After comparing other copycat Chili's salsa recipes and making a few tweaks, this copycat recipe is by far the closest to the original... and quite addictive.

Copycat Chili's Salsa

Rotel Original Diced Tomtaoes & Green Chilies, (14.5-oz)

tomatoes

jalapenos

onion

tsp minced garlic

T chopped fresh cilantro, (optional)

tsp sea salt

tsp cumin

tsp sugar

lime juice

Place jalapenos and onions in a food processor...

Place jalapenos and onions in a food processor and pulse for a few seconds.

Add both cans of tomatoes, garlic, cilantro, salt,...

Add both cans of tomatoes, garlic, cilantro, salt, cumin, sugar and lime juice and process until well blended. Do NOT puree.

Cover and chill for at least 2 hours...

Cover and chill for at least 2 hours before serving. Serve with your favorite tortilla chips.

Place jalapeno and onion into food processor. Process it for a few seconds.

Add in the rest of the ingredients and process all ingredients for just a few more seconds, keeping it slightly chunky (not a puree).

Put into a bowl with a lid (I like to use a large mason jar) and chill in the fridge for several hours (overnight is even better).

Then serve with tortilla chips.

I prefer a more smooth salsa and so I really love this recipe as do my kids! My husband likes his hotter so I make a mild version. Divide it in half and add some extra jalapeño seeds to his half.
