Killer Chicken Thigh Marinade

bone-in, skin-on chicken thighs ((about 4 lbs))

olive oil

Tbsp sesame oil

soy sauce

Worcestershire sauce

lemon juice ((or lime juice))

Tbsp honey

maple

garlic ((minced))

½ tsp black pepper ((freshly ground))

tsp kosher salt ((plus more to taste))

Mix all ingredients for the marinade together in a large bowl or a plastic Ziploc bag. Add the chicken and make sure that every piece is covered evenly. Marinate in a fridge for at least 30 minutes to 2 hours or, better yet, overnight.

Preheat oven to 450 degrees F.

Place the chicken and all of the marinade in a baking dish. Bake uncovered at 450 degrees F for 25-30 minutes with the skin side up, until the internal temperature reaches 165°F. To make sure the chicken tops are nicely browned and do not dry out, baste the chicken thighs in the juices and marinade about 15-20 minutes into baking.

To get a nicely browned, crisped up skin, turn on the broiler for 2-3 minutes when the thighs are almost done cooking. Monitor broiling very closely as the tops may burn if broiled for too long.

Amazing and easy recipe!  The chicken was very flavorful, it was cold outside so I cooked it by searing the chicken in a pan and finishing in the oven at 400 for 10-12 minutes.  Came out perfect!

Combine marinade ingredients in a bowl and stir.

Pick flat container, baking dish or reusable silicone bag so chicken can lay flat for maximum flavor penetration.

Place chicken in a container, pour marinade over and mix to coat well.

Marinating time is anywhere from 30 minutes to 24 hours. Longer marinating time means more flavor but I wouldn&#039;t marinate past 24 hours because acid will cause flesh to break down.

When ready to cook, remove chicken from marinade and cook as per recipes.

Combine

In large ziptop bag, combine all of the marinade ingredients, then add the chicken.

Marinate

Seal the bag to evenly coat the chicken with the marinade. Place in a pan or bowl to catch any drips. Let the chicken marinate at room temperature for at least 30 minutes, or refrigerate to marinate for up to 12 hours (5 to 6 hours is ideal). Even 15 minutes is better than nothing!

When ready to grill, preheat the grill to medium-high (375 to 400 degrees F). If your chicken has been in the refrigerator, remove it and allow it to come to room temperature for at least 10 minutes. Clean and oil the grates.

Grill

Place the chicken thighs on the grill presentation (smooth) side down, shaking off any excess marinade. Cover the grill and let cook 4 to 5 minutes on the first side, then flip. The chicken should lift off the grill relatively easily; if it is sticking, allow it to cook another minute or two, then try again.

Continue cooking on the other side for 4 to 6 minutes more, or until the chicken is cooked through (chicken is considered cooked at 165 degrees F. I remove mine around the 155/160 degree F mark and allow the carryover cooking to finish the rest). DO NOT OVERCOOK or your chicken will be dry.

Rest

Remove the chicken to a plate, cover, and let rest for at least 5 minutes. Sprinkle with herbs and a squeeze of lemon or lime juice as desired.

Chicken Thigh Marinade

garlic (roughly chopped (about 2 tablespoons))

extra virgin olive oil

honey

Dijon mustard

cumin

cayenne pepper (optional)

In a large bowl or large ziptop bag, combine the garlic, oil, honey, soy sauce, Worcestershire, Dijon, cumin, salt, and cayenne, lime juice and zest.

Add the chicken thighs and toss with the marinade to evenly coat. Marinate the chicken at room temperature for 30 minutes or refrigerate for up to 12 hours (I find about 4 to 6 hours is ideal—since this is a small amount of lime juice, you can push to 24 hours if absolutely necessary). Do not let marinate for longer, or the meat will start to break down. Let the chicken stand at room temperature for 15 minutes prior to cooking.

TO GRILL: When you are ready to cook the chicken, preheat the a gas, charcoal, or indoor grill to medium-high heat (about 400 degrees F). Scrub the grill grates clean. Remove the chicken from the marinade, shaking off any excess. Oil the grates, then place the chicken smooth-side down. Grill the chicken thighs for 8 to 12 minutes, flipping once halfway through, or until the chicken registers 155 degrees to 160 degrees F at the thickest part when tested with an instant read thermometer (chicken is considered fully cooked through at 165 degrees F, but its temperature will rise as it rests). Transfer to a plate or cutting board, cover, and let rest 5 to 10 minutes. Enjoy warm.

Bake

TO BAKE: Preheat oven to 425 degrees F. Place the chicken in a single layer in a foil- or parchment-lined baking dish large enough to hold it comfortably without the chicken touching. Bake the chicken until it reaches 155 to 160 degrees F on an instant read thermometer inserted at the thickest part, about 15 to 18 minutes. Don&#39;t overcook! Cover and let rest 5 to 10 minutes before serving.
