A fudgy and beyond delish no-bake chocolate pie with meringue that makes the perfect holiday dessert.  It is like having hot cocoa in the form of a pie!

No Bake Chocolate Pie with Meringue

oz Oreos

butter

oz bittersweet chocolate chips

½ tbsp unsalted butter

heavy cream

sugar

¼ tsp cream of tartar

Prepare the crust: Grind the cookies in a food processor or by placing them into a sealed plastic bag and beating with a rolling pin. Make sure to obtain fine crumbs.

Then, mix the cookie crumbs with melted butter until coated and homogeneous. Press mixture into an 8-inch pie dish (side and bottom), making sure to firm the crust up until the very top of the sides of the pie dish. Chill in the fridge for about 20 minutes.

Melt 2 oz of chocolate in the microwave, about 1-2 minutes. Mix until smooth. Brush over the bottom of the pie crust. Chill for 10 minutes or until hardened.  This s to prevent the bottom of the crust from crumbling when sliced. Reserve!

Make the filling: Place 10 oz of chocolate, butter, and heavy cream into a medium bowl. Microwave for 1 ½ to 2 minutes and mix until smooth. Pour onto the pie crust and smooth top with the back of a spoon or spatula. Chill in the fridge until set, about 2 hours.

Make the Swiss meringue: Place egg whites, sugar, and cream of tartar into a large heatproof bowl. Place bowl over a pan with simmering water. Make sure the bottom of the bowl does not touch the water.

Whisk the mixture vigorously until it feels warm to the touch, 2-3 minutes.  Remove bowl and beat the warm mixture with a mixer until it doubles in volume and forms stiff peaks, about 4-5 minutes.

Top chocolate pie with meringue and toast with a kitchen torch. Enjoy!

This fudgy and beyond-delish no-bake chocolate pie with meringue makes the perfect dessert for Christmas, Thanksgiving, or any other special occasion-- or just because!  It is like having hot cocoa in the form of a pie.  The crunchy Oreo cookie crust is filled with a creamy and rich bittersweet chocolate filling.  And it is topped with toasted meringue.

Reasons to make this chocolate meringue pie:
--It’s a no-bake pie. Make the cookie crust by simply mixing crumbled Oreo cookies with melted butter, and then chill it in a pie pan in the fridge.
--It is a time saver. No need to spend time kneading dough or waiting for the crust to bake. Just mix the ingredients for the crust together and chill.  
--It’s made with minimum ingredients. While most chocolate pies out there require a ton of ingredients, ours calls for just 7 ingredients: chocolate chips, butter, Oreo cookies, heavy cream, egg whites, cream of tartar and sugar.
--It is rich and delish. It has contrasting textures (crunchy crust and creamy filling) and is mildly sweet.

Ingredients
For the crust:
8 oz Oreos
5 tbsp unsalted butter melted
2 oz bittersweet chocolate chips
For the filling:
10 oz bittersweet chocolate chips
1 ½ tbsp unsalted butter
1 cup heavy cream
For the meringue:
3 large egg whites
½ cup sugar
¼ tsp cream of tartar

Prep Time 20 minutes
Resting time 2 hours 30 minutes
Total Time 2 hours 50 minutes

No Bake Chocolate Pie recipe with Meringue

This chocolate meringue pie is classic, traditional, simple, and well...perfect.

Grandmama's Chocolate Meringue Pie

cream of tartar

vanilla

cocoa powder

flour

salt

milk

chocolate chips

Preheat the oven to 375 degrees.

For the meringue, separate the egg whites from the egg yolks. Set aside the egg yolks. The egg whites should be room temperature before beginning to prepare the meringue. Beat egg whites in a stand mixer or by hand if you prefer until soft peaks form (the meringue will stand, but will still look a little frothy). Add the cream of tartar, sugar, and vanilla to the egg whites while continuing to beat the egg whites. Continue to beating until stiff peaks form.

For the filling, mix cocoa, flour, and sugar in a medium-sized sauce pan. In a separate bowl, whisk 4 egg yolks, salt, and milk. Stir the wet mixture into the dry ingredients in the saucepan. Cook at medium heat until thick, about 5 minutes. Stir in the chocolate chips, vanilla, and butter. Pour into pre-baked pie crust.

Gently mound the meringue over hot filling being careful not to leave any gaps between the meringue and crust. Bake the pie in the 375 degree oven until meringue is golden brown, about 20 minutes. Be careful not to overcook the meringue. If your oven doesn’t brown very well, remove the meringue and use a torch to brown the peaks or increase the oven temperature to 500 degrees for one to two minutes to ensure browning, but not overcooking.

Remove the pie from the oven and allow to cool. Once the pie is cool, tent tin foil over the top of the pie and place in the refrigerator for up to 12 hours. Make sure that the pie is cool before placing in the refrigerator or condensation will form on the meringue.

Chocolate Meringue Pie

9 inch pre baked pie crust

Tbsp cocoa (heaping Tbsp)

cornstarch

Tbsp butter

tsp cream of tartar

Mix sugar, cocoa, cornstarch and salt together in a pan.

Add in milk. Bring mixture to a boil and boil for 1 minute.

Beat egg yolks together in a bowl.

Add small amount of hot milk mixture into eggs, stirring as you add. You do not want to cook the eggs.

Pour egg/milk mixture into pan with remaining milk mixture.

Over medium heat, stir constantly for about 3 minutes or until thickened.

Remove from heat and add in vanilla, chocolate chips and butter and stir until melted.

Pour mixture into baked pie crust.  Add meringue layer while filling is still hot.

Beat 4 egg whites, pinch of salt and cream of tartar until stiff.

Add sugar and few drops of vanilla.

Spread on top of warm pie and bake at 325 degrees F for approximately 20 minutes or until golden brown.

Be sure to seal meringue to edge of pie crust so no air can get in.

Allow pie to cool and set up before serving.
