It's basically three recipes all wrapped into one, but made better with new additions and flavors. And it's basically the BEST sandwich ever. EVER.

Vietnamese Short Rib Pho French Dip Banh Mi with Thai Basil Chimichurri.

onion

garlic (peeled)

ginger (peeled, 1)

beef broth (divided)

star anise

cinnamon stick (4)

shiitake mushrooms

fish sauce

green onions (chopped)

red wine vinegar + balsamic vinegar*

garlic (minced)

shallot (chopped)

fresno chile (seeded + chopped)

basil (may sub regular basil)

cilantro

olive oil

salt

swiss cheese

mung bean sprouts (sliced limes and pickled carrots + jalapenos)

eggs

Preheat the oven to 325 degrees F.

Heat a large heavy bottom dutch oven over medium high-heat. Add the ribs to the skillet and sprinkle with salt + pepper. Sear the ribs on all sides for about 1 minute per side.

To the pot, add the onion, garlic, ginger, 3 cups beef broth, star anise and cinnamon. Cover and place in the oven, cook for 2 1/2 to 3 hours or until the meat shreds easily. Check once or twice while the ribs are cooking to make sure there is enough liquid. If needed, add 1 1/2 cups of water to keep the ribs in liquid about 1/3 a way up the pot.

Once the ribs are cooked, remove them from the broth and place on a plate to cool slightly. Carefully strain the broth through a fine mesh strainer and then place back in the pot. Add the remaining beef broth and 1 to 1 1/2 cups water depending on how much water you added during cooking. You want a total of at least 2 1/2 to 3 cups broth. Add the shiitake mushrooms and bring to a boil, cook five minutes. Remove from the heat and add the fish sauce and green onions. Keep warm over low heat if needed. Shred the meat.

To assemble, spread the thai basil chimichurri (recipe below) along the bottom of each baguette and then stuff with meat. Top with a few slices of swiss cheese. Place on a baking sheet and place under the broiler for 1 minute to melt the cheese. Remove and open the sandwiches back up. Top with mung bean sprouts, pickled jalapenos + carrots and a fried egg. Ladle the pho broth into small bowls and serve along side the sammies for dipping. Serve with extra chimichurri.

To make the, chimichurri (I make mine while the ribs are cooking), combine red wine vinegar, balsamic vinegar, salt, garlic, shallot, and chile in a medium bowl and let stand for 10 minutes. Stir in thai basil and cilantro. Using a fork, whisk in oil. Taste and season with salt if needed. Store in the fridge until ready to serve or up to one week.

Good news is, cooking a steak is the easiest thing ever and same with the lobster, in this case you just cook it right along side the steak.

Surf and Turf: Steak and Lobster with Spicy Roasted Garlic Chimichurri Butter.

paprika

coriander

brown sugar

cayenne pepper

olive oil (for cooking)

(1/2 cup) unsalted butter (softened)

shallot

anchovy fillet (finely chopped)

fresno chile (seed + chopped)

cilantro (chopped)

parsley (chopped)

oregano

To make the Spicy Garlic Chimichurri Butter, add the roasted garlic to a medium bowl and finely mash it with a fork. You can also use a knife to mash the garlic into a paste. To the bowl, add the butter and mix it in with the garlic. Add the shallot, anchovy, fresno chile, cilantro, parsley, oregano and salt. Mix well. Keep the butter room temp if using right away or store in the fridge for up to 1 week.

To make the steak and lobster, combine the paprika, coriander brown sugar, garlic, cayenne and a good pinch of salt and pepper in a bowl. Season the steaks all over with the spices.

Use kitchen shears or a very sharp knife, cut the lobster tail right down the center. Rub the flesh of the lobster with olive oil, season with salt + pepper.

Heat a grill, grill pan or cast iron skillet over high heat. Once hot, place the steaks on the grates, cook until desired doneness, about 5-8 minutes (depending on thickness) for medium-rare, per side.

About five minutes before the steaks are done cooking, place the lobster, flash side down on the hot grill (or pan), cook for about 5 minutes and then flip the tails over and spread the chimichurri butter over the tails. Continue cooking for another 3-5 minutes or until the shells are bright red. Remove both the steak and tails from the heat.

To serve, place the hot steaks on a platter, add a good dollop of the chimichurri butter and the lobster tails. Serve with french fries and salt. Enjoy!

This fresh, bright, and herby garnish is delightful on red meat. It also goes well with other proteins too, but the pairing that highlights this wonderful sauce the best is a great cut of steak. Instead of a heavy steak sauce that drowns the beef, try this chimichurri!

Simple Chimichurri Sauce

tsp Lane's SPF 53 Seasoning

Salt

Black pepper (16 mesh)

red chili pepper

garlic

Flat leaf Parsley

tbsp Red Wine Vinegar

Olive Oil

Chop Parsley finely. Remove seeds and ribs of red chili pepper and dice.

Add Parsley, Olive oil, Red chili pepper, Garlic, 2 large pinches of salt and pepper, Red wine vinegar, and 1-2 tsp Lane&#39;s SPF53 Rub

Mix well and place in the refrigerator up to 24 hours.

When ready pour over steak
