Sticky Chicken BBQ Skewers Recipe (dairy-free)

In a large mixing bowl, add all of the ingredients for the marinade and mix together until well-combined. Use a whisk of the mustard remains a little 'bitty'!

If BBQ'ing, once heated, place onto the rack and turn every 4-5 minutes. Once nicely browned on all sides, brush the extra marinade onto the chicken chunks and BBQ until cooked through.

If grilling in the oven, preheat your grill to a medium-high heat. Place the skewers onto a grill pan rack and place under the grill for 10 minutes, then turn and cook for another 10 minutes. 5 minutes before they're done, brush the extra marinade onto the chicken chunks and grill until cooked through.

Plate up and scatter the chopped spring onion...

Honey Sesame Chicken Skewers {Gluten-Free, Dairy-Free}

gluten-free soy sauce

honey

sesame oil

ginger

garlic

cayenne pepper

chicken breasts

zucchini

yellow squash

red bell pepper

red onion

olive oil

salt (I used herbamare seasoned salt)

pepper

Combine all the ingredients for marinade and whisk to combine. Add the chicken and marinade in for 2-8 hours. If you are using wooden skewers, be sure to soak them in warm water for at least 30 minutes before grilling.

For the vegetables, cut them all into 1-inch pieces and place in a bowl. Toss with olive oil, salt and pepper. Then thread onto skewers

Preheat an oven broiler or gas/charcoal grill. Thread the chicken onto the skewers Broil or grill the chicken and vegetable skewers for 5-8 minutes until cooked through, using nonstick cooking spray on a foil-lined pan if you are broiling. Serve immediately and enjoy!

A spring and summer staple. These garlicky, lemony chicken skewers are best when they're thrown in a flatbread with some fresh salad.

Garlicky Lemon & Herb Chicken Flatbreads

Skinless Chicken Thigh

Feta

Flatbread

Wholegrain Mustard

Radish

Dill

Garlic Clove

Finely mince the dill, finely grate the garlic, add the garlic and half the dill into a bowl with the mustard and a generous drizzle of olive oil. Season generously with salt and plenty of freshly cracked black pepper.

Using scissors, snip the chicken into 3cm chunks, toss into the marinade. Thread the chicken onto some metal skewers. Place the skewers onto a baking tray and roast until cooked through,15-20 mins. Switch the grill onto high and grill until starting to char, flip and continue cooking until charred in places on both sides of the skewers.

Meanwhile, quarter the radishes and chop the cucumber into 1cm chunks. Add to a bowl, with the juice of the lemon and olive oil. Season with salt and pepper. Crumble the feta and toss through the salad.

Reheat the flatbreads, top with the skewers, salad, the rest of the dill, and a dollop of Greek yoghurt.

So good, my fussy 11yr old ate everything in front of her! Resounding success in our house.
