These Buffalo Chicken Quinoa Bowls are topped with avocado, tomato, shredded buffalo chicken and ranch! Served on a bed of quinoa, football food just got a healthy facelift!

Buffalo Chicken Quinoa Bowls

chicken breasts, cooked & shredded

franks red hot sauce (origninal)

cream cheese, softened

quinoa

water

green leaf lettuce

cherry tomatoes, halved

avocados, sliced

red onion

cilantro

optional: drizzle ranch dressing

To a medium sauce pan, add quinoa and water. Bring to a boil. Cover, reduce to simmer and cook for 15 minutes. Turn the heat off and let the quinoa sit there for 5 minutes. Then fluff the quinoa with a fork.

In the meantime, add shredded chicken, franks red hot sauce, and cream cheese to a medium bowl. Mix everything together and make sure all the chicken is coated with the sauce.

Assemble the bowls. Add 3/4 cup of quinoa, 3/4 cup of lettuce, 1/2 cup of the buffalo chicken mixture, cherry tomatoes, sliced avocado, sliced red onion, and fresh cilantro. (optional: drizzle ranch dressing on top)

Loved this so much I am making it again tonight, one week later! I swapped the cream cheese with Greek yogurt to make it a little lighter and it was the perfect substitute. I also sprinkled a little feta cheese on the top before serving. My husband loves buffalo sauce so he loved this dish. Thanks for the recipe... it’ll be one we use often!

Looks great ! i love hearty chicken  is delicious and useful for health.chicken provide vitamin A and vitamin C, and chikcen low fat protein.

I needed to find a simple chicken recipe and found this one.  It was quick and easy.  My husband loved it.  I used another blog tip to shred the chicken with my hand mixer, which then. Add it easy to mix in the cream cheese and the sauce.  Very healthy and filling, but not a heavy meal.  We posted pics on FB, and everyone loved it!

Delicious BBQ ranch chicken quinoa bowls loaded with black beans, crunchy red cabbage, sweet corn, tomato, onion, jalapeño, avocado and your choice of creamy ranch dressing. The BBQ chicken for these healthy chicken quinoa bowls can be made in the slow cooker or grilled for the perfect meal prep dinner or lunch!

BBQ Ranch Chicken Quinoa Bowls

For the slow cooker:

chicken breast

sugar

For the quinoa:

For the bowls:

(15 ounce) can black beans

red cabbage

sweet corn (can use fresh

roma tomatoes, diced

jalapeno, thinly sliced

avocado, diced or sliced

For the dressing:

healthy greek yogurt ranch (or ranch of choice)

To garnish:

chopped cilantro

SLOW COOKER CHICKEN: Place chicken and BBQ sauce in a slow cooker and stir so the BBQ sauce coats the chicken. Cook on high for 2.5-3 hours. Then remove chicken from the slow cooker, shred with two forks and then place back in the slow cooker, stir and turn the heat to warm until you are ready to serve.

TO GRILL CHICKEN: marinate chicken in a bowl with BBQ sauce for 1 hour, then grill chicken over medium high heat for 6-8 minutes per side, or until the meat thermometer reads 165 degrees F. Remove from grill and allow chicken to sit for 5 minutes to retain juices, then cut into strips or dice into bite sized pieces.

Once chicken is done cooking or close to it, you can cook your quinoa: add water and quinoa to a medium pot and place over high heat. Bring to a boil, then reduce heat to low, cover and cook for 15 minutes. Once quinoa is done cooking, remove from heat, fluff with a fork and place the lid back on to allow the quinoa to stay warm and steam in the pot for 10 more minutes while you chop your veggies and make the greek yogurt ranch dressing (or feel free to use store bought ranch).

To prepare bowls: add about 3/4 cup quinoa to each bowl, top with about 1/4 of the shredded chicken, 1/3 cup black beans, 1/2 cup shredded cabbage, 1/4 cup corn, 1 tablespoon diced red onion, diced roma tomatoes, a few sliced jalapenos and avocado. Drizzle the bowls with 1-2 tablespoons ranch dressing. Garnish with fresh cilantro and scallions. Enjoy!
