Flavour chicken breasts with coriander, chilli and lime then serve with Mexican corn chips and a fresh, crunchy salad

Spicy chicken, mango & jalapeño salad

pack cherry tomato, sliced or quartered

tbsp finely chopped jalapeños

coriander,

juice 1 lime, plus halves to serve

red onion, finely chopped

olive oil

chicken breasts, torn into bite-sized shreds

Little Gem lettuces, torn into bite-sized pieces

red pepper, deseeded and sliced

mango, stoned, peeled and diced

tortilla chips, broken up a little

Put the cherry tomatoes, jalapeños, coriander, lime juice, onion and oil in a large bowl with some seasoning.

Pop the remaining ingredients, except the tortilla chips, on top of the dressing. Gently mix the salad together to coat.

Sprinkle the tortilla chips over the top and serve immediately with lime halves.

Pickled chilli peppers, spicy chorizo and sweet cherry tomatoes make up this simple and quick pasta dish. Ideal for an easy midweek meal for two

pack basil, leaves picked and roughly torn

Bring a large pan of salted water to the boil. Add the pasta, give it a good stir, then cook for 1 min less than pack instructions, about 9-10 mins.

Heat the oil in a sauté pan over a high heat. Add the chorizo and cook for a couple of mins until the oils have been released, then add the tomatoes, a pinch of sugar and some seasoning. Bubble away for 5 mins, then drain the pasta, toss it through the sauce and stir in the peppers and basil. Serve with a generous grating of parmesan scattered over.
