Chicken Potato Bake

Preheat oven to 425 degrees F/220 degrees C.

Place the potato cubes in a large bowl, add the garlic, olive oil, salt, and pepper, and toss to coat.

Spray a large (9x13) baking dish with non stick spray.

Spread potato mixture in dish and bake about 15 minutes.

Remove baking dish from oven and place the chicken pieces in the dish, nestling them down into the potato mixture a bit.

If desired, brush the top of each chicken piece with a little olive oil and season with salt and pepper.

Bake 20-25 minutes, until chicken is cooked and potatoes are browned.

Sprinkle the mozzarella cheese over the top, return to the oven and bake for a few more minutes to melt the cheese.

When serving, sprinkle chopped parsley on top (if desired).

Loaded Baked Potato Chicken Casserole is an easy chicken potato casserole you can whip up for dinner tonight. Tender potatoes, chicken, salty bacon all in one comforting casserole.

Loaded Baked Potato Chicken Casserole

1- 8 oz package of bacon (slices cut then fried)

bacon grease

LB boneless and skinless chicken breasts (cut into 1 inch pieces)

TBSP unsalted butter (melted)

paprika

garlic powder

tsp salt

tsp black pepper

C cheddar cheese

C green onion

Sour cream

Sliced green onion

Skillet

paper towels

Preheat the oven to 400 degrees. Then spray your baking dish with cooking spray. 

Dice up your potatoes and toss them in the baking dish. 

In a bowl you will mix your melted butter, paprika, salt, pepper, and garlic powder together. Once mixed pour over the potatoes. 

You will cook your potatoes at 400 degrees for 45-50 minutes or until the potatoes are tender when you poke them. 

In a pan you will cook up your diced bacon until crispy. Remove and place bacon on a paper towel. 

Leave the grease in the pan and add in your diced chicken and cook until the chicken is fully cooked. 

Once potatoes are done, remove and top with chicken and bacon. Sprinkle with cheese, and if you want you can add layers of meat and green onions to the top. 

Put the chicken potato back in the oven to melt the cheese. This takes around 3-5 minutes. 

Once done remove the casserole and let cool slightly. Then add your favorite toppings and serve.

Step 1

Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish.

Step 2

Slice the potatoes into even 1/4-inch rounds and cut the chicken into bite-sized pieces.

Step 3

Season the potatoes and chicken separately with the olive oil, garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper.

Step 4

Whisk the cream of chicken soup, heavy cream, chicken broth, minced garlic, thyme, and additional black pepper until smooth. Stir in the sour cream.

Step 5

Arrange the potato rounds in an overlapping layer across the bottom of the prepared baking dish and spread half of the creamy sauce over them.

Step 6

Arrange the seasoned chicken evenly over the potatoes and pour the remaining creamy sauce over the chicken.

Step 7

Sprinkle the shredded cheddar and mozzarella evenly over the casserole.

Step 8

Cover the baking dish tightly with aluminum foil and bake for 40 minutes.

Step 9

Remove the foil and bake for another 20 to 25 minutes, until the potatoes are tender and the chicken reaches at least 165°F internally. Broil for 1 to 2 minutes if a more browned cheese topping is desired.

Step 10

Let the casserole rest for 5 to 10 minutes, sprinkle with fresh parsley, and serve warm.
