Chicken Pesto Pasta has tender pasta and chicken coated in a rich and creamy pesto sauce. It&#039;s an easy, flavorful meal that&#039;s ready in 30 minutes!

Creamy Chicken Pesto Pasta

penne pasta (about 2 1/2 cups dry (half of a one pound box))

olive oil

garlic

italian seasoning

chicken breast

Salt and pepper (to taste)

butter

flour

chicken broth

half and half (or all milk/cream)

Parmesan

Mozzarella

basil pesto (or more, to taste)

basil (for garnish, if desired)

Boil pasta to al dente according to package instructions. Drain and set aside.

Heat a large skillet over medium heat and olive oil, then add minced garlic, italian seasoning and diced chicken breast. Season with salt and pepper and cook until chicken is no longer pink, stirring chicken a couple of times to brown on all sides. Transfer chicken to a plate and discard any liquid in the skillet.

Return skillet to the stove over medium heat and melt butter. Whisk in the flour and cook until golden, about 3 minutes.

Whisk in chicken broth and half &amp; half and bring to a boil. If it begins to boil too rapidly, turn the heat down a little. Simmer for about 5 minutes or until the sauce has reduced and thickened.

Remove from heat and stir in pesto and cheeses. Add the pasta and chicken and stir to coat. Garnish with fresh chopped basil and fresh cracked black pepper.

Reduced-Fat Red Pesto

Dice the chicken breast, then season it with salt, pepper and the mixed herbs. Wrap it in foil and air fry at 180°C for 15 mins, then set aside.⁣

Meanwhile, halve the cherry tomatoes and dice the red onion. Combine all the sauce ingredients in a bowl and set aside.

Tip the cooked chicken into the sauce bowl and set aside. Put the gnocchi into the air fryer, spray with the olive oil, then cook for around 12 mins at 190°C until crispy. 

Once the gnocchi is crispy, add the onion, tomatoes, chicken and sauce to the air fryer with the gnocchi. Roughly mix together, then top with the cheese and pine nuts and return to the air fryer for another 5 mins until bubbly.⁣

Chicken Pesto Skillet with White Beans

(skinless chicken thighs (about 2))

red pepper flakes

Heat a large skillet over medium heat. Slice chicken thighs into small bite-sized cubes. When pan is hot, add olive oil and swirl it around, then immediately add the cubes of chicken thighs. Season with the salt, pepper, red pepper flakes, and lemon zest. Cook, stirring occasionally, until chicken is browned on all sides and full cooked through. Remove from the pan and set aside.

If there are lots of brown bits stuck to the bottom of your pan, de-glaze by adding the vinegar (could also use wine or water), and stirring up all those tasty bits!! (This is called the 'fond.') Dump in the riced cauliflower and stir well to combine with the fond. Let cook for about 3-5 minutes, stirring as needed.

Meanwhile, slice the roasted red peppers, then add them to the pain with the cauliflower. Cook another 2-3 minutes to ensure everything is fully cooked, then stir in the pesto and drained white beans. Stir well to combine. Cook together over low-medium heat for about 3 minutes until warmed through.

Add the chicken back to the pan and stir to combine.

Stir in the lemon juice, then taste and adjust seasoning as needed, by adding more salt or pesto. Serve and enjoy!
