Chinese BBQ Spare Ribs (燒排骨)

lb pork rib

tbsp garlic salt

tbsp sugar

tsp salt

tsp white pepper

tbsp ketchup

Chinese cooking wine

0.5 tsp five spice powder

0.25 tsp red food coloring

tbsp maltose/honey

Prepare the spare ribs

Create cuts between the bones and along the thick side of the ribs so that the meat takes on the flavors better and that it cooks faster.

Rub seasoning

Rub garlic salt onto the ribs. Make sure to cover all surfaces on both sides. Pay special attention to the slits that you made earlier.

Create marinade

In a medium bowl, mix sugar, salt, white pepper, ketchup, cooking wine, five-spice powder, and red food coloring (which is optional). Set aside for the next step.

Marinate and refrigerate ribs

Place ribs in a tray lined with a plastic sheet and spread the marinade thinly onto both sides of the ribs. Wrap ribs with the plastic sheet when finished. 

Prepare glaze

For the glaze, you can use maltose or honey. Brush it over the spare ribs and they'll glisten and taste great.

Rest and bake ribs

Remove ribs from the refrigerator and allow them to rest for about an hour. Preheat the oven to 400 degrees Fahrenheit.

Glaze ribs

After 30-35 minutes of baking, remove the ribs and brush the glaze of choice onto them.

Rest ribs, cut, taste test & plate

Once the ribs have been baking for about 45 minutes in total, take it out and let it rest for 10 minutes.

2½ lbs party wings (chicken wings

NOH Chinese Barbecue Char Siu Seasoning Mix

Chinese Five Spice Powder

black pepper

garlic powder

chicken bouillon powder

hoisin sauce

oyster sauce

all-purpose soy sauce

sesame oil

sugar

honey

water

Prepare the marinade

In a large bowl, whisk together NOH Char Siu spice packet, Chinese five-spice powder, ground black pepper, garlic powder, chicken powder, hoisin sauce, oyster sauce, soy sauce, sesame oil, and sugar.

Marinate

Place your chicken wings in a large resealable plastic bag or large mixing bowl and pour the marinade over them, making sure that they are evenly coated. Seal the bag or cover the bowl with plastic wrap and place it in the refrigerator for at least one hour, but preferably overnight.

Air fry

Preheat your air fryer to 300°F. Air fry the chicken wings for 20 minutes. Flipping halfway.

Finish with glaze

Prepare the glaze by mixing together honey and water until combined and use a pastry brush to brush onto the chicken wings. Air fry again until you get caramelization and a bit of charring on the outside (about 2-4 minutes).
