This dish brings out the authentic south Indian spice of the dish. You can cook this dish as a side dish for a dinner party. It goes well with rice as well as any Indian bread of your choice.&lt;/p&gt;&lt;strong&gt;Ingredients of Kerala Chicken Roast Recipe&lt;/strong&gt;: Kerala chicken roast is a semi-dry, delicious blend of marinated and tender chicken, fried and sauteed with a spicy, tangy masala paste. Teamed up with some chillies, fried onions and lemon juice to bring out that extra zing in this dish.

Kerala Chicken Roast Recipe

For the marination:

Chicken

Turmeric powder

Chilli powder

Coriander powder

Vinegar/lemon juice

cloves

Green chillies

Salt

For roasting:

Tomato (pureed)

Green chillies (slit)

Curry leaves

Garam masala powder

Pepper powder

Lemon (juiced)

Clean and cut the chicken into medium sized pieces. Make a paste of all the ingredients under marination.

Marinate the chicken pieces with this paste and keep aside for an hour.

Cut onions into very thin slices and fry in hot oil. Drain them and keep aside.

Fry the chicken pieces in the same oil until almost done. Keep the pan covered so that the chicken does not get browned, but is cooked inside. Drain them and keep aside.

Heat 2 tbsp of oil in another pan (You can use the same oil in which we fried the chicken pieces. This will enhance the flavour). Add slit green chillies and curry leaves. Saute for 1 minute.

Add the tomato paste to this and saute for 1 minute. Now add the prepared chicken &amp; roast until it is dry.

Make sure that all the chicken pieces are well coated with the tomato paste.

Sprinkle garam masala &amp; pepper powder and mix well.

Add lemon juice and mix well. Check for salt. Add a little if needed. Now add the fried onions and mix well.

Perfectly moist, fall apart Christmas Roast Chicken that has a crispy seasoned skin. Stuffed with orange wedges, celery and cranberries.

Christmas Roast Chicken

(5 Pound) Each Whole Young Chicken

Ounces Fresh Cranberries

Oranges

Rib Celery

Cup Unsalted Butter (softened)

Stalks Fresh Rosemary

Salt and pepper

Tablespoon Olive Oil

Each Yellow Onion (sliced 1/2" thick slices - keep together.)

Take out your chicken, discard the &#x27;innards&#x27; and allow to rest at room temperature for 1 hour.

Pat dry with a paper towel. Season the inside of the chicken cavity liberally with salt and pepper.

Stuff with orange wedges, celery, cranberries and rosemary stalks.

Take the butter and mix with the olive oil and some salt and pepper.

Using your hands, lift the skin from the breast and carefully push your fingers up underneath, separating the skin from the meat.

Take half of the butter mixture and insert under the skin. Press down to contain the butter while pushing the butter up inside the skin.

Take the remaining butter and rub all over the bird.

Truss the legs together and push the wings back behind the body.

Lay onion slices on the bottom of a roasting pan and lay the chicken on top of the onion.

Sprinkle again with more seasoning.

Bake in a preheated oven at 325° for about 2 hours. Using an instant read thermometer helps. Once the thermometer reaches 155°F turn up the oven to 450°. This will sear the skin at the end.
