Chicken Spinach Artichoke Rice Casserole

c. basmati rice

c. whole milk

c. Parmesan

cream cheese,

garlic,

red pepper flakes

rotisserie chicken, shredded (about 4 1/2 cups)

artichoke hearts,

c. shredded mozzarella, divided

Did anyone ever find the “old recipe” ? I’ve never seen it but it sounds like I would enjoy that one more. I agree, this one ends up being a bit too much dairy for my liking.

I made the Chicken Spinach Artichoke Rice Casserole.  I substituted small bow tie pasta for the rice.  To save time, I cooked the pasta while the casserole was in the oven.  When the casserole was finished, I mixed it all together.  

My family loved the finished casserole and it was quick to make!

It was a hit with my family and I love having different options for rotisserie chicken.

I made it without the artichoke hearts.  It was really good. I used left over beer can chicken, that I had cooked on Traeger. I also used left over creamed spinach and cooked rice that I had made the night before. The rest of the casserole I made as written. It was very good.

This Chicken Spinach Bake is seasoned chicken breasts topped with a garlic and herb cream cheese mixture, fresh spinach, and melted mozzarella, baked to perfection. It is a flavorful dish that is great for any occasion! And, it is as easy to assemble as it is delicious!

Chicken Spinach Bake

salt

(8 ounces) cream cheese, (softened)

garlic, (minced)

Italian seasoning

red pepper flakes, (optional)

(60 g) fresh spinach

(113 g) mozzarella cheese, (shredded)

parsley, (chopped for garnish)

Preheat oven. Spray baking dish with spray.

Preheat the oven to 400°F. Spray a 9x13-inch baking dish with non-stick cooking spray. Set aside.

Season chicken with salt and pepper.

Evenly season all sides of the chicken breasts with salt and pepper. Place them in a single layer on the bottom of the prepared baking dish.

Make cream cheese mixture. Spread over chicken.

In a small bowl, mix cream cheese, garlic, Italian seasoning, and red pepper flakes (if using) until well combined. Evenly spread the cream cheese mixture over the chicken.

Top chicken with spinach and cheese.

Place about ½ cup of spinach on top of each piece of chicken. Then, top each with about ¼ cup mozzarella.

Bake.

Bake for 20-25 minutes, or until the chicken is cooked to an internal temperature of 165°F and the cheese is golden.

Garnish with parsley.

Delicious.  Had the dish assembled and baked in an hour.  My husband prefers dark meat so I used 4 thighs.  Recipe can easily handle 6.  I substituted fresh basil for oregano and used sliced mozzarella.  It is fancy (and delicious) enough for company.
