Chocolate avocado cake

fresh dates, pitted, chopped

tsp bicarbonate of soda

maple syrup

canola oil

(about 1/2 large avocado) avocado flesh

(225 grams) self-raising flour

(50 grams) cocoa powder

salt

(60 milliliters) milk

Sea salt flakes, (optional)

avocado, stoned, peeled

(25 grams) cocoa powder

This is an insanely delicious, moist, rich, decadent piece of chocolate cake that just happens to include avocado!

Chocolate Avocado Cake and Chocolate Buttercream

dark chocolate, (finely chopped)

baking cocoa

(375 grams) all-purpose flour

cinnamon

baking soda

baking powder

(50 grams) vegetable oil

coffee

(200 grams) granulated sugar

(200 grams) brown sugar

(340 grams) butter, (room temperature)

confectioners' sugar

(94 grams) baking cocoa

(60 milliliters) heavy whipping cream

vanilla extract

table salt

Preheat oven to 350F. Prepare two 8" round baking pans with baker's spray or GOOP.

Combine chocolate, cocoa powder and three tablespoons of coffee in a heat-proof bowl. (The best way to&nbsp;do this is the brew coffee and place 2 cups into a medium bowl. Remove 3 tablespoons. You will use the&nbsp;remainder in a moment.)

Place bowl over a pot of simmering water, gently stir until melted and combined. Remove from heat. (You&nbsp;can also melt in microwave. Heat for 30 seconds then switch to 10-second increments. Stir between each&nbsp;heating.)

In a large mixing bowl, combine flour, cinnamon, salt, baking soda and baking powder.

In another bowl, whisk together the vegetable oil, remaining coffee, avocado,and both sugars. Stir in the&nbsp;slightly cooled chocolate.

Add the wet ingredients to the dry ingredients. Whisk until fully combined and smooth, scraping the side&nbsp;of the bowls completely. (try to not over mix)

Divide batter between both baking pans. Bake in preheated oven for 45 minutes, until a toothpick inserted&nbsp;into center of cake comes out clean.

Allow to cool completely before frosting.

Chocolate Cake

In a the bowl of an electric stand mixer, fitted with whisk attachment whisk butter and sugar on medium high&nbsp;speed until very pale and fluffy or about five minutes.

Be sure to stop at least once and scrape the bowl.

With the mixer off, add in cocoa powder, vanilla and salt.

Turn mixer on low and blend for about 30 seconds.

One tablespoon at a time add in heavy cream.

Once all cream has been added and mixture is mostly combined, turn off the mixer and scrape down the&nbsp;sides of the bowl.

Now turn the mixer onto medium-high to high and whisk for 3-5 minutes or until mixture is lighter and&nbsp;fluffier. The frosting will be shiny and seem to have many large air bubbles throughout and this is exactly&nbsp;what we are going for. (You can smooth those out on the cake if so desired.)

Chocolate Buttercream

A cake with avocado in it? Yep! This Chocolate Avocado Cake recipe is made with almond flour and uses avocado to add moisture to the batter, along with some healthy fats, but I pinky promise you can&#x27;t taste it! This cake is rich, fudgy and will leave you wanting to go back for seconds. 

Chocolate Avocado Cake (gluten free)

almond flour

coconut sugar

cocoa powder

tsp baking soda

tsp salt

avocado* (mashed)

almond milk**

avocado (mashed)

butter

dark chocolate (chopped)

coconut oil

sugar

Preheat:

Preheat oven to 350°. Line three 6&quot; cake pans with parchment paper and set aside. You can also use two 8&quot; cake pans if you prefer.

Combine dry ingredients:

In a large bowl, combine flour, sugar, cocoa, baking soda, and salt; set aside.

Mash avocado:

Scoop avocado out into a small bowl, then use a fork to mash it really well (mash for at least 30 seconds to remove as many lumps as possible). In a separate bowl, whisk the eggs together, then add the syrup, milk and vanilla. Last, add in the avocado.

Combine wet and dry:

Pour the wet ingredients into the dry ingredients, then use a spatula to fold everything together. There WILL be some avocado lumps, and that&#x27;s ok! Make sure not to over-stir the batter.

Pour batter:

Once everything is combined, pour batter evenly into the prepared cake pans. Bake cakes for 30-35 minutes, or until a toothpick comes out clean. Leave cakes in the cake pans for 10 minutes, then run a knife along the edges and carefully invert them onto a cooling rack. Allow cakes to cool before icing.

Make icing:

For the icing: mash the avocado into the bottom of a large bowl. Then, thinly slice the butter and add it to the bowl. Next, melt chocolate and coconut oil together (over the stove or in the microwave) until smooth, then pour the melted chocolate over the butter and avocado and allow it to sit for 3-5 minutes, which should soften the butter. Use a spatula to stir everything together until the butter is smooth (this may take a minute). Don&#x27;t worry if the butter isn&#x27;t COMPLETELY melted--it will melt once everything is mixed together. Then, add the powdered sugar and use a hand mixer to combine everything. The icing should be thick but still spreadable.

Assemble:

To assemble: You do NOT need to slice off the tops (the &quot;dome&quot;) of the cakes. Instead, just place a dollop of icing over each layer and spread it a bit, then repeat that step, stacking the cakes as you go. Top the entire cake with extra chopped chocolate and enjoy!

Chocolate Avocado Cake

This indulgent, fudgy vegan cake is topped with a rich frosting – you'd never guess that it's gluten-free and made without dairy, eggs, wheat or nuts

Easy vegan chocolate cake

ripe avocado (about 150 grams)

light muscovado sugar

gluten-free plain flour

gluten-free baking powder

400 milliliters unsweetened soya milk

vegetable oil

ripe avocado flesh, mashed

dairy-free sunflower spread

dairy-free chocolate, 70% cocoa,

milliliters unsweetened soya milk

icing sugar, sifted

Heat oven to 160C/140C fan/gas 3. Grease two 20cm sandwich tins with a little dairy-free sunflower spread, then line the bases with baking parchment.

Put 1 large avocado and 300g light muscovado sugar in a food processor and whizz until smooth.

Add 350g gluten-free plain flour, 50g cocoa powder, 1 tsp bicarbonate of soda, 2 tsp gluten-free baking powder, 400ml unsweetened soya milk, 150ml vegetable oil and 2 tsp vanilla extract to the bowl with ½ tsp fine salt and process again to a velvety, liquid batter.

Divide between the tins and bake for 25 mins or until fully risen and a skewer inserted into the middle of the cakes comes out clean.

Cool in the tins for 5 mins, then turn the cakes onto a rack to cool completely.

While you wait, start preparing the frosting. Beat together 85g ripe avocado flesh and 85g dairy-free sunflower spread with electric beaters until creamy and smooth. Pass through a sieve and set aside.

Melt 200g dairy-free chocolate, either over a bowl of water or in the microwave, then let it cool for a few mins.

Sift 25g cocoa powder into a large bowl. Bring 125ml unsweetened soya milk to a simmer, then gradually beat into the cocoa until smooth. Cool for a few mins.

Tip in the avocado mix, 200g sifted icing sugar, melted chocolate and 1 tsp vanilla, and keep mixing to make a shiny, thick frosting. Use this to sandwich and top the cake.

Cover with sprinkles or your own decoration, then leave to set for 10 mins before slicing. Can be made 2 days ahead.
