This tasty chicken pasta dish is perfect for an easy weeknight meal. Creamy chicken primavera is made with simple ingredients and fresh veggies and is ready to serve in 30 minutes.

Creamy Chicken Primavera Recipe

olive oil

chicken breast (cubed)

oz of Penne Pasta

butter

broccoli

carrots (sliced)

onion

heavy cream

parmesan cheese

tsp salt

tsp pepper

tomatoes (diced)

Boil

Bring 4 cups of water to a boil. Add in pasta and cook until al dente.

Cook

While pasta is cooking, in a large skillet or frying pan, add in olive oil and cook the chicken pieces.

Once chicken is thoroughly cooked, add in cream, parmesan cheese, butter, carrots , onion, broccoli, and seasonings. Stir on medium heat until sauce begins to boil. Once it begins to boil, turn down the heat  and let the sauce simmer, uncovered for 10 minutes.

Stir

Stir in tomatoes, allowing them to simmer in the sauce for the last five minutes.  Sauce will  thicken as it simmers.

Garnish

Remove from heat and garnish with parsley.

Serve

Crockpot Quinoa Chicken Primavera - easy, healthy, and totally delicious! made with peas, asparagus, quinoa, chicken, pesto, and Parmesan cheese.

Crockpot Quinoa Chicken Primavera

quinoa, uncooked

chicken breasts

chicken broth (SEE NOTES)

garlic

salt and pepper, other dried herbs you

asparagus,

pesto (SEE NOTES)

peas

lemon juice

watercress, fresh parsley, chives,

Parmesan cheese

Rinse the quinoa. Cut the chicken if you want &#8211; you can either cut it into small pieces (it will cook faster) or leave it whole and shred it after cooking.

Place the quinoa, chicken, 4 cups broth, garlic, and a sprinkle of salt and pepper and seasonings in the crockpot. Cover and cook on low for 3-4 hours.

When the quinoa and chicken are done, the mixture should be very thick and sticky. Add the remaining 3 cups broth or water and stir to combine (see notes) &#8211; now the mixture should resemble a creamy risotto or casserole. Stir in the pesto, peas, and lemon juice and cover to heat through. While the peas are heating in the crockpot, heat the oil in a skillet &#8211; add the asparagus and sauté for 5-10 minutes, until the asparagus is lightly browned and tender-crisp. Add the asparagus back to the crockpot and stir to combine.

Top each serving with fresh herbs, shredded cheese, watercress, olive oil, or anything else you want.

Yassss, girl, yasss! I am such a fan of everything happening with this dish: quinoa, sauteed veggies with the perfect pop of green color, and crockpot happenings. I love those 8-10 hour crockpot recipes (coming home to the smell if always wonderful), but it's so necessary to have these kind of (quicker) recipes in your back pocket too.

This Pasta Primavera with lemon, chicken and spring vegetables is perfect for any night of the week. That creamy sauce is all kinds of dreamy!

Creamy Lemon Chicken Pasta Primavera

500 g (1lb) chicken breasts

tbsp flour (seasoned

tbsp oil

lemon (sliced)

onion (finely chopped)

garlic (crushed)

300 g (10 ounces) zucchini (/ summer squash

asparagus

100 g (3.5 ounces) green beans

Italian seasoning / Italian herbs

cream

tbsp Parmesan (grated)

500 g (1lb) pasta

parsley and basil (to serve)

Place the chicken on a cutting board in front of you.

Place your hand on the chicken and carefully cut the chicken in half, horizontally (resulting in two thin fillets).

Season flour with salt, pepper and garlic powder (optional).

Coat the chicken with the flour.

Heat a large pan over medium heat. Add the butter and oil to the pan.

Add the chicken and cook for 6-7 minutes until golden on both sides and cooked through. Remove from the pan and set aside.

Cook the lemon slices for a minute per side then remove.

In the same pan, add another small knob of butter then add the onion and garlic.

Saute for a few minutes then add the zucchini, asparagus and green beans.

Season with the Italian seasoning, salt and pepper. Cook for a few minutes then pour in the cream.

Simmer until the sauce has reduced slightly and the vegetables are cooked.

Add the Parmesan and lemon juice and stir in. Add the chicken and lemon slices back to the sauce and allow to heat through. 

Serve the chicken, vegetables and sauce over cooked pasta of your choice then top with fresh herbs and serve.

Absolutely delicious. My teenage daughter loved it too. I will definitely be making this again.
