Dinner is on with this flavorful Indian inspired Chickpea Tikka Masala recipe! It's lusciously creamy and easy to make right at home in one pan with simple ingredients!

Chickpea Tikka Masala

olive oil

onion,

cumin seeds

garlic cloves, minced

coriander,

turmeric

garam masala

– 1 teaspoon cayenne

salt

(14 ounces) diced tomatoes, with juices (or 4 tomatoes chopped)

tomato paste

(14 ounces) chickpeas (garbanzo beans), drained and rinsed

(15 ounces.) coconut milk (full

cilantro

naan

CHICKPEA TIKKA MASALA

In a large pot, heat oil or water over medium heat, add onions and cumin seeds, cook for 5 &#8211; 7 minute, until onions are browned around the edges. Add the ginger and garlic, cook 1 to 2 minutes more. Add the garam masala, turmeric, garam masala, cayenne  and cook for 1 &#8211; 2 two minutes, or until nice and fragrant. Add tomatoes and cook for 4 minutes, until they breakdown a bit. Add tomato paste, chickpeas and coconut milk, stir to combine and bring to a gentle simmer, stirring occasionally. Simmer, covered, for 25 to 30 minutes over low heat, stirring occasionally. Adjust seasonings to taste.

Serve with rice, cilantro lime rice, quinoa, couscous, or pair with vegan naan bread.

Insanely good! I added more of the Indian seasoning and added cinnamon which took it over the top!

Served it over cauliflower rice. So delicious!

I tried this, it was delicious! It tasted similar to a etouffee. I added sweet potatoes and carrots with the chickpeas as suggested in the notes. Delicious Recipe!!

This recipe was very good! Mid simmer, I did add a little bit more salt because I felt that it helped bring out the flavours that much more. Paired with Naan or rice, it's an excellent meal!

This was delicious! I made exactly as the recipe and t turned out perfect.

I expected this to be good.... but it was GOOD. So excited to add into my regular rotation. I added a sweet potato and it was perfect. Found the recipe by looking for something that I can prove to my also vegetarian coworker that you can have a perfectly complete meal without tofu. Followed the recipe exactly and it was delicious!! Exceeded my expectations and my husband loved it too.

This is a delicious recipe. Both of my daughters devoured their meal, so I thank you. I added sprouted tofu, which I incorporated with the garlic so it would have time to sear just a tad as well as absorb the flavors. It turned out great.
