Paleo Chinese Eggplant in Garlic Sauce (Whole30, Gluten-Free)

Chinese eggplants or globe eggplants ((see notes))

tbsp avocado oil

0.5 tsp coarse sea salt (, plus more)

0.25 tsp ground black pepper

garlic ((~4 to 5 large cloves))

Chinese dry red chilies

tbsp coconut aminos

tbsp aged balsamic vinegar

tbsp rice vinegar

tsp arrowroot starch

Rinse and pat dry the eggplants. Slice of the stem end with a sharp knife. Make a few small incision cuts in 45-degree angle to remove the stem. Quarter the eggplants in lengthwise then dice to 2.5 to 3-inch long sections.

Mince garlic, chop scallions, Combine Paleo Chinese garlic sauce from coconut aminos to rice vinegar in one bowl, and make the slurry with arrowroot and cold water in another bowl.

In a well-heated large saute pan, add 1.5 tbsp avocado oil, fry the ground meat over medium-high heat until it’s cooked through and break up to fine pieces, about 2-3 minutes. Season with salt and pepper.

Add minced garlic and chilies, and season with another pinch of salt. Fry with the ground meat for 1 minute. Add eggplants and 1.5 tbsp oil, and season with another pinch of salt. Stir-fry for 3 to 4 minutes.

Pour in the garlic sauce. Gently push the eggplants down to touch the liquid. Cover with a lid. Cook over medium heat for 3-4 minutes, stirring every 2 minutes. Once the eggplants turn softer, stir the slurry one more time then pour it into the pan. Stir-fry for 10-15 seconds to thicken the sauce.

Off heat, garnish with scallions and toasted sesame seeds, if using. Serve hot or in room temperature with cauliflower rice or zucchini noodles for Paleo and Whole30. You can also serve it with steamed rice and cooked rice noodles for a gluten-free meal.

These tender and juicy Chinese eggplants are cooked in an aromatic sauce infused with garlic, shallots, green onions, and soy sauce. It&#039;s sweet, savory, and tastes fantastic on top of steamed white rice!

Braised Chinese Eggplant

Chinese eggplants (about 8 ounces)

shallot (minced)

garlic

green onions

soy sauce

tbsp sugar

tsp black pepper

Soak the eggplants. Slice the eggplants into 2.5-inch pieces and slice each piece into quarters lengthwise. Transfer to a bowl and cover with water.

Add ¼ teaspoon of salt and let the eggplants soak for about 15 minutes. Drain the eggplants and rinse them under cold water. Transfer to a plate lined with kitchen paper towels and pat them dry.

Fry the eggplants. Heat ¾ cup of frying oil in a deep saucepan. Once hot, carefully add the eggplants and fry for 1-3 minutes or until tender. Do not over-fry them, or they will lose their vibrant green color.

Line a plate with kitchen paper towels. Remove the eggplants from the oil using a slotted spoon and transfer them to the paper towels to remove the excess oil. Since eggplants tend to absorb a lot of oil, I recommend patting them a bit with another layer of paper towels to remove more oil.

Sauté the aromatics. Heat some oil in a saucepan or clay pot over medium heat. Once hot, add the minced shallot and garlic, and cook for 1-2 minutes. Next, add the green onions and sauté for 1 more minute.

Add the remaining ingredients. Add the fried eggplants, soy sauce, sugar, water, and ground black pepper. Cover the pot with a lid and let simmer for about 10 minutes.

Remove from the heat and serve on top of steamed white rice! This dish is best served immediately but will keep for up to 2 days in the refrigerator.

Grilled Eggplant with Green Onions

Rinse and dry the eggplants. Using a thin knife or a fork, prick each eggplant 6-8 times all over. This will ensure the steam will escape. It will also help the flesh get a smokier aroma.

Line your gas range with aluminum foil, keeping the burners exposed. This step will make the cleaning process easier and faster.

Place the eggplants on a grilling basket over a gas stove with an open flame. Turn the burner on medium heat.

Grill the eggplants for 25-30 minutes, flipping and rotating each eggplant from time to time to ensure they are cooked evenly. The eggplants should be completely black with a flaky skin and a very tender flesh.

Remove from heat and transfer to a plate. Let it cool for 20-30 minutes.

In the meantime, heat 2 tablespoons of oil in a non-stick skillet over medium heat. Once hot, add the chopped green onions and cook for one minute. Transfer the cooked green onions as well as the cooking oil to a small bowl.

Prepare the sauce: in a small bowl, stir together the soy sauce, water, garlic, chili, sugar, and salt.

Once the eggplants are cool enough to handle, peel them using your hands. Don&#39;t worry if there are still some bits of dark skin left. Arrange the peeled eggplants on a plate.

Using a fork, slightly mash the flesh. Drizzle with the sauce and top with the green onions (and the oil). Serve with crusty bread or with steamed white rice!
