This Vegan Breakfast Casserole is the perfect customizable, make-head, savory breakfast recipe with a quick &amp; easy vegan eggy base, SEVEN veggies like hash browns, bell peppers, green peas, mushrooms, tomatoes and vegan sausage.

Vegan Breakfast Casserole

Chickpea flour

Dairy-free milk (homemade cashew milk)

tsp Baking powder (-> list of gluten-free brands)

tsp Apple cider vinegar

tsp Black salt

Salt

3.5 oz Vegan sausages

Potatoes (large)

Onion (medium)

Garlic

Green peas (fresh, frozen or canned)

Bell pepper

Cherry tomatoes

Tbsp Olive oil or Vegan butter (for greasing the bottom of the baking dish)

Peel and chop onion and garlic.

Gently wash any dirt off of the mushrooms by using a colander or a sieve. Dry them with a paper towel or clean kitchen cloth. We never peel mushrooms, but sometimes cut out the stem if they feel too dry or too hard. Slice them.

Wash and slice bell pepper into 1/4-inch (4-5 mm) wide strips.

Wash and cut the cherry tomatoes in half.

Prepare the vegetables

Take a large bowl and add chickpea flour, baking powder, black salt, regular salt, and black pepper. Mix them thoroughly.

Add apple cider vinegar and half of the dairy-free milk and use a whisk to mix it well. Then add the other half and mix until you have a smooth pancake batter like liquid.

Make the eggless base

Pre-heat the oven to 390-395 Fahrenheit (200 degrees Celsius).

Grease the bottom of your oven-safe casserole dish (8 x 10-inch (20 x 25 cm)) with oil or vegan butter unless you really have a non-stick one.

First layer – Spread shredded potatoes, chopped onion and garlic.

Second layer – Add sliced mushroom, frozen (or canned) green peas, bell pepper slices and vegan sausage bits.

Chickpea flour base – Mix the eggless base, pour it on top of your veggies.

Add toppings – Add chopped cherry tomatoes or shredded vegan cheese (optional).

Bake in the oven for approx. 40 minutes. Enjoy! Serving ideas above the recipe card.

Cajun Chickpea Fries with Cilantro Jalapeno Lime Cream Dip  

chickpea flour

water

salt (+ more for to taste)

garlic powder

tsp oil

tbsp cajun spice blend

garlic powder (or granulated garlic )

tsp salt

raw cashews

TBSP lime juice

cilantro

garlic

jalapeno

Blend the Chickpea Flour, water, salt, and garlic powder until smooth. Then add to a sauce pan over medium heat and cook. The mixture will get lumpy, stir occasionally and it will eventually and even out to a thicker custard like state. Continue to cook for another 2 mins after it has thickened evenly.  Transfer the mixture to a greased 7-8 inch pan or spread over parchment and even out on the top using parchment paper.

Chill for 20 minutes, and slice the chickpea into fry size slices.

Add the chickpea fries to a skillet over medium heat with 2 tsp of oil and panfry until most of the edges are golden.

Take off heat and add in the cajun spice, garlic, salt (only if your Cajun blend doesn’t have salt), in pan, and toss well to coat. Taste and ajust to salt and spice. 

For the Chickpea Fries

Blend all the ingredients until they&#039;re smooth and creamy. I usually soak the cashews in hot water for 15 minutes, and then blend, and then blend the mixture for 1 minute, let it sit for 10 minutes in the blender, then blend again. That gives a really creamy depth. Taste and adjust salt and lime as needed.

Serve the freshly pan fried chickpea fries with the Cilantro Jalapeno Lime Dip.You can also serve these fries with salsa, ketchup or my tahini dip for a Nutfree variation.

For the Dipping sauce:

A savory pancake begging to be eaten with pickles and chutneys or yogurts and cream. East meets West with this beautifully, wonderfully healthy dish.

Chickpea Flour Pancakes

chickpea flour ((or besan/garbanzo flour))

turmeric

salt

½ tsp pepper

spring onions

olive oil

½ tsp chili flakes ((I highly recommend this))

bell pepper, red

peas

Add the flour, water, turmeric, salt, pepper and chili flakes (if using) to a mixing bowl and give it a quick blend using a food processor or blender. Leave it to settle for a few minutes while you heat up the oil or ghee in a non-stick pan. The batter needs to look very runny!

Dice the veggies finely and add them to the mixture.

Use a tissue or similar (a spray oil would work wonders here) to ensure the bottom of the pan is coated well in oil.

Add about a ladle of the mixture and veggies when the pan is hot - a medium heat should be just right.

Cook for about 3 minutes - the mixture will quickly start to firm. If you’re using two pans, you can make two pancakes at the same time.

Make sure you use a large pan (or pans) here, you’re aiming for thin pancakes. They’re MUCH easier to handle!

Use a large spatula to help you flip the pancakes, adding more oil underneath if necessary. After another 2-3 minutes your pancake will be ready!

Keep it somewhere warm while you repeat with the second pancake, adding more oil when necessary.

Done! Add your desired toppings and enjoy. Remember - it’s important to eat these pancakes warm - don’t let them get cold!

Any chutneys (red onion is a favourite of ours) yogurt dip, hummus, avocado, guacamole, Branston Pickle (if you can find it where you are it goes incredibly well!).

Chickpea Flour Pancakes (Besan Chilla/Cheela) - Traditional Pancakes Taken To The Next Level

A popular Sicilian street food, Panelle (Sicilian Chickpea Fritters) can also be served as an appetizer, a snack, or as a panelle sandwich. Hot, crispy and delicious!

Panelle Recipe (Sicilian Chickpea Fritters)

ground black pepper, ((plus more for serving))

fresh parsley, chopped, ((plus more for serving))

oil, (for frying)

lemon, (for serving (optional))

Using a medium-sized pan, combine salt and 3 cups of water. 

Add chickpea flour and whisk until there are no lumps.

Place the pan over medium-high heat and keep whisking.

After 3 minutes, add the ground black pepper and continue whisking.

Wait for about 4 more minutes, and you will start seeing it thicken.  Test this by lifting your whisk, and you will see bits attached to it.

Adjust heat to medium-low and continue mixing for 9 more minutes.  You can switch to a wooden spoon or spatula anytime from this point on because the whisk is not sturdy enough to handle the dough.

Take the saucepan off the heat and add the chopped parsley. 

Mix, then transfer the dough into a loaf tin.

Use your hand to flatten the top of the dough while gently pressing.

Set the tin aside, uncovered to cool and solidify -- at least sixty to ninety minutes. (Room temperature is sufficient.)

Preparing panelle dough:

When the dough is ready, turn the loaf tin over to remove it.

Cut into half, then quarter, and then slice into about 1/2-centimeter thick and slice across to cut a triangle.

Using a saucepan, heat oil over medium-high heat.

Once the oil is ready, start frying the chickpea fritters, placing them on top of kitchen paper after to drain any excess oil.

Serve with a squeeze of lemon and a dash of ground black pepper.

Preparing chickpea fritters:

Slice a bun or a bread roll in half and add one layer of panelle on the bun&#039;s lower part.

Add a dash of ground black pepper and fresh parsley, then add another layer of chickpea fritters --- repeating it for at least three layers.

On the top layer, squeeze some fresh lemon and cover with the top bun.

Serve.
