One-pan Creamy Parmesan Chicken and Mushrooms is a simply fantastic skillet meal that requires only 30 minutes of your time and packs a huge punch of tasty flavors like garlic, butter, and Italian seasonings over savory mushrooms and tender chicken.

Creamy Parmesan Chicken and Mushrooms

chicken thighs (OR 4 boneless skinless chicken breasts pounded to even thickness)

salt and pepper

garlic powder

Italian seasoning

mushrooms

butter

garlic

flour

chicken broth

half and half (or heavy cream)

parmesan cheese (plus additional for topping)

parsley

In a large bowl combine chicken, oil, salt and pepper, garlic powder, and Italian seasoning and toss.

In a large skillet over medium heat, brown the chicken on both sides for 2-4 minutes. Transfer chicken to a plate and cover to keep warm.

Add butter to pan and stir until melted. Stir in garlic and mushrooms. Continue to cook 3-4 minutes over medium-high heat until butter begins to darken and mushrooms are tender.

Sprinkle flour into the pan and stir to combine. Whisk in chicken broth and milk or heavy cream. Stir in parmesan cheese and salt and pepper to taste.

Return chicken to pan and spoon a little of the sauce over the chicken. Cover and bake at 375 for 15-20 minutes until chicken is cooked through.

Spoon more sauce over the chicken and sprinkle with cracked black pepper, grated parmesan cheese, and fresh parsley or thyme and serve immediately.

Chicken Lombardy

chicken breasts (pounded to even thickness)

mushrooms (diced)

marsala cooking wine

Preheat oven to 400 degrees. Lightly grease a large baking dish and set aside.

Melt butter in a large skillet over medium heat. Stir in garlic. Saute mushrooms in melted butter 2-3 minutes until tender and fragrant. Use a slotted spoon to transfer mushrooms to a bowl or plate and set aside.

Toss chicken breasts in the flour to coat. Cook for 1-2 minute on each side in the same pan you used for the mushrooms (do not clean the pan in between). Transfer chicken to your prepared baking dish. Scatter mushrooms over the chicken.

Add marsala wine and chicken broth to the pan. Add salt and pepper to taste. Bring to a boil, then reduce heat to medium-low and simmer 5-10 minutes. Pour over chicken and mushrooms.

Mix together cheese, sprinkle over chicken and mushrooms. Sprinkle green onions on top. Cover dish with foil and bake for 15-20 minutes. Uncover and cook for another 5-10 minutes until chicken is cooked through and cheese is melty and serve.

Simple and elegant braised chicken dish, with artichokes and mushrooms in a sauce made with chicken stock and sherry. Equally impressive for entertaining or on the table for the family.

Braised Chicken with Artichokes in Mushroom-Sherry Sauce

salt

½ teaspoon smoked paprika (or regular paprika)

black pepper

chicken thighs, bone-in, skin-on

butter (I used salted Kerrygold)

chicken stock,

dry sherry

Preheat oven to 375º. Combine salt, pepper and paprika and then season chicken thighs evenly all over with mixture.

Heat a large skillet over medium-high heat and then add 4 tablespoons of butter.&nbsp; Place chicken skin side down and brown well, about 5 minutes.&nbsp; Turn and brown other side for about 3 more minutes.&nbsp; Do this in two batches and adjust heat accordingly as needed.&nbsp; Remove to a large Dutch oven with lid, or casserole dish.

Drain off butter and wipe pan relatively clean.&nbsp; Add 2 more tablespoons butter and when melted, add the mushrooms.&nbsp; Cook and stir for about 5 minutes, adding a little more butter if dry and starting to burn.&nbsp; Sprinkle with flour and stir to coat for about 30 seconds.&nbsp; Pour in chicken stock and sherry, simmer for 2 - 3 minutes, stirring and scraping up any browned bits.&nbsp; Season with salt and pepper.

Arrange the artichoke pieces around and in between the chicken thighs.&nbsp; Pour the mushroom-sherry sauce over the chicken and artichokes.&nbsp; Cover and bake for 40 to 50 minutes.&nbsp; Serve with rice or potatoes.
