This dish is easy, ready in about 20 minutes, and loaded with flavor and so much texture. It’s better than what you’d get at a restaurant. The chicken is sautéed with sesame oil for depth of flavor before adding broccoli, red bell peppers, edamame, and garlic. The vegetables stay crisp-tender and the dish is finished with cashews and a wonderful sauce that’s made with soy sauce, honey, rice wine vinegar, ginger, and chili garlic sauce. The heat from the chili garlic sauce makes the chicken come to life without being overly hot and spicy. The sauce helps keep the chicken moist and tender and clings to the veggies beautifully.

All you’ll need is a pot to boil the noodles and a bowl to mix everything together in to make these Easy Chili Garlic Oil Noodles. You can also easily adjust the ingredients according to your desired spice and taste. It’s really so quick, easy, and extremely satisfying.

Easy Chili Garlic Oil Noodles

tbsp neutral oil (see notes)

tbsp chili flakes (feel free to add more or less according to

garlic (minced)

soy sauce (or more to taste)

tbsp chopped green onion

white pepper (or sub black pepper)

Chili garlic sauce

More chopped green onion

Doubanjiang (or chili broad bean paste)

soy sauce vinegar

Heat a small pot with water over high heat. Once it boils, add in the noodles and cook according to package instructions until chewy or to your liking. Drain from the water and place the noodles in a bowl.

In the same pot of water, blanch the vegetables until tender and cooked to your liking. Place in the bowl as well.

Remove the water from the pot and then pat dry. Heat the neutral oil over high heat until it’s very hot. You can test the heat by adding a chopped scallion and if it sizzles, it’s good to go!

While the oil is heating, top the noodles with the chili flakes, minced garlic, soy sauce, vinegar, chopped green onion or scallion, salt, and pepper.

Carefully pour in the very hot oil over the noodles. Enjoy that sizzle! Afterwards, mix everything well to coat the noodles in the flavourful oil and sauce.

Top with some chili garlic sauce, more chopped green onion or scallion, chili bean paste, and more soy sauce/chinkiang vinegar, to taste, if needed. Enjoy!

Easy Chili Garlic Oil Noodles | Chinese Vegan Recipe

Looking for a meaty, yet vegetarian, sandwich? Make these spicy roasted portobello mushroom sandwiches with cheese and bell peppers.

Roasted Portobello Sandwiches with Bell Peppers and Camembert

sesame oil

barbecue sauce

Dijon mustard

portobello mushrooms

red bell pepper

Camembert cheese

baby kale leaves

ciabatta bread, or 4 small ciabatta buns

Combine all of the sauce ingredients in a medium bowl and mix together with a small whisk or fork.

Rinse the portobello mushrooms, then use a spoon to gently remove the gills. Cut into 1/2-inch slices and place in a bowl. Add about 2/3 of the sauce to the mushrooms and use a spoon to gently toss so that they are evenly covered. Let sit for about 30 minutes while you roast the bell peppers.

Turn your oven to broil and place the bell pepper about 1-inch away from the broiler. Cook, turning every couple minutes, until blackened in spots all over. Broiler strength can vary, so the time this takes will vary, as well. Mine took about 10 minutes total, but keep a close eye on yours.

When the bell pepper is done cooking, transfer it to a cutting board and let cool. Once you are able to handle it, cut off the top and drain the liquid and remove the seeds. Peel off the skin as best you can, then slice into 1/4-inch strips.

While the pepper is cooling, turn the oven to 350ºF. Grease a baking sheet, then spread the marinated mushrooms out evenly on the sheet. Roast for about 25-30 minutes, tossing halfway through, until soft. Remove from the oven but leave the oven on.

To Cook the Vegetables:

While the mushrooms cook, slice the ciabatta bread into 4 sections, then cut each section in half through the middle to make the sandwich bread.

Spread half of the bread slices (one per sandwich) with some of the camembert cheese. Place in the 350ºF oven on a baking sheet for about 5 minutes, until the cheese is melted and the bread is a bit toasty.

