Add a punch of zesty, spicy, tangy flavour to burgers, fries, tacos and more in less than 5 minutes with this homemade chipotle mayo! A great condiment to have on hand, especially for summer recipes, this homemade chipotle mayo is Low FODMAP, Paleo and Whole30.

Homemade Chipotle Mayo (Low FODMAP, Paleo, Whole30)

dairy-free mayo

olive oil

lime juice

½ tsp ground chipotle chili pepper

sea salt

In a small bowl, add the mayo, garlic-infused olive oil, lime juice, chipotle chili pepper and sea salt and whisk well until combined. Serve with tacos (such as my Air Fryer Shrimp Taco Bowl), burgers (like my Juicy Turkey Burgers), sandwiches, salads, fries (such as my Air Fryer French Fries) or anything needing a punch of zesty, spicy, tangy flavour!

Store in an air-tight container (such as a glass jar) in the refrigerator.

Slow cooker tacos al pastor combine the traditional flavors of cumin, coriander, pineapple, citrus, and adobo. The modern part? Your slow cooker.

Slow Cooker Tacos al Pastor

Cooking spray (for the baking sheet)

lb pork shoulder

salt

black pepper

(5 oz) onion (coarsely chopped)

pineapple

avocado oil olive oil

brown sugar or coconut sugar

lime juice (from 1 lime)

lime zest (from 1 lime)

orange juice (from 1 orange)

orange zest (from 1 orange)

chicken broth chicken stock

apple cider vinegar

garlic

chipotle peppers

store-bought or homemade adobo sauce

store-bought chili powder

cumin

coriander

oregano

onion powder

allspice

corn tortillas

(5 oz) red onion (diced)

avocado (diced)

avocado oil

agave

cilantro

store-bought mayonnaise

store-bought or homemade plain Greek yogurt

Preheat

Preheat the oven to 400°F (204°C). Slick a rimmed baking sheet with cooking spray.

Season

Season the pork with 3 teaspoons of the salt and the black pepper, making sure to cover the whole pork shoulder.

Drizzle

Place the onion and pineapple on the prepared baking sheet. Drizzle the onion and pineapple with 1 tablespoon of the oil and sprinkle them with 1/4 teaspoon of the salt.

Roast

Roast the onion and pineapple until tender, flipping them halfway through the cooking time, 15 to 16 minutes. Add the brown sugar and toss the roasted onion and pineapple to coat them. Roast the onion and pineapple until they start to caramelize, 3 to 4 minutes.

Blend

Drop the onion and pineapple into a blender or large food processor. Add the lime juice, lime zest, orange juice, orange zest, remaining 1 tablespoon of oil, broth, vinegar, garlic, chipotle peppers, adobo sauce, chili powder, cumin, coriander, oregano, onion powder, allspice, and remaining 1/4 teaspoon of salt. Blitz the ingredients until a smooth, thick sauce forms.

Cook

Place the pork in the slow cooker and cover with the pineapple sauce. Cook on low heat until the pork is fork tender, 7 to 8 hours.

Shred

Move the pork to a large bowl, and remove the bone if you are cooking a bone-in pork shoulder. Remove any fatty pieces, then use forks or tongs to shred the pork.

Stir

Stir in 1/2 cup or more of the leftover sauce from the slow cooker, if desired.

Make the tacos

Combine

In a medium bowl, combine the onion, pineapple and avocado. Stir in the oil, lime juice, agave, cilantro, and salt, and mix until all of the ingredients are well combined.

Make the pineapple-avocado salsa

In a small bowl, combine the mayo, yogurt, adobo sauce, and lime juice and stir well.

Serve

Over a gas burner or in a medium skillet over medium-high heat, slightly char the corn tortillas. Top each tortilla with the pork, pineapple-avocado salsa, and chipotle mayo.

Easy Chipotle Mayo

Mayonnaise ((see notes))

Chipotle Paste ((see notes))

Lime, (juice only (or to taste))

Garlic, (minced & smoothed with the blade of your knife (optional))

In a small mixing bowl combine 1 cup mayo, 1 tbsp chipotle paste, the juice of half a lime and a small minced cloves of garlic (optional). Taste test for spice and add more chipotle paste as needed.

Cover and store in the fridge or serve up right away!

These good-for-you baked carrot fries are crispy on the outside and tender on the inside, just like a perfect French fry should be.

Carrot Fries with Chipotle Sauce

carrots

tapioca flour flour

garlic powder

paprika

table salt

maple syrup

Preheat the oven to 425°F (220°C). Set a wire rack inside a rimmed baking sheet.

Trim off the tops and tips of the carrots. Cut them into thin sticks, about 1/2-inch (12 mm) wide and 4 inches (10 cm) long.

Steam

In a covered steamer basket set over a pan of simmering water, or in the microwave in a covered microwave-safe dish with 2 tablespoons of water, steam the carrots until just tender, 4 to 5 minutes. Pat the carrots completely dry.

Toss

In a large bowl, toss the carrots in the olive oil. In a second large bowl, whisk the flour, garlic and onion powders, paprika, and salt together. Add the carrots and toss to coat.

Arrange the carrots in a single layer on the wire rack, taking care to make sure they are not touching each other. Roast until the carrots are crispy, about 30 minutes.

Make the carrot fries

In a medium bowl, combine the chipotle mayonnaise and 2 tablespoons maple syrup. Taste, and add more maple syrup, if desired.

Serve the carrot fries immediately with the chipotle dipping sauce.
