Healthy Chipotle Chicken Bowls that taste just like the real thing in under 30 minutes! The marinade for the chicken breasts is smoky and spicy and only needs 10-15 minutes to do its magic. Gluten-free, quick to make, and so full of that signature chipotle flavor, this copycat recipe is great for a weeknight meal!

Chipotle Chicken Bowls (Copycat Recipe)

chicken breasts (cubed)

chipotle peppers

plain Greek yogurt

Tablespoon honey

lime juice

salt

cumin

water

black beans

garlic

oregano

rice

Tablespoons lime juice

cilantro

medium bell peppers

onion (thinly sliced)

avocado oil

salt/pepper (to taste)

Blend Marinade

In a blender, combine all of the marinade ingredients and blend them until they are smooth.

Marinate Chicken

Pour the marinade over the cubed chicken and stir gently until all pieces are well coated. Marinate for 10-15 minutes while you prep the rest of the ingredients.

Simmer Beans

In a saucepan, combine the beans and seasoning, then stir. Do not drain or rinse the black beans. Simmer the beans over low heat for about 10 minutes while you cook the remaining elements.

Season Rice

Add the salt, chopped cilantro, and lime juice to the warm cooked rice and stir. Taste and adjust the salt as desired.

Heat Skillet

Heat a cast iron skillet to medium-high heat and add 1 Tablespoon of avocado oil.

Add Chicken

Cook Chicken

Cook the chicken for 5-6 minutes per side, until it is firm and cooked through. Charred bits are a good thing!

Add Veggies

Remove the chicken to a plate, add 1 more Tablespoon of oil, the veggies, and salt/pepper to the skillet. Stir them well to coat them in the oil.

Cook Veggies

After 1-2 minutes, lower the skillet temperature to medium and continue cooking until the veggies are soft.

Assemble Bowls

Assemble the bowls, topping with Greek yogurt, fresh avocado, and a squeeze of lime. Serve and enjoy!

Such a great and easy recipe!  Perfect for meal prep too!  This beat out Chipotle for sure!  Definitely a keeper!

Chipotle Chicken Bowls

chicken thighs

olive oil

Tablespoons chipotle peppers in adobo sauce ((finely chopped))

Lime

Garlic ((minced))

Salt

black pepper

white rice

fresh cilantro ((chopped))

Corn Kernels

Pico de Gallo

Guacamole

sour cream

cheddar cheese

Lime Wedges ((for serving))

In a large bowl, whisk together the olive oil, chopped chipotle peppers, lime juice, minced garlic, honey, cumin, oregano, salt, and pepper to make the marinade.

Add the chicken thighs to the bowl and toss to coat evenly with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to blend and develop.

Preheat the grill or a grill pan to medium-high heat.

Remove the chicken thighs from the marinade and discard the remaining marinade. Grill the chicken thighs for 6-7 minutes per side, or until they are cooked through and reach an internal temperature of 165°F.

While the chicken is grilling, prepare the rice. In a medium saucepan, combine the rice, water, and salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed. Fluff the rice with a fork, then stir in the chopped cilantro and lime juice. Set aside.

Once the chicken is cooked, let it rest for 5 minutes, then chop it into bite-sized pieces.

To assemble the bowls, divide the cooked rice evenly among 4 bowls. Top each bowl with the chopped chipotle chicken, black beans, corn, pico de gallo, guacamole, sour cream, shredded cheese, and chopped cilantro.
