This Chicken Spaghetti Squash Recipe is made with the most delicious garlic butter sauce. It will easily become a new family favorite from the first bite!

Garlic Butter Chicken with Spaghetti Squash

spaghetti squash, washed

boneless, skinless chicken breasts

olive oil, divided

lemon juice, lemon

unsalted butter

garlic,

half and half

red pepper flakes

Cook spaghetti squash until tender. Check out this video to see 3 easy methods to cook your spaghetti squash.

While your spaghetti squash is cooking, season chicken breasts with 1 tablespoon Italian seasoning, salt, and pepper.

On a large skillet, heat up 1 tablespoon of olive oil. Add chicken breasts and cook, flipping once, until cooked through, about 5 minutes per side. Add lemon juice, let it bubble, turn off the heat, remove chicken from skillet onto a cutting board, slice diagonally, and set aside.

In a microwave-safe glass or small saucepan, heat up half and half.

To the same large skillet over medium-high heat, melt butter, add garlic, and cook, stirring constantly for about one minute, until the garlic is fragrant and heated through. Slowly, add in half and half, 1 teaspoon Italian seasoning, and red pepper flakes. Stir in the Parmesan cheese and stir until the mixture has slightly thickened. Cook, stirring constantly until everything is incorporated into a sauce.

Add the chicken back into the skillet or large pan, turn heat to simmer (lowest heat setting) and heat the chicken through.

With a fork, scrape the squash meat off each half into a large bowl or directly onto 4 plates. Top with chicken and lemon-garlic sauce, sprinkle with fresh parsley and serve.

Made this meal last night......delicious,! Loved by the whole family. I was told to “put it in the rotation” of favorite dinners.  Appreciate the detailed recipe directions, easy to follow.

Food was delicious but may need to note that when adding the half &amp; half, that you need to be sure the pan is cool. Iron skillets apparently hold too much heat and will curdle the milk. It tasted fine, just had an off texture.

Yum! My picky 8 year old who never eats seasoned food actually liked the chicken. He wasn't keen on the spaghetti squash but it'll take any win I can get. My husband &amp; I loved all of it. Plus I made extra chicken so there are leftovers!!

This was so tasty! Just one question.. The sauce was cooking perfectly but right before I was about to pull the chicken off, it seemed like the butter started to separate from the rest of the sauce. Could I possibly not have heated the half and half up long enough? Or did I just leave it on a bit too long? Any tips are appreciated!

BBQ Chicken Spaghetti Squash

oz chicken breast ((2 cups chicken cooked + chopped))

favorite bbq sauce

oz grated cheese (plus extra to taste)

Pre-heat oven to 400 degrees F.

Slice your spaghetti squash in half lengthwise and scoop out the seeds. For easy cutting, feel free to stick each squash in the microwave for 4-5 minutes to soften it up just a tad. The knife slides through way easier this way!

Next grab a lipped baking sheet or a rimmed baking dish.

Rub the cut side of the squash with a teeny bit of olive oil.

Place inside a baking dish or atop rimmed baking sheet and roast face-down for about 40 minutes, or until tender and easily pierced with a fork.

Cooking time will vary a bit depending on the size of your squash, and larger squash will need to roast a bit longer to tenderize. Once ready, the once rock-hard exterior of the squash will be visibly softened with a tender interior.

The squash can be roasted and stored in the fridge for a few days if you'd like to meal prep and plan ahead for a speedier dinner.

While the squash roasts, start on the chicken and veggies.

For the chicken, you can cook it any which way you prefer. I added 12 oz of boneless, skinless chicken to my Instant Pot with 1 cup of water and set it to 5 minutes on HIGH with a natural pressure release. If using leftover or rotisserie chicken, you'll want to measure out 2 cups, chopped.
