Chili’s Southwest Eggrolls – enjoy this restaurant favorite anywhere. These Southwest style egg rolls are delicious.

Season chicken with salt and black pepper.&nbsp; Brush the olive oil onto the chicken breast.&nbsp; Grill on a medium hot grill.&nbsp; Cook for 5 to 7 minutes on each side.&nbsp; Chop the chicken into small pieces. Set chicken to the side.&nbsp;

Chicken Breast Instructions

Saute red pepper until just tender.  Add the green onion, corn, black beans, spinach, and pickled jalapenos to the mixture.  Add taco seasoning.  Heat through.    

Place equal portions of filing to the tortillas, equal portions of chicken, and top with cheese.&nbsp; Fold in the ends of the tortilla and roll up.&nbsp; Make sure to roll the tortillas very tight. Pin with toothpicks to secure.&nbsp;

In a large pot add enough vegetable oil to cover the bottom of the pan by 4 inches.&nbsp; &nbsp;Heat to 350 degrees.&nbsp; &nbsp;Deep fry&nbsp;the egg rolls until they are golden brown.&nbsp; &nbsp;This should take 7 to 8 minutes.&nbsp; When golden remove from oil, and place on a wire rack.&nbsp;

Cooking the egg rolls

Prepare a package of Ranch dressing mix with 1/2 cup mayonnaise, and 1/2 cup buttermilk.&nbsp; &nbsp;Add 1/4 cup of mashed avocado to the mixture.&nbsp; &nbsp;Pulse mixture in a blender until the dipping sauce is just blended.&nbsp;

Now it only has two ingredients in it, and the first one is chili, and I am
using chili with no beans. Because I live in Texas, and I don't think they
sell chili with beans in the store, or actually they do, but no beans. You
can add beans if you want, I know it's very controversial. And the next
ingredient is also controversial, Velveeta cheese.

All right. So we're going to take a pot here, we're going to put it over
medium heat. We are going to take one can of chili, I really like Hormel
just because, I don't know, grew up on it, tastes great. No, actually it
taste to me just like chilis, so Hormel chili here. So one 14 ounce can of
chili to one pond of Velveeta. If you need more, two cans of Hormel chili
with two ponds of Velveeta.

Now I kind of cube it up to help it melt better, and I do this over the
stove top, just because I hate to microwave food, because you know what,
it's hot in one spot and you have to stir it and spread the heat around.

You know what, it only takes about three to five minutes to make it on the
stove top, and here everything melts evenly, so that's just my push to do
it on the stove top. If not, microwave 30 seconds, stir, microwave 30
seconds, stir, and cook it until you're happy with it. So this is really
easy to make. You know what, I feel like a little spicy, you could add some
jalapenos in here, whatever makes you happy. And here you go, you have some
