Creamy and comforting chicken and stuffing casserole made in the slow cooker. This low prep casserole is bursting with flavor and is the perfect way warm up on a chilly winter evening.

Slow Cooker Chicken and Stuffing Casserole

carrots,

broccoli

1.5 lbs. boneless, skinless chicken thighs

(10.75

(10.75 oz) can condensed cream of chicken soup, NOT diluted

water

butter, melted

Spray inside of a slow cooker with cooking spray.

Place carrots and broccoli at the bottom of the prepared slow cooker.

Season chicken with salt and pepper and place on top of the vegetables.

In a medium bowl, whisk together condensed mushroom soup, condensed chicken soup, and water. Pour sauce over the chicken.

Sprinkle dry stuffing mix over top of the chicken. Drizzle with melted butter.

Put a lid on the slow cooker and cook on LOW heat for 6-8 hours (or on HIGH for 3-4 hours).

Delicious and comforting this chicken and stuffing casserole is a meal in itself but can also be made as part of a big family festive spread.

(8 tablespoons) butter, melted

Preheat oven to 350F (180C).

Spray a 9x13-inch baking dish with cooking spray.

In a large bowl, whisk together condensed soups and milk. Stir in cooked chicken.

Pour chicken mixture into prepared baking dish.

In a separate bowl, pour melted butter over dry stuffing mix. Gently stir until all of the stuffing mix is coated with butter. Sprinkle over chicken mixture.

Cover baking dish with foil. Bake, covered, at 350 degrees F for 20-25 minutes. Remove foil and bake for an additional 10-15 minutes, or until heated through and browned on top.
