chipotle chili

30-minute Chipotle Black Bean Chili is the best all-in-one comfort meal! It's hearty, wholesome, well-spiced, and packed with plant-based protein. Vegan, Gluten-Free.

Chipotle Black Bean Chili

avocado oil

onion

cumin

cacao or cocoa powder

garlic

chipotle pepper in adobo (finely chopped)

tomato paste

black beans (drained and rinsed; about 4 cans)

tomatoes

vegetable broth (or water)

salt (to taste)

Serving suggestions: cilantro (avocado, vegan cheese, tortilla chips, etc)

Aromatics: Warm the oil on a large pot over medium heat. Add the onion and sauté for 3 to 5 minutes. Add the cumin, cocoa powder, garlic, chipotle pepper, and tomato paste. Sauté for an additional 3 minutes to toast the spices.

Simmer: Add in the beans, tomatoes, and vegetable broth. Give the chili a good stir, then cover and bring to a boil over high heat. Uncover, reduce the heat to medium, and simmer for 15 to 20 minutes, until thickened to your liking. Stir occasionally to prevent anything from sticking to the bottom of the pot.

Blend (Optional): Blend up ~1 cup of the chili using either an immersion blender or stand-up blender for a creamier consistency

Serve: Season with additional salt to taste, if necessary. Serve warm and top as desired. Leftovers can be stored in the refrigerator for up to 7 days, or in the freezer for up to one

1-Pot Chipotle Black Bean Chili | Minimalist Baker Recipes

This authentic Mexican Street Corn recipe features grilled corn on the cob brushed with a creamy, tangy chipotle-infused sauce, sprinkled with crumbly cotija cheese, fresh parsley, and a squeeze of lime juice for a vibrant and flavorful twist on a classic street food favorite.

Mexican Street Corn with Creamy Lime and Cotija Recipe

Olive oil (for brushing)

Sea salt (to taste)

chipotle chili powder

cotija cheese (crumbled)

parsley (finely chopped)

limes (juiced)

heavy cream

sour cream

lime (juiced)

salt

Prepare Corn

Place each ear of corn on a piece of foil. Brush olive oil on each ear and lightly sprinkle with sea salt, covering all sides. Then, wrap the foil tightly around each ear of corn to prepare for grilling.

Grill Corn

Preheat your grill to medium heat. Place all 6 wrapped ears on the grill grates, close the lid, and cook for 15-20 minutes, turning often to prevent burning. Corn is ready when it can be easily pierced with a fork.

Make Mexican Crema Sauce

While the corn is grilling, combine heavy cream, sour cream, lime juice, chipotle chili powder, and salt in a small bowl. Mix well to create a smooth, tangy sauce.

Unwrap Corn

Once the corn is cooked, carefully remove the foil from each ear to reveal the hot grilled corn.

Assemble Street Corn

Lightly brush each ear of corn with the prepared Mexican crema mixture. Then, evenly sprinkle chipotle chili powder, crumbled cotija cheese, fresh parsley, and a fresh squeeze of lime juice over the corn for maximum flavor.

Serve and Enjoy

Serve the Mexican Street Corn immediately while hot for the best taste experience.

The most delicious salmon recipe! Smoky chipotle salmon with spicy blackberry glaze and lime cilantro rice!

Blackberry Chipotle Salmon with Cilantro Rice

salmon

olive oil

tbsp sea salt

tsp chipotle chili powder

garlic powder

onion powder

tsp black pepper

blackberries (fresh

white granulated sugar

water

tsp sea salt

lime

tbsp lime juice (freshly squeezed)

serrano chili (thinly sliced)

Jasmine rice

chicken stock (or broth)

tbsp butter

cilantro

serrano chilis (thinly sliced)

blackberries

Start by preheating the oven to 450°F.

Place the berries (fresh or frozen) into a medium sized pot. Add the sugar, water, sea salt, zest from 1 lime, and a few tablespoons of lime juice. Thinly slice approximately half a serrano chili and add to the pot.

Cook the berries over medium-high heat, bringing them to a simmer. After a few minutes, use a potato masher or a large fork to crush the berries.

Continue to cook for about 10 minutes over medium heat, stirring occasionally, until the mixture thickens. Strain the berries through a fine mesh strainer and use a spatula to press the juices from the seeds. Discard the seeds and return the strained berry juice to the pot.

Continue to simmer the juice over low heat for about 10 to 20 minutes, until it thickens into a rich glaze. Set it aside until ready to serve.

Any type of rice will work well for this recipe. Wash the rice first, then transfer into a medium sized pot. Add chicken broth (measure liquids according to package instructions), sea salt, and butter.

Cook the rice according to package instructions, then remove from heat once the rice has cooked.

Season the rice with 1/3 cup of fresh chopped cilantro and squeeze in about 2 tablespoons of lime juice. Use a wooden spoon to stir the rice, then cover and keep warm until ready to serve.

I personally prefer to remove the salmon skin, but you can leave it on, too. Portion larger salmon filets into individual serving fillets.

Place the salmon into a large casserole tray or bowl and drizzle with several tablespoons of olive oil.

Season the salmon generously all over (top, bottom, and sides) with sea salt, chipotle chili powder, dried garlic, dried onion, and freshly ground black pepper. Use your hands to work the spices into a rub, coating the salmon evenly.

Line a large baking sheet with parchment paper, non-stick foil, or a silicone mat. Arrange the salmon on the baking sheet, spacing the fillets apart a few inches.

Bake in a preheated oven at 450°F until the internal temperature reaches 145°F at the thickest part of the fillet. The timing will range from 11 to 20 minutes, depending on the thickness and size of the fillets.

You can also cook the salmon in an air fryer.

To serve the dish, first spoon a generous amount of cilantro rice into each dish. Top with the salmon, then add several tablespoons of blackberry glaze over the top.

Garnish the dish with fresh cilantro, thinly sliced chili peppers, and fresh blackberries. Add a squeeze of lime juice over the dish and enjoy.
