¼ tsp kashmiri red chilli powder

tsp corn flour

firstly, in a small bowl take ¼ cup corn flour and 2 tbsp maida.

also add 1 tsp ginger garlic paste, ½ tsp chilli powder, ¼ tsp pepper powder and ½ tsp salt.

form a smooth lump free batter adding ¼ cup water.

now dip 12 cubes paneer and coat uniformly.

deep fry in hot oil making sure the flame is on medium.

stir occasionally until the paneer cubes turn golden brown and crisp.

drain off the fried paneer and keep aside.

in a large kadai heat 2 tbsp oil and saute 2 clove garlic, 1 chilli and 2 tbsp spring onion.

also, saute ½ onion and ½ capsicum on high flame for a minute.

further add 1 tsp chilli sauce, 2 tbsp tomato sauce, 2 tbsp vinegar and 2 tbsp soy sauce.

now add ¼ tsp chilli powder, ¼ tsp pepper powder and ¼ tsp salt.

stir fry until the sauce is combined well.

prepare the corn flour slurry by mixing 1 tsp corn flour in 2 tbsp water.

pour the cornflour slurry into the wok and mix continuously.

stir fry until the sauce turns glossy and thickens.

add in fried paneer and 2 tbsp spring onion. mix well.

finally, enjoy chilly paneer with fried rice.

Crispy chilli paneer is a Indo chinese starter or appetizer made by tossing fried paneer in sweet sour and spicy chilli sauce. This recipe will help you to make the best restaurant style dish. Serve it  as a snack or as a side with noodles &amp; fried rice.

Chilli paneer (restaurant style dry & gravy)

paneer ((cubed to ¾ by ¾ inch pieces))

red chilli powder ((kashmiri

cornstarch ((white corn flour))

all-purpose flour ((maida) (optional))

black pepper ((crushed

salt ((adjust

water ((as needed))

oil ((as needed for shallow frying))

soya sauce ((naturally brewed or organic))

red chilli sauce

tomato ketchup

vinegar ((i use apple cider))

red chili powder ((or red chilli paste, optional))

sugar ((adjust

garlic ((finely chopped))

spring onions ((greens chopped))

spring onion ((whites chopped))

capsicum ((bell pepper) cubed)

onion ((cubed, layers separated))

chilies

black pepper ((crushed black pepper))

cornstarch ((2 tsps for more gravy))

water ((1 cup for more gravy) (adjust as needed))

Add 3 tablespoons cornstarch, 3 tablespoons all-purpose flour (optional) to a mixing bowl.

Then add in ¼ teaspoon red chilli powder, ⅛ teaspoon crushed black pepper, ⅛ teaspoon salt and little water. Mix together to make a batter. 

Consistency: If you are health conscious and prefer to use less refined flour then make a thin batter. If you like the restaurant style chilli paneer which has a thick coating of batter, then make thick batter.

Heat 3 to 4 tablespoons oil in a deep pan for shallow frying.&nbsp;

Add 200 to 250 grams of cubed paneer and gently coat the batter.

Check if the oil is hot enough by dropping a small portion of batter. It must rise without browning. This is the correct temperature. 

Pick up each batter coated paneer with a spoon and gently slide them in the hot oil. Space them apart from each other, do not crowd. Do not disturb them for a minute or until the batter firms up. 

Stir and fry them on a medium heat on all the sides until crispy. Drain to a kitchen tissue or a steel colander.

Frying paneer

Option 1 - For dry chilli paneer : Stir in 1 tsp cornstarch to a bowl and mix with half cup water. Stir well &amp; set aside. To another small cup, add 2 tbsps chilli sauce, 1 tbsp soya sauce, 2 tbsps ketchup, 1 tsp sugar, half tsp vinegar and half tsp red chilli powder (optional). Set this aside.

Option 2 - For chilli paneer gravy : Add 2 tsp corn flour &amp; 1 cup water to a bowl. Stir well and make a lump free slurry. Keep aside. Add in 2 tablespoon soya sauce, 4 tbsp chilli sauce, 1 teaspoon of vinegar, 3 tablespoons tomato ketchup and little more salt &amp; sugar. For color add ¾ tsp red chilli powder. Stir well and set this aside.

Prepare sauce

Remove excess oil from the fry pan retaining 1 tbsp. Fry one tablespoon finely chopped garlic until it smells good. 

Then add in 2 tablespoons of spring onion whites and 1 medium onion cubed &amp; layers separated.&nbsp;

Also add in 1 slit green chili and half cup diced capsicum. Saute on a high flame for 2 mins.

