This creamy lemon butter chicken is an easy and tasty dish that is cooked on the stovetop in one pan. Chicken thighs are cooked in a flavorful lemon and garlic cream sauce for a simple and delicious meal.

Lemon Butter Chicken (Creamy)

chicken thighs (bone-in, skin-on)

kosher salt (plus more to taste)

lemon pepper

butter

garlic, minced. (or 1.5 teaspoon garlic paste)

chicken broth

heavy cream

parmesan cheese

lemon juice

thyme leaves (plus more for garnish)

baby spinach (one bag)

Preheat

Toss

Place chicken thighs in a bowl and add salt and lemon pepper. Toss to combine. Set aside.

Heat

Heat a medium/large skillet (oven safover medium high heat. Add 2 tablespoons butter and allow to melt, making sure the entire base of the skillet is coated.

Sear

Add the chicken, skin side down, and sear for 3-4 minutes or until golden brown. Flip and sear other side. Remove chicken from the skillet and set aside.

Deglaze

Return skillet to the heat and add additional 1 tablespoon butter. Allow to melt, stirring and deglazing the pan.

Garlic

Add the garlic and cook for 1-2 minutes until fragrant.

Sauce

Stir in the chicken broth, heavy cream, parmesan, lemon juice, and thyme. Stir to fully combine. Bring to a boil and then reduce to a simmer.

Thicken

Allow sauce to thicken for 5 minutes and then stir in spinach leaves.

Stir

Stir to wilt leaves slightly but not fully.

Bake

Add chicken back to skillet and bake the entire pan in the oven for 25 minutes or until internal chicken temperature reaches 165F.

Serve

Serve over rice, pasta, mashed potatoes, or alone. Garnish with lemon slices and fresh thyme. Enjoy!

Chicken and Broccoli Recipe

chicken breasts (pounded to even thickness)

garlic powder

Herbs de Provence (or Italian blend seasoning)

broccoli florets

olive oil

garlic (or ½ teaspoon garlic powder)

salt and pepper

Season chicken on both sides with garlic powder, Herbs de Provence (or Italian blend), and salt and pepper (I&#039;m pretty generous with the salt and pepper here, go with your gut).

In a large skillet, melt butter. Once melted, drizzle 1 tablespoon oil into the pan. Add chicken and brown for 3-4 minutes on each side.

Toss broccoli florets with 2 teaspoon oil, garlic (or garlic powder) and parmesan cheese.

Scoot the chicken over in the pan to make room for the broccoli.

Add broccoli to the pan, add 1/3 cup water (pour it to the side of the chicken and broccoli and not over the top so that it doesn&#039;t wash away the seasonings), cover and cook for 15 minutes or until chicken is white throughout and broccoli is fork-tender.  (see note for alternate cooking method) Serve immediately.
