Fragrant deep-fried tofu that'll disappear from the table before you know it!

Salt & Pepper Tofu (椒鹽豆腐)

oz firm tofu

green onion

oz mini bell pepper

garlic

water

salt

cornstarch

oz oil

tbsp oil

tbsp garlic salt

0.25 tsp white pepper

Cut ingredients

First, cut to separate the green and the white parts of the green onions. You're only using the firmer, more pungent whites for this dish. Dice the green onion whites.

Cut tofu

Drain and rinse the firm tofu. Cut the tofu into cubes.

Boil tofu

Boil hot water in a pot with the heat on high. Add salt and stir to dissolve. When water is boiling, add the tofu cubes. Use chopsticks to shift the tofu around so they’re all fully submerged.

Dry & coat tofu

Line a plate with a paper towel or a clean kitchen towel. Transfer the tofu cubes onto the lined plate in an even layer. Lay another towel on top and gently press to remove excess moisture.

Fry tofu

Add oil to a large pot and set the heat on high.

Stir-fry everything

Heat a wok on high. Add oil (take this from the deep-frying oil). Before the oil gets too hot (before it starts to shimmer or smoke), add the dried chili and stir immediately. Fry for just 8 seconds to extract the flavor, and then remove them.

Plate & serve

Turn off the heat and plate. Make sure to scoop up all the little bits of vegetables; they're delicious. Enjoy!

Yin Yang Fried Rice (鴛鴦炒飯)

oz rice

tomato

oz onion

oz shrimp

chicken breast

tbsp ketchup

tbsp sugar

tbsp vinegar

chicken broth

tsp oil

oz peas

Wash & cook rice

First, wash the rice 3 times in clean water.

Prepare eggs, tomato, & onion

Separate the eggs into two bowls, one for yolks, and the other for whites.

Prepare shrimp & chicken

Cut the shrimp in half, lengthwise, so they still look like whole shrimp from one side but are half the thickness.

Create red sauce

In a medium-sized bowl, mix together ketchup, sugar, vinegar, salt, and chicken broth. Have a taste and adjust the flavors to your liking.

Fold foil & prepare rice

Tear out a piece of aluminum foil, at least 1.5 the diameter of your serving dish. Fold it in half lengthwise, curve it into an S shape, and set it aside for later.

Fry rice

Heat the wok on high for about a minute on the highest heat. Then, add oil, give it a quick swirl, and add the rice in. Fry the rice on high for about 3 minutes.

Stir-fry red side

Reheat the wok on high for another 30 seconds, then add the oil. Add the chicken and stir-fry for about 30-40 seconds.

Stir-fry white side

Either use a separate wok and spatula, or give your set-up a quick clean so that there's no residue of the red sauce.

Put your aluminum mold on top of the prepared fried rice. Scoop the red sauce onto one side of the mold, and the white sauce on the other side. Gently remove the mold by pulling it straight up. Enjoy!
