazing to serve for parties with some green chutney or masala tea.

chicken ((½ lb) strips or cubes)

onion

green chilies (chopped (optional))

ginger garlic paste (or crushed)

red chili powder ((reduce for kids))

garam masala

turmeric (or haldi)

Salt ((adjust

curry leaves

besan (or gram flour (¼ cup + 2 tbsps))

rice flour (or corn flour)

water ((you may need more))

Add besan, rice flour, salt, turmeric, chilli powder &amp; garam masala to a bowl.&nbsp;

Mix well and taste it. Add more salt if needed.

Next add ginger garlic, onions, curry leaves &amp; green chilies.

Cut chicken to thin strips or cubes of 1 by&nbsp;¾  inch.&nbsp;

Add them to the bowl along with egg white.&nbsp;

Mix everything well adding water only as needed to make a thick stiff mixture.

The mixture must be thick and not loose like batter.

Preparation for chicken pakoda

Heat oil in a kadai for deep frying.

Check if the oil is hot enough by dropping a small portion of dough.&nbsp;

It has to rise slowly without browning. Regulate the flame to medium.

Slide the chicken pieces to the hot oil one after the other.&nbsp;

Do not crowd the pan as the chicken needs enough space to swim and get cooked.

After 1 to 2 mins begin to stir and fry the chicken pakora until golden and crisp.

Remove to a colander. Fry the rest of the chicken in batches.

Serve crispy chicken pakora as a appetizer with green chutney or masala tea.

400 gram Chicken thigh (Boneless chicken thigh

Lemon juice (Or lime juice)

Gram flour (Or chickpea flour)

4-6 tbsp Corn starch (Or rice flour)

¼ tsp Baking soda (Or baking powder)

First cut the chicken into small bite-size pieces and place them in the large mixing bowl.

Add garlic paste, ginger paste, chilli powder, turmeric, cumin powder, curry powder, green chillies, dried fenugreek leaves, lime juice, and salt to taste. Mix it well and marinate for at least 30 minutes or up to 1 hour.

Next, add gram flour, cornstarch, and baking soda into the marinated chicken. Add water gradually and combine everything well, until it forms a smooth, thick, and sticky batter. Set it aside for 10 mins.

Heat the oil over medium-high heat. Once the oil is hot, drop the chicken pieces by using a spoon.

Fry the chicken pakoras for 3-4 minute or the inside meat is fully cooked and the batter is crispy golden brown.

Remove them from oil and transfer to a cooling rack or a paper towel. Serve with yoghurt mint sauce or a choice of dipping sauce.

Chicken Pakora recipe

Chicken 65 is a favourite restaurant dish that you can easily create at home. This is the fried chicken recipe you must try. Fragrant with spices, curry leaves and green chillies, it disappears fast.

Chicken 65 - Crispy and Spicy

500 Grams Chicken Thighs (boneless, skinless, cut into approx 1/2 inch small cubes)

¼ Cup Curd

Tablespoon Ginger Garlic Paste

¼ Teaspoon Turmeric Powder

Tablespoon Kashmiri Red Chilli Powder (refer to Note 1)

Teaspoon Coriander Powder

Jeera Powder

Teaspoon Sugar

Salt

Sprigs Curry Leaves (chopped)

Tablespoons Rice Flour (refer to Note 2)

3 2/3 Tablespoons Corn Flour (refer to Note 2)

Oil (for frying, refer to Note 3)

Tablespoon Garlic (finely chopped)

Tablespoon Ginger (finely chopped)

Green Chillies (halved)

Teaspoon Kashmiri Red Chilli Powder

Curry Leaves

Marinate Chicken

Combine all the ingredients for chicken marinade except rice flour and corn flour. Cover and marinade for at least an hour or overnight if possible.

Heat Oil

In a heavy bottomed vessel or kadai, heat enough oil on a medium flame for deep frying.

Remove the chicken from the refrigerator 10 minutes prior to frying and add rice flour and corn flour. Mix well to combine.

Deep Fry

Carefully drop in the chicken pieces one by one into the hot oil. Deep fry for 2 - 3 minutes or until bright red in colour and crispy. Remove from oil and place on a tissue paper lined plate.

Chicken Marinade

Tempering

Heat oil in a saucepan and allow it to heat up. Once hot, add garlic, ginger and green chillies and fry lightly over medium flame. Once fragrant, curry leaves and saute for a minute.

Stir fry

Add red chilli powder and saute. Add fried chicken and stir fry on high flame for 1 minute. Remove from the pan and serve hot.
