These chocolate covered cherries are made with maraschino cherries, a creamy center and plenty of dark chocolate. A homemade version of the classic treat that's impossible to resist!

Chocolate Covered Cherries

maraschino cherries

butter (softened)

sugar

dark candy melts or chocolate chips

Drain the cherries, reserving 1/4 cup of the cherry juice.&nbsp;

Place the cherries on paper towels and pat to dry.

Place the powdered sugar, butter and 3 tablespoons of cherry juice in the bowl of a mixer; beat to combine until the mixture forms a dough.

If the mixture seems too wet or sticky, add 1 tablespoon of powdered sugar at a time until desired consistency is reached.

If mixture is too dry, add 1 teaspoon of cherry juice at a time until desired consistency is reached.

Cover the bowl and refrigerate for 20 minutes.

Take two teaspoons of the cherry dough and flatten it into a disc shape.&nbsp;

Place one cherry onto each disc and wrap the dough around the cherry to form a ball. If the dough sticks to your hands, try coating your hands in cooking spray first.

Place the balls onto a sheet pan lined with parchment paper and freeze for 20 minutes.

While the balls are chilling, melt the candy melts by placing them in a microwave safe bowl and cooking them in the microwave for 30 second increments until melted.

Stir the candy melts until smooth.

Place one ball on a fork and use the fork to coat the ball in chocolate. Gently tap the fork against the side of the bowl to remove any excess chocolate.

Place each dipped ball onto a sheet of parchment paper.&nbsp; Repeat the process with the remaining balls and candy melts.

Place some of the melted candy in a resealable bag and snip off one corner of the bag to use as a piping bag.

Use the piping bag to drizzle melted chocolate over the tops of the dipped cherries.

Let the chocolate coating harden, then store the cherries at room temperature for up to one week.

These indulgent Chocolate Covered Cherries are quick and easy to make with maraschino cherries and melted chocolate! They're a great everyday treat or perfect for holiday gifting!

butter, room temperature

sweetened condensed milk

vanilla extract or almond extract

In a large bowl, mix together the powdered sugar, butter, condensed milk and vanilla extract. Using your hands, knead until it forms a thick paste. Refrigerate for an hour, or until firm and cold.

Make sure the cherries are well drained and pat them dry. Line a large baking sheet with parchment or wax paper. Set aside. 

When the mixture is firm, scoop out about 2 teaspoons and form it around each cherry, placing them on the prepared baking sheet. I find that rolling the mixture into a ball and then flattening it into a disk is the easiest way to cover the cherry. 

Place the baking sheet in the freezer for at least an hour until firm.

When ready to assemble, melt the chocolate chips in a microwave safe bowl in 30 second increments, stirring after each, until melted.

Remove the cherries from the fridge and dip into the melted chocolate, placing back on the lined baking sheet. 

Refrigerate the cherries for about an hour until the chocolate is set and firm.

I made your recipe as written, but found your measurement of 2 tsp of dough to each cherry too much- I used approximately 1 tsp and the recipe made 30 cherries.  :)  I am hoping if I leave the cherries to sit for a week or two they get gooey!

These were amazing! I made mine with cherries I soaked in brandy. I have to admit mine were not nearly as pretty. I didn’t let the dough sit in the fridge long enough though. It does need to get firm so you can roll it into nice balls.

I am making these for my son and husband. I don't like maraschino cherries as I find them much too sweet for me. They on the other hand love them. I bought some store made ones but I am also doing these because I want to try my hand at them as see if they like these better. I also do gift boxes for the homeless and I am going to put some in them for Christmas.
