Asiago Tortelloni Alfredo with Grilled Chicken Recipe

lb tortelloni or tortellini (like four cheese

chicken breasts

tbsp avocado or vegetable oil

tsp kosher salt

tsp black pepper

garlic powder

tsp red chilli flakes

tbsp butter

garlic (minced)

heavy cream a.k.a. whipping cream

¼ tsp black pepper

½ tsp kosher salt

parmesan cheese

Coat chicken with the oil, salt, pepper, garlic powder and red chlili flakes. Let stand at room temperature while you preheat a grill (or grill pan) for 5 minutes over medium-high heat. Oil the grates, then add the chicken. Cook undisturbed until it releases easily; about 5 minutes. Flip and continue cooking until it reaches internal temperature of 165ºF. Transfer the chicken to a plate and allow it to rest for 5 minutes, then cut it in thin slices crosswise.

Prepare chicken

Meanwhile, bring a large pot of water to a boil and salt it well.

Add tortellini to the boiling water. Cook for 7-8 minutes (or according to package instructions). Drain in a colander.

Prepare Tortelloni

Meanwhile, melt the butter over medium heat in a large saucepan. Add the garlic and cook until soft, about 1 minute. Whisk in the cream, salt and pepper. Bring to a simmer.

Remove pan from the heat and whisk in the cheese until the sauce is smooth. Cover the pot and leave it on the unlit (but still warm) burner to keep the sauce hot.

Make Asiago Alfredo Sauce

Add tortellini to the pot with the sauce and toss to coat. Taste and add more salt as needed. Divide among 6 plates and top with grilled chicken.

Chicken Tortellini Alfredo Soup

chicken

Brown

In a Dutch oven heat the olive oil on medium high and add the chicken.  Cook the chicken until golden brown on both sides and cooked through the center to 165 degrees, about 8 to 10 minutes depending on the thickness of the piece of chicken.

Rest

Remove the chicken from the pot and place on a plate to rest.

Sauté

Add the garlic to the pot and toss. Do not burn!

Combine

Add the butter to the pot stirring constantly until the butter melts. Add the flour, salt and pepper. Whisk the flour into the butter until a thick roux forms.

Cook

Cook about 3 minutes while whisking until lump free, thick and creamy. Be sure to scrape the bottom of the pot and along the edges well so the thick rue has dissolved. Bring to a boil until thickened.

Slowly add the milk,  half and half, or heavy whipping cream to the pot whisking constantly until the liquids have combined and the sauce is thick and creamy.

Whisk

Add the shredded parmesan cheese 1/4 cup at a time while whisking until each addition has melted into the broth.

Once the cheese has melted into the broth whisk the chicken broth into the pot and bring to a boil, occasionally whisking. While waiting for it to come to a boil shred the chicken into bite size pieces.

Simmer

Next, add the tortellini, shredded chicken, spinach if using, and red pepper flakes to the pot. Stir to combine. Bring the pot to a simmer and cook until all ingredients are piping hot.

Serve

Serve in a bowl with a slice crusty bread.