Brush the plain bread slices with the leftover spicy sauce. Layer the kale, mushrooms, and bell pepper on top of the cheesy bread. Top with the sauced slices of bread. Enjoy!

This Chili Garlic Sauce is a copycat recipe for Trader Joe&#039;s Chili Garlic Crunch, made fresh, with no preservatives!

Chili Garlic Sauce

tsp fish sauce, (optional)

Make the sauce.

Combine all ingredients in a glass jar and shake/stir until fully combined.

Serve or store.

Serve immediately or store in a glass jar for later.

Homemade chili garlic sauce recipe ready in 15 mins.! Inspired by huy fong garlic chili sauce but more fresh, garlicky, and healthy! Makes 1 cup.

Garlic chili sauce recipe

garlic (finely minced)

0.8 oz ginger (grated)

tbsp avocado oil (divided)

tsp coarse sea salt (plus more to taste)

2.5 tbsp gochugaru (Korean chili pepper flakes, not power)

tbsp coconut brown sugar (or keto brown sugar)

sesame seeds

tbsp toasted sesame oil

tbsp coconut aminos

tbsp aged balsamic vinegar

½ tsp Sichuan peppercorn powder (optional)

Mince

Finely mince the garlic and grate the ginger. Separate them into 2 separate piles.

Bloom

In a heavy-bottom small saucepan, start the pan cold with 4 tbsp avocado oil. Add the minced garlic and simmer over low heat to infuse the oil with garlic flavor. Stir with a wooden spoon until the garlic turns in light golden brown, about 5 minutes.

Infuse

Add the ginger and salt and continue to gently bloom and infuse the oil over low heat for another 2 minutes.

Simmer

Add the chili flakes, sugar, sesame seeds, the remaining 1 tbsp avocado oil, and sesame oil, and continue to stir the sauce and simmer for another 3 minutes.

Season

Add the coconut aminos, vinegar, and Sichuan peppercorn powder, if using.  Stir and taste to adjust with more salt or sugar.

Bring the sauce to a gentle simmer then turn off the heat.

Serve

Once the sauce is cool to room temperature, transfer it into a glass jar to pack and seal. Store the sauce in the fridge. Good for a month.

This vegan chopped cabbage roll skillet is a hearty winter meal that comes together simply, mostly on the stovetop and in about 1 hour. Cabbage is roasted in spices and then combined with a tangy tomato sauce, lentils, rice, and meaty finely ground walnuts.

Vegan Chopped Cabbage Roll Skillet

olive oil, divided

garlic powder

paprika, divided

sea salt and ground black pepper,

yellow onion, small dice

thyme

lentils,

white long grain rice, uncooked

walnuts, finely chopped

tomato paste

14.5 oz (428 ml) can diced tomatoes

vegetable stock,

cane sugar,

Tamari soy sauce

apple cider vinegar

sour cream,

dill or parsley (or both)

Preheat the oven to 425°F.

Place the chopped cabbage on a large baking sheet. Drizzle the cabbage with 2 tablespoons of the olive oil, the garlic powder, 1 teaspoon of the paprika, and some salt and pepper. Toss to evenly coat. Roast in the oven until tender and browning on the edges. Start checking on the cabbage at the 15 minute point and give it a flip and toss. In my oven it takes up to 40 minutes, but others have pulled theirs at 15 minutes.

Heat a heavy bottomed pot or braiser over medium heat. Once the pot is hot, add the remaining olive oil and swirl it around. Add the onion and sauté until soft and translucent, about 6-7 minutes. If the onions start browning too fast, lower the heat. Add the garlic, dried thyme, and remaining paprika. Stir until fragrant, about 1 minute.

Add the lentils, rice, and walnuts, and give it a stir. Add the tomato paste to the pot. Keep stirring and cooking this out for 1 minute, just to get rid of some of the raw “tin” flavour. Add the diced tomatoes and vegetable stock to the pot and stir. Season with salt and pepper.

Place a lid on top of the pot, slightly askew. Bring the mixture up to a boil and then simmer until the lentils are tender and the rice is cooked, about 35-40 minutes. Keep checking in to stir it often, scraping the bottom of the pot. If you find that you need to add more vegetable stock, add it by the ½ cup.

