Savory Chinese lettuce wraps with ground turkey are flavorful, fast and healthy meal made all in one wok! Turkey and fresh vegetables fill each wrap.

Turkey Lettuce Wraps

vegetable oil (divided)

sesame oil

garlic (minced)

shallots (minced)

ginger (minced)

chili flakes

water chestnuts (finely chopped)

bamboo shoots (finely chopped)

shiitake mushrooms (stems removed and chopped)

carrots (finely diced)

¼ turkey

hoisin sauce (plus more for serving)

soy sauce

kosher salt (for seasoning)

black pepper (for seasoning)

scallion (thinly sliced, for garnish)

cashews (chopped, for garnish)

butter leaf lettuce (separated, washed and dried)

Heat a wok or large sauté pan over high heat.

Add 1 tablespoon vegetable oil and 1 teaspoon sesame oil and heat until hot.

Add garlic, shallots, ginger and chili flakes. Stir-fry for 2 minutes.

Add the water chestnuts, bamboo shoots, mushrooms and diced carrots, stir-fry for 4 minutes.

Transfer vegetables to a medium-sized bowl, and set aside.

Return the wok to the stovetop and heat over high heat.

Add 1 tablespoon of vegetable oil to the wok and then add the ground turkey. Stir-fry until the meat is no longer pink, about 4 minutes.

Add the hoisin and soy sauce, and then stir to combine.

Add the stir-fried vegetables and pepper. Season mixture with more salt and pepper as needed.

Spoon meat and vegetable filling into each lettuce cup, sprinkle with chopped cashews and sliced scallions. Top with additional hoisin sauce if desired.

Chinese Lettuce Wraps With Ground Turkey

Healthy, easy, budget-friendly and super delicious. These restaurant-quality san choy bow are great as a main, appetiser or a simple afternoon snack!

San choy bow (lettuce wraps)

baby gem lettuce (little gem lettuce) (or iceberg lettuce (note 1))

optional: garnish with spring onion/scallions to serve (finely sliced)

pork

onion (finely diced)

garlic (large, minced)

carrot (large, finely diced or grated)

green beans

oil oil

oyster sauce

tbsp shaoxing wine (substitute: mirin)

tsp black pepper

½ tsp dark brown sugar

fresh chilli (finely diced, any kind, birdseye

tbsp cornflour/cornstarch

½ tsp soy sauce

water ((note 2))

Saute onions, garlic and chilli with oil in a large non-stick pan or skillet. Cook medium-high heat until onion sweats and fragrant, about 3-4 minutes.

Push onions to the rims of the pan, add pork mince and saute for about 2 minutes on high heat or until meat is brown but not cooked through. (note 3)

Mix shaoxing wine into the pan and allow the wine to evaporate. This will take about 1 minute.

Add carrots, beans, oyster sauce, soy sauce, sugar, pepper. Mix and cook on low heat for 10 minutes, no lid.

Combine thickening mixture ingredients in a bowl, mix well and pour into the pan. Stir the pork and vegetables for 1-2 minutes on low heat.

To assemble the san choy bow, scoop 1 heaped tablespoon of filling into 1 baby gem lettuce leaf and (optional) top with finely sliced spring onion/scallions and fresh chilli. Repeat for remainder filling.

Serve immediately!

It&#39;s packed with healthy veggies and takes less than 30 minutes to prepare. The ground meat is cooked in a sweet and savoury sauce, making this a winning recipe for something light that still packs a punch. This is simply a wonderful dish and you can garnish it with an array of spicy and crunchy toppings. Pick your favourite ground meat, whether that be beef, pork or chicken. Yuk Sung

olive oil

lean beef mince (or pork, or chicken mince)

garlic garlic

grated ginger (or ginger paste)

onion (or one medium onion, finely diced)

carrot (or one large carrot, finely diced)

celery

mushrooms (finely diced)

salt

Chinese five spice

2-3 gem lettuces (very fresh)

rice wine vinegar

sugar

cornflour

water

spring onions (finely sliced)

red chilli (finely sliced)

chives

peanuts

Dice the onions, carrots, celery and mushrooms finely.

Mince the garlic and grate the ginger (unless using paste).

Mix together all the ingredients for the Yuk Sung sauce. Make sure the cornflour is fully dissolved.

Prepping

Add half the olive oil to a large frying pan and heat over medium-high heat.

Add the ground meat together with the garlic and ginger. Fry for 5-7 minutes until the meat is cooked through. Break the meat up quite finely whilst cooking. Remove the cooked meat to a bowl.

Add the second half of olive oil and heat over medium-high heat. Add the onions and fry for 1 minute.

Add the carrots and celery and fry for another minute.

Add the mushrooms and fry the vegetables until cooked through.

Add the ground meat back into the pan along with the sauce, salt and Chinese five spice.

Cook together for 2-3 minutes until the sauce has thickened slightly.

Make the meat filling

Cut the root end of the gem lettuce to loosen the leaves. Wash and dry the leaves thoroughly. You can also shock the leaves in an ice bath for extra crispiness.

Spoon tablespoons of the meat filling onto the middle of each gem lettuce leaf. Be careful not to overload it or the leaves will lose their &#39;bowl&#39; shape.

Garnish with sliced spring onions, finely sliced red chilli, chopped chives and finely chopped peanuts. Garnishes are optional and you can choose whichever garnish you prefer.
