Sticky rice with Chinese sausage is a dim sum favorite, and really easy to make at home. You'll be delighted with this authentic Chinese sticky rice recipe!

Sticky Rice with Chinese Sausage

Cilantro ((to garnish, optional))

Cook the sticky rice according to the directions on the package and set aside to cool (we usually just make it in our rice cooker). You can also use our method for soaking and steaming the sticky rice to pre-cook it.

Combine the oyster sauce, soy sauces, sesame oil, chicken stock, and salt in a small bowl and set aside. Heat the oil in a wok over medium heat. Add the shrimp and stir-fry for 30 seconds to bring out the flavor. Next, add the onion, mushrooms and Chinese sausage, and stir-fry for another minute, taking care not to burn the onion. Add the Shaoxing wine and stir-fry for another 2 minutes.

Add all of the cooked sticky rice to the wok and break it up as much as possible with a spatula. Spoon half of the sauce mixture over the rice (it helps to add the sauce over any clumps of rice to help break them up). Mix well, using a scooping motion to ensure the rice doesn’t stick to the bottom of the wok. Add the rest of the sauce and stir-fry until the rice is uniform in color.

Season with white pepper to taste and mix in the scallions. You can serve it as is…or if you want to get fancy, you can pack the rice into a nice round bowl rinsed in warm water and turn it over on a plate. Garnish with cilantro and serve.

You fan (油飯) is a classic and comforting Taiwanese dish packed with umami and loved by many. This recipe is your best bet for successfully making your own at home!

Taiwanese Sticky Rice (You Fan)

Cooking in a bamboo steamer.  Soak the sticky rice in water for at least 4 hours (preferably 6 hours to overnight).

When it&#039;s ready to cook, add 4 cups of water in a wok or pot and bring it to a boil. Meanwhile, line a piece of damp kitchen towel in a bamboo steamer.

Drain the presoaked rice before spreading it out evenly on the towel.  Poke some holes in the rice to allow the hot air to flow through.  Fold in the edge of the towel before covering with lid.

Set the steamer on top of the pot and steam for 25-30 minutes over medium heat.  If the rice is not cooked through, sprinkle some water, turn and flip the rice a bit and cook for another 5 - 10 minutes.

Cooking in a rice cooker. (this method doesn&#039;t work with an Instant Pot)

Rinse and drain sticky rice very well with a strainer (no need to pre soak) before putting in the rice cooker pot along with 1⅓ cup of water.  Cook it the same way that you&#039;d cook white rice.  Once it&#039;s done cooking, fluff the rice with rice paddle/spatula right away to loosen the rice.

Make Sticky Rice (choose your preferred method)

While the sticky rice is cooking, slice pork belly according the picture in the post.

Heat a frying pan (I use an 11&quot; non-stick pan) over medium heat, add pork belly in the pan and cook for about 3 minutes until the pork browns and the fat is rendered.

Add ginger, garlic, dried shrimp and shiitake mushroom.  Stir and cook for 1 minute.

Turn the heat to low before adding rock sugar, soy sauce, white pepper powder, Chinese five-spice powder, sesame oil and ½ cup of water.  Cover and cook for 2-3 minutes.

Prepare Other Ingredients

Turn off the heat, mix in cooked sticky rice and crispy fried shallot. Use the side of the spatula to &quot;cut&quot; and separate the rice and scoop the bottom to the top so that the sauce can be distributed evenly, which in turn helps to separate the rice grains. Add a bit more water if the rice is too dry or difficult to incorporate with other ingredients.

You can serve it right away; but for the best results, turn on low heat, stir and cook for another 1-2 minutes.  Turn of the heat, cover and let it sit for 10 minutes before serving.

Serve warm with cilantro and Taiwanese sweet chili sauce (optional).

Rehydrate Shiitake Mushrooms &amp; Dried Shrimp

Rehydrate Shiitake Mushrooms &amp; Dried Shrimp: Shiitake Mushrooms: In a 500ml measuring cup, rehydrate shiitake mushrooms with 1 cup (250ml) warm water. Dried Shrimp: In a separate bowl, rehydrate dried shrimp with ½ cup (125ml) warm water. Soak them for 10 to 15 minutes until softened. *Note: Save these two soaking liquids for the next step.

Prepare Ingredients

Prepare Ingredients: Prepare other ingredients while the dried shrimp and shiitake mushrooms are rehydrating. Shiitake Mushrooms: Once the shiitake mushrooms are rehydrated &amp; softened, squeeze all the liquid out of the mushrooms, remove the stems, then dice them. Drain the rehydrated shrimp, then combine the 'shrimp soaking liquid' with the 'mushroom soaking liquid'. Add ¾ cup (188ml) unsalted chicken stock, 1 tbsp (15ml) regular soy sauce, 1½ tsp (7.5ml) dark soy sauce, and 1 tsp (5ml) roasted sesame oil to the combined 'shrimp mushroom liquid'.

Sauté Sausages &amp; Shrimp

Sauté Sausages &amp; Shrimp: Add the diced sausages to Instant Pot. Heat up Instant Pot using Sauté More function. Stir the diced sausages occasionally while the Instant Pot is gradually heating up. *Note: The diced sausages will begin to release oil. Sauté for a few minutes. Add in the rehydrated dried shrimp, then sauté for 1 minute. Add in minced garlic and diced shiitake mushrooms, then sauté for another minute.

Deglaze Instant Pot

Deglaze Instant Pot: Pour the 'shrimp mushroom liquid' in Instant Pot, then completely deglaze the bottom of the pot by scrubbing the flavorful brown bits with a wooden spoon. In a stainless steel bowl, combine 2 cups (400g) glutinous rice with all the ingredients that are in the Instant Pot. Give it a quick mix. Make Scrambled Eggs (Optional): Wait until Instant Pot is hot. Add in some oil, then scramble the eggs in Instant Pot.

Pressure Cook Chinese Sticky Rice

Pressure Cook Chinese Sticky Rice: Press 'Cancel' button to turn off Instant Pot. Add 1 cup (250ml) cold water and a trivet in Instant Pot. Then, add the stainless steel pot with glutinous rice in Instant Pot. Close lid and turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 35 minutes, then Natural Release for 15 minutes. Turn the Venting Knob to Venting position, then remove the lid carefully.

Fluff Rice &amp; Garnish

Fluff Sticky Rice &amp; Garnish: Fluff rice and make sure it’s fully cooked in the middle. Transfer rice to a large mixing bowl. Add in sliced green onion and scrambled eggs, then give it a quick thorough mix. Taste and season with salt if necessary.
