Combine two popular bakes, a chewy chocolate chip cookie and rich brownie, in this inventive treat. Fill the cake tin with these for the festive season, or give as gifts

Brookies

unsalted butter,softened,

light brown soft sugar

dark muscovado sugar

plain flour

½ tsp bicarbonate of soda

milk chocolate chunks

unsalted butter

dark chocolate(at least 70% cocoa solids)

eggs

tsp vanilla extract

golden caster sugar

Butter a 23cm square cake tin and line with baking parchment. Heat the oven to 180C/160C fan/gas 4. First, make the cookie layer. Put the butter and both sugars in a bowl and beat with an electric <a href="https://www.bbcgoodfood.com/content/top-five-whisks">whisk</a> until just combined. Alternatively, do this in a stand mixer. Add the whole egg and egg yolk, and beat again until combined. Mix in the flour, ¼ tsp salt, the bicarbonate of soda and chocolate chunks. Press the cookie dough into the base of the prepared tin using the back of a spoon, then chill for 30 mins.

For the brownie layer, melt the butter and chocolate in a heatproof bowl over a pan of just simmering water, stirring until smooth and combined. Leave to cool slightly, about 10 mins. Whisk the eggs, vanilla and sugar together in a large bowl with an electric whisk until slightly thickened, about 3 mins. Fold the cooled chocolate and butter mixture through the beaten eggs with a large spoon until well combined.

Fold the buttery chocolate mixture, cocoa and flour together to combine. Spoon the brownie mixture over the cookie dough layer, dot with the chocolate chunks, and sprinkle with sea salt flakes, if you like. Bake in the centre of the oven for 50 mins-1 hr, or until a skewer inserted into the middle comes out with just a few crumbs clinging to it. Leave to cool completely in the tin before cutting into squares.

Chocolate Chip Cookies

unsalted butter ((cubed, room temperature))

110 g caster sugar

sugar

flour

150 g strong bread flour

tsp baking soda

tsp salt

chocolate

tbsp sea salt flakes

Add the butter and both types of sugar into a bowl of a standing mixer fitted with paddle attachment (or a handheld electric mixer with standard beaters) and mix on medium- high speed until light, pale and fluffy. This should take about 3 minutes.

Add the egg and vanilla and beat all together. Scrape the bottom of the bowl to make sure all the ingredients are combined nicely.

In a large bowl, mix together both types of flour, baking soda and salt. Turn the speed on your mixer to low, and slowly, start adding the flour mix. Mix until JUST combined. Do not overmix! You should have few strokes of flour remaining, that is absolutely fine.

Remove the bowl from the mixer, and using a rubber spatula or a wooden spoon, mix in the chocolate/ chocolate chips. Mix it all together until the chocolate is nicely and evenly distributed in the dough. Cover the dough with some kitchen wrap and transfer to the fridge to chill for minimum 2 hours (or overnight for best results!).

When ready to bake, heat the oven to 170 C (fan). Line 2 baking trays with baking parchment. Using a cookie scoop or a measuring spoon, scoop the cookie dough and arrange on baking trays, leaving plenty of space between them (roughly about 5 cm).

Bake 1 tray at a time, in the middle shelf of the oven for about 10 minutes. Make sure to rotate the baking sheet half way through the baking. The cookies should be slightly golden brown around the edges, but the middle should be still a bit soft. Take them out of the oven, sprinkle with sea salt flakes while they are still warm, then and allow them to cool for about 5 minutes before transferring to a wire rack to cool completely.

Classic Chocolate Chip Cookies

(1 stick or 1/2 cup) unsalted butter

(1/2 cup) brown sugar

(1/4 cup) caster sugar or granulated sugar

vanilla extract

(1 and 1/2 cup) plain flour or all purpose flour

baking soda

salt

(1 cup) chocolate chips, plus extra for decorating

Place butter in a heatproof bowl and heat in the microwave until JUST melted. You don’t want the butter to be hot, but just soft enough to stir with a fork until smooth.

Add sugars, vanilla and egg and stir until smooth. Add flour, baking soda and salt and stir until soft cookie dough forms. Add chocolate chips and stir until combined.

Chill cookie dough in the fridge for AT LEAST one hour.

Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Line two baking trays with baking or parchment paper.

Roll balls of cookie dough, approximately 1.5 tablespoons each, using your hands and place on prepared oven trays, leaving room for the cookie to spread.

Bake cookies for 10-11 minutes. While the cookies are still warm, add a few extra chocolate chips on top.

These are the best choc chip cookies I have just made a batch for my adult son! he absolutely loves them, such an easy recipe and I do add more choc chips!!

I have made many chocolate chip cookies and they often don't turn out perfect and I can't always figure out why. But these turned out great! The second batch (which came directly out of the fridge so the butter was nice and cold) was picture perfect. An easy recipe that I'll definitely make my go-to chocolate chip cookie recipe.

Excellent cookies. My husband likes soft cookies and these certainly fill the bill.  Personally I thought there were too many choco chips but my husband thought it was the perfect amount.  I like that the recipe uses 1 stick of butter.  I really dislike when cookies are greasy because they have too much butter in them.  I think that going beyond one hour in the fridge may make the batter just a little bit too hard, so when I rolled the balls for the cookies I very slightly squished them down a bit and that worked perfectly (softened the butter a bit too so easier to shape).  I will definitely make these again.

Made it once.... and then weekly ever since! Sometimes adding nuts to it. Sometimes folding some nutella in the centre. So yummy!