Stir the prepared sauce in the bowl and pour it to the pan.

Next stir the prepared corn slurry and pour it to the pan. Mix every thing &amp; cook on a medium heat till the sauce thickens. 

Check the taste of the sauce. You can add more sauces or salt if you wish to adjust to your taste.&nbsp;

If you want to thin down the sauce, just add some hot water to get the desired consistency. Turn off the heat and cool down slightly.

Add crushed black pepper &amp; fried paneer cubes to the chilli sauce and mix. Add the spring onion greens.

Serve paneer chilli hot as a appetizer. You can also serve this with hakka noodles or fried rice.

Chilli Paneer is a popular Indo-Chinese dish, typically cooked with chillies or chilli sauce.To create a spicy semi-dry sauce perfect served with rice or noodles as a main or side dish to other Asian recipes.Or, if you prefer it sweeter, Manchurian Paneer is made the same way without chillies or chilli sauce.

Chilli Paneer Curry (Paneer Manchurian)

200 gram Paneer (cubed)

tbsp Vegetable Oil

Red Pepper (bell) (diced)

Onion (diced)

Spring Onions (finely sliced)

Green Chilli Peppers (finely sliced)

Garlic (finely chopped)

Ginger (finely chopped)

tbsp Tomato Ketchup

tbsp Rice Wine Vinegar

tbsp Soy Sauce

tsp Brown Sugar

Coriander Leaves

Spring Onion (sliced)

Prepare

Mix cornflour with spices in a large bowl.

Cheese

Add cubes of paneer cheese and coat with the mix.

Heat oil in a large pan/wok and fry the coated paneer for approximately 3 minutes on each side until golden.

Towel

Remove cheese onto a kitchen paper towel to remove excess oil.

Soften

Add more oil into the pan if needed?Over a medium heat soften the peppers onions and spring onions for 8 mins

Chillies

Next, add the chilli, ginger and garlic, and stir through for 2 mins.

Sauce

Add the ketchup, vinegar, soy sauce and sugar. Stir to combine and taste; add more of these ingredients to suit your prefered taste. Sugar for sweetnessSoy Sauce for saltinessVinegar for sournessIf you want a runnier gravy sauce, see the advice in the blog post.

Coat

Add fried paneer back to the pan and stir to coat in the sauce.

Heat

NOTE: Some ingredients can be replaced

Place the paneer onto the cutting board, cut the paneer (Indian cottage cheese) into cubes, and keep them aside. Add maida (all-purpose) flour, cornstarch, ginger-garlic paste, and soy sauce to a bowl. TIP: Also, add salt if you like. The soy sauce I am using is very salty, so I didn't have to add salt. 

Add paneer cubes and mix well to coat. Also, add 3-4 tablespoons of water to make a semi-thick batter of flour mixture so that paneer cubes are coated well in the flour mixture. Tip: The batter should neither be too thick nor too thin to get a crisp outer layer. Keep the paneer cubes aside for 30 minutes to marinate.

Marinate paneer

Heat oil in a wide pan or kadai. Add the marinated, batter-coated paneer cubes to the pan and deep fry them over medium heat until they are lightly golden. Drain and transfer them to a kitchen-tissue-lined plate to remove excess oil. Keep them aside.

Fry Paneer

Add cornstarch and 2-3 tablespoons water to a small bowl. Mix well until combined. Corn starch slurry is ready. Set it aside till use.

Make cornflour slurry

Heat 2 tablespoons oil in a wide non-stick pan on medium heat. Once hot, add chopped ginger, chopped garlic, chopped green chili and sauté for 1 minute or until the ginger-garlic slightly changes color. Next, add 2 tablespoons of spring onions and sauté 30-40 seconds. After that, add onion petals, and bell pepper. Mix well and sauté for 2-3 minutes or till the onions are slightly fragrant. 

Add soy sauce, chili sauce, black pepper, and vinegar, mix and cook for 30 seconds. Add tomato ketchup and mix again. Tip: you can adjust the quantity of chili sauce and tomato ketchup to get the desired flavor. Add 1/4 cup spring onion greens and cook for a minute. 

Turn the heat to low. Mix the cornstarch slurry, and add it to the pan. Mix well and cook till the sauce thickens. TIP: To make paneer Manchurian gravy add 1 cup of more water or vegetable stock. At this point, taste and add salt to taste, if needed. Add the fried paneer cubes and toss well to combine. Cook for 1 minute on high heat. Paneer Manchurian is ready.

Make sauce 

Transfer Paneer Manchurian to a bowl. Garnish it with spring onions and toasted sesame seeds. Serve immediately.