Once the lentils and rice are cooked, stir in the sugar, Tamari, and apple cider vinegar. Check the sauce base for seasoning and adjust if necessary. Stir in the roasted cabbage to combine.

Serve the cabbage roll skillet with vegan sour cream and chopped dill/parsley. Enjoy!

35 Vegan Chickpea Recipes: 7 Spice Chickpea Stew

olive or coconut oil

seven spice blend (see below)

chickpeas,

balsamic vinegar

jarred/canned diced tomatoes

coconut milk

⅓ cup chopped flat leaf parsley or cilantro (or a combination)

cumin

coriander

turmeric

oregano

chili flakes

cinnamon

In a deep skillet or a small soup pot, heat the olive oil over medium heat. Once the oil is lightly shimmering, add the onions to the pan. Cook and stir the onions until translucent and quite soft, about 5-6 minutes. You want the onions to be quietly sizzling while they cook, so lower the heat if necessary.

Add the spice blend to the skillet and stir. Once the spices are quite fragrant and fully integrated with the onions (about 1 minute), add the tomato paste, mashing it with the back of your spoon into the spices and oil. Add the garlic and chickpeas and stir the mixture for 30 seconds.

Add the balsamic vinegar and tomatoes to the pan and stir, using the back of your spoon to scrape up any brown bits that may have formed on the bottom of the pan. Add the coconut milk to the skillet and season the stew with salt and pepper.

Bring the seven spice chickpea stew to a boil, and then lower the heat to a light simmer. Cook the stew for about 10-15 minutes, or until the flavours have melded to your liking. Garnish the top of the stew with the chopped parsley/cilantro. Serve stew hot with polenta, brown rice or any other accompaniment you like.

These braised Romano beans with spicy cherry tomato sauce are a simple and incredibly flavourful side dish.

Braised Romano Beans with Spicy Cherry Tomato Sauce &amp; Lemony Ground Walnuts

medium shallot, small dice

thyme leaves, minced

dried chilli flakes

¼ teaspoon smoked paprika

capers, minced

lb cherry tomatoes, halved

water

¾ lb green Romano beans,

walnut halves

lemon zest

tamari soy sauce

parsley

chilli oil

Heat a large sauté pan over medium heat. Once the pan is hot, pour in the olive oil and swirl it around. Add the shallot and thyme to the pan and stir. Cook until the shallots are translucent and soft, stirring often, about 3-4 minutes. If the shallots are browning on the edges, lower the heat.

Add the chilli and smoked paprika to the pan and stir for about 30 seconds. Then, add the capers and minced garlic. Keep stirring until the garlic is very fragrant, about 30 seconds. Add the tomato paste to the pan and break it up with the back of your spoon. Keep stirring and mashing the bits of tomato paste until it has darkened a shade or two. Again, if you’re experiencing rapid browning/drying of the pan here, just lower the heat.

Add the cherry tomatoes to the pan and stir. Season with salt and pepper. Once the cherry tomatoes let off some juices and start bubbling, keep the heat at this level. Simmer the cherry tomato sauce base for 5 minutes. Then, add the water to the pan and stir. Let the sauce simmer another 5 minutes. The sauce should be slightly thick but still fluid enough to move around the pan easily.

Add the cut green Romano beans to the pan along with some extra salt and pepper. Stir to coat the beans in the sauce. Bring the sauce and beans to a boil and then lower the heat to a simmer. Cover the beans and continue to simmer until they are tender and the sauce has thickened around the beans, about 15-18 minutes. I like to lift the lid and check in on the beans here and there, giving it a stir each time.

While the beans are simmering, finely chop the walnuts and mix them together in a small bowl with the lemon zest and a pinch of salt. You could also grind this mixture up in a mini food processor if you like.

Once the Romano beans are done simmering, stir in the ½ teaspoon of tamari soy sauce. Check the dish for seasoning and adjust if necessary. Serve the braised Romano beans warm with the lemony walnut mixture and parsley sprinkled on top. Garnish with chilli oil if you like.
