A popular and delicious Hakka, Indian Chinese takeout dish, chilli chicken is made with lightly battered crispy chicken chunks lightly tossed in a spicy chilli sauce.

Chilli Chicken

lbs boneless chicken ((preferably dark meat))

green pepper

onion

garlic-ginger-onion mix ((reserved from marinade))

ginger

garlic

black pepper

chilli powder

soy sauce

water

corn starch ((mix this

rice vinegar

honey

corn starch ((mixed with 4 teaspoons of water))

With a food processor, blitz the ginger, garlic and half a small onion until it is a fine paste. Reserve 2 tablespoons of this for browning the onions and green peppers later.

Cut up the chicken into small bite sized inch pieces and marinate it in a bowl with the ginger-garlic-onion paste, soy sauce, chilli powder, black pepper and water. (Do not add the corn starch yet. We will add that right before we deep fry the chicken.) Marinate in the fridge for 1 hour

Chop the green peppers and remaining onion into bite sized pieces and set aside

Preparation

Chop up the chillis in the slices (keep the seeds) and add it to a small bowl

Add in the rest of the ingredients in the sauce ingredient list except the corn starch

In a small bowl, mix 2 teaspoons of corn starch with 4 teaspoons of cold water, then add it to the sauce and stir to combine

Set the sauce aside

Making the Sauce

In a wok, frying pan or deep fryer set the oil to 375F (191C).

Add in 6-7 tablespoons of corn starch to the chicken and mix until combined and chicken is coated lightly

When the oil is hot, add the chicken into the oil to cook in batches (careful not to over crowd the oil, which can drop the oil temperature)

Cook the chicken for about 5-6 minutes and set aside on a plate with paper towel or newspaper when it is done

In a wok or frying pan, set the stove to medium to medium high heat and add 2 tablespoons of oil

When the oil is hot, add in the 2 tablespoons of ginger-garlic-onion mix that was reserved from preparation and cook it until it is toasty and brown. Approximately 1-2 minutes. Careful not to burn it.

Add in the onions and green pepper chunks and cook it for about 2 minutes. We want to keep the veggies somewhat crisp still

Give the sauce a quick stir (the corn starch likes to settle at the bottom) and add it to the wok

Keep stirring the sauce until it thickens and becomes translucent and thick

Once the sauce has thickened, add in chicken and mix everything together until the chicken is coated with the sauce

Turn off the heat and enjoy it with some rice! :)

Chilli chicken

(Optional) If you prefer to skip the egg in the recipe, it is good to brine the chicken to keep it juicy, succulent and to prevent from drying up. Follow the instruction in recipe notes below. 

Slice chicken to bite sized pieces about half inch cubes. Add chicken to a mixing bowl. Ensure it is drained completely.

Then add 1½ tsp soya sauce, 1½ tsp chilli sauce, ¼ tsp pepper powder, ¼ tsp red chili powder (optional) and 1 pinch of salt.

Then sprinkle corn flour &amp; plain flour.

Add the egg white or water just as needed to bind the flour with the chicken. If the mixture is dry add more egg white or sprinkle some water.

Set this aside until you prepare the ingredients &amp; the sauce. You can also refrigerate overnight and use.

Cube the onions &amp; bell pepper. Separate the layers and slit green chilies.

Prepare the sauce in a bowl. Add 1 tbsp soya sauce, 2 tbsps chili sauce, 2 tbsps tomato ketchup, ½ tsp red chili powder, 1 tsp vinegar and  ½ to 1 tsp sugar to a bowl. Pour 2 tbsps of water and mix well. Set this aside.

Preparation for chilli chicken

Heat oil in a pan for deep or shallow fry. It can also be grilled at 240 C for 20 to 25 minutes in a preheated oven.&nbsp;

Check if the oil is hot enough by gently sliding a small quantity of batter to the hot oil. It must rise without browning. 

Now add the chicken cubes one by one without crowding the pan.

Fry on a medium high heat until crisp, golden and evenly cooked from inside.

Keep stirring to fry evenly. Do not over fry as the chicken tends to turn hard. 

When the chicken is cooked completely, bubbles in the oil will begin to reduce. Drain on a kitchen tissue or a colander.

For extra crisp chicken, once done frying the entire chicken refry them in hot oil.

How to make chilli chicken

Heat 1½ tbsp oil in a wok or pan on a high flame. 

Add garlic &amp; fry for about a min.

Then add onions, capsicum, spring onions and green chilies.

Fry till they turn slightly soft for about a minute or so. The veggies must still be crunchy.

Pour the sauces. Let the sauces bubble up well &amp; slightly thicken.

Taste the sauce and add more salt, spice or sauce as needed.

Also taste the chicken first and add accordingly. 

Then add the fried chicken, Mix well. Saute chilli chicken on a high flame for 1 minute.

Toss until the chicken is coated well with sauce. Garnish with green parts of the spring onions.

Serve chilli chicken immediately hot as appetizer or with fried rice or noodles.

Asian Chilli Chicken

/ 1lb breast fillets, skinless and boneless ((2 large) (Note 1 other cuts))

salt and pepper

tbsp rice flour,

tsp ginger (, finely minced)

tsp chilli flakes / red pepper flakes ((reduce

tbsp sriracha ((sub ketchup for not spicy, Note 3))

soy sauce (, light or all purpose (Note 4))

honey ((sub brown sugar))

lime juice ((sub 2 tbsp rice vinegar))

Green onion (finely sliced), sesame seeds, fresh chilli, lime wedges

Season: Cut each chicken breast in half horizontally to form 4 steaks total. Sprinkle each side with salt, pepper and rice flour, shaking off excess.

Pan-fry: Heat oil in a large skillet over high heat. Add chicken and cook for 2 minutes. Turn and cook the other side for 2 minutes, then remove to a plate.

Chicken:

Sesame oil: Allow the skillet to cool a bit then return to the stove on medium. Add sesame oil and heat.

Garlic and ginger: Add garlic and ginger, cook for 15 seconds.

Chilli flakes: Add chilli flakes and cook for 30 seconds until garlic is golden.

Sriracha, soy and honey: Turn heat up to medium-high. Add water, sriracha, soy sauce and honey, stir well, scraping the base of the pan to dissolve all the golden bits into the liquid.

Simmer for 2 minutes until it reduce to a thick syrup. Add lime juice, then simmer for a further 30 seconds until it thickens back to a thick syrup.

Coat chicken: Turn heat off. Return chicken to pan, turning to coat in sauce.

Serve chicken, topping with remaining sauce in skillet, garnished with green onions, sesame seed and extra lime wedges, if desired.

Heat the oil in a large frying pan over a medium heat. Add the chicken, brown on all sides, then remove. Add the onion, garlic, ginger and a pinch of salt. Cook for 5 mins or until softened.

Increase the heat to high. Return the chicken to the pan with the spices, tomato purée, chilli and lemon juice. Season well and cook for 10 mins or until the chicken is tender.

Divide the chicken, red onion, chutney, herbs and yogurt between the four warm rotis. Roll up and serve with plenty of napkins
