Simple and super delicious Chickpea Curry Soup. It&#039;s easy to make and ready in less than 30 minutes. Serve with fresh, crusty bread, rice or warm naan bread!

Chickpea Curry Soup

onion (, diced)

carrots (, diced)

garlic

curry powder

kg (2.2 lbs / 6 cups) diced potato

vegetable stock

fine sea salt (, add to taste)

black pepper

white/cane sugar

Heat the oil in large soup pan over medium heat.

Saute the onion and carrots for about 5 minutes or until translucent.

Add the garlic &amp; curry powder and cook for about another minute until fragrant.

Add the potatoes, stock, salt and pepper and simmer until the potatoes are fork tender (about 10 to 15 minutes).

Using an immersion blender, partially blend the soup with a few short bursts. Or scoop out a couple of cups and blend in a blender then add it back to the soup pot.

Add the chickpeas, coconut milk and sugar. Stir well and simmer over medium/low heat until heated through.

Taste and adjust the salt and pepper as necessary before serving.

red pepper flakes ((optional))

tomatoes (, fire-roasted)

coconut milk

vegetable broth (low sodium (more if needed))

agave nectar (or any sweetener)

sea salt (, more to taste)

cracked pepper (to taste)

cilantro

lime (, juiced)

Lime wedges

In a large pot, heat oil over medium heat. Once shimmering, add the onion and sauté until translucent. About 2-3 minutes.

Add garlic and ginger. Sauté for 30-60 seconds until fragrant.

Now add the tomato paste, curry powder, and pepper flakes. Sauté until fragrant, about 30-60 seconds.

Add diced tomatoes, chickpeas, broth, coconut milk, agave, and salt. Stir and scrape the bottom to release any browned bits. Raise heat to bring to a high simmer, then cover with a lid and reduce heat to a gentle simmer. Cook for 10 minutes to meld flavors. Stir occasionally.

Now Remove the lid and simmer for another five minutes to reduce and thicken slightly.

Remove from heat and stir in the lime juice and sprinkle with cilantro. Taste for seasoning and add more if needed. Serve with lime wedges and more cilantro.

This soup is delicious, full of flavor and comes together quickly. I omitted the onion due to a sensitivity and added spinach, otherwise followed the recipe as written. I will be making this again. Thanks for a great, yummy recipe!

I even forgot the lime during this first round but I will be sure to add it for even more deliciousness during seconds on tomorrow. I just made this soup tonight and I couldn’t stop eating it !   I added grated carrots and some spinach otherwise followed the recipe. Used Vadouvan a French curry that is heavenly.

Just found your website and saw this receipe.  Had to make it and it is absolutely amazing and so tasty.  I did add a small diced sweet potato but apart from that nothing else and it is so good.

I used carrots and celery too to deepen flavor. also threw in some chopped kale and used 3 tbsp of coconut cream instead of coconut milk. The kitchen smelled wonderful!  ate it with a piece of homemade sourdough bread.  nice and easy recipe.

I was skeptical but this soup is delicious! I’m add a little spinach next time.

This was SO tasty and also very quick to make. I’m in the UK so used tomato purée instead of paste (we don’t have that here) and bumped it up to 2 tbsps but other than that followed the recipe as written. Delicious!

Love it!  Make it twice already.  I add it to the vitamix after it’s all cooked to puree it.  Amazing!

Didn’t use the optional red pepper flakes and used maple syrup for the sweetener. Easy to make and tastes delicious!
