King Ranch Chicken Casserole

Preheat the oven to 400 degrees F. Place a skillet over medium heat and add the butter, onions, and garlic. Sauté for 3-5 minutes to soften.

In a large bowl mix the sautéed onions and garlic, chopped chicken, sour cream, salsa verde, chopped green chiles, cilantro, and&nbsp;cumin.

Tear the tortillas into rough pieces.&nbsp;Spoon one-quarter of the chicken filling in the bottom of a 3-quart baking dish. Top with 1 cup shredded cheese. Then spread a single layer of torn tortillas over the top. Repeat layering the chicken filling, cheese, and tortillas three layers high, using up all the tortillas. Spread the last one-quarter of chicken filling and 1 cup of cheese over the top.

Bake for 20-25 minutes, until golden and bubbly. Wait at least 5 minutes before cutting. Serve warm!

Preheat oven to 350 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray.

In a large skillet, saute onion and garlic until soft and translucent. &nbsp;Add the cumin, oregano and black pepper and cook for about 1 minute, stirring constantly. Add chilies, including the juice, both soups, and chicken broth and whisk until mixture is combined and smooth.

Pour 1/2 cup of the sauce on the bottom of the baking dish. Spread 1/3 flat of tortillas in a flat layer on top, 1/3 of the remaining sauce, 1/2 the chicken, 1/3 of the cheese.

Continue with the second layer of 1/3 of tortillas, 1/3 of the sauce, the remainder of the chicken, 1/3 of the cheese.

Finish with the third and last layer with the remaining the tortillas, the sauce,&nbsp;and the cheese.

Bake in the preheated oven, uncovered, for 35-45 minutes or until heated through the center and sauce is bubbly.

Preheat the oven to 375 degrees F. Coat a 9x13-inch casserole dish with baking spray. If needed, cook and shred chicken according to these easy steps.

Heat the olive oil in a large, deep skillet over medium high, then add the onion, green bell pepper, red bell pepper, and jalapeno. Saute until the veggies are tender, about 10 minutes. Add the garlic, cumin, oregano, salt, and pepper and cook until fragrant, about 30 seconds. Add the tomato sauce, chicken stock, and Tabasco Jalapeno sauce, then stir to combine. Let the sauce simmer for 12 minutes.

Assemble the casserole: Spread a thin layer of the sauce on the bottom of the prepared baking dish. Arrange 6 tortillas on top so that they cover the sauce, overlapping as needed. Top with 1/3 of the chicken, 1/2 cup of the cheese, then 1/3 of the remaining sauce. Repeat the process twice more, sprinkling the last 1/2 cup of the cheese over the top.

Cover then pan with foil, then bake for 35 minutes. Remove the foil, return the pan to the oven, then bake for 10 additional minutes, until the casserole is hot and bubbly and the cheese is melted. Let rest 5 minutes. Serve hot with desired toppings.

Preheat the oven to 375°F. Grease a 9x13 inch baking dish.

In a large bowl, mix together the shredded chicken, corn, black beans, diced tomatoes with green chiles, cream cheese, taco seasoning mix, salsa, and chopped cilantro until well combined.

Spread a thin layer of the chicken mixture on the bottom of the prepared baking dish.

Arrange a layer of tortilla quarters over the chicken mixture, overlapping slightly to cover the entire surface.

Spread half of the remaining chicken mixture evenly over the tortilla layer.

Sprinkle 1 cup of the shredded Mexican blend cheese over the chicken mixture.

Repeat layering with the remaining tortilla quarters, chicken mixture, and shredded cheese.

Bake for 30-35 minutes, or until the casserole is hot and bubbly, and the cheese is melted and lightly golden brown.

Remove from the oven and let cool for 5-10 minutes before serving.

Serve the casserole hot, garnished with your choice of optional toppings, such as sour cream, sliced jalapenos, tomatoes, or additional cilantro.
