In a medium microwave-safe bowl, add the caramels, half of the cream (reserve the remainder), and heat on high power to melt. It will probably take about 3 to 4 minutes total, but you must stop and stir the mixture every 30 seconds so you don’t burn it. Alternatively, you can melt caramels on the stove over low heat, using caution and stirring frequently. **(see notes below on melting the caramels)

Add about 1 tablespoon caramel to the top...

In a medium microwave-safe bowl, add 8 ounces chocolate and heat to melt, about 1 minute on high power. Heat in 15-second increments until chocolate can be stirred smooth. I prefer working in smaller batches with chocolate and recommend doing the same and not heating all 16 ounces at once; melt additional chocolate as necessary.

First, toast the pecans. Toss pecans lightly in oil. You can lightly salt them too if you like!

Preheat oven to 350 degrees F. Line a rimmed baking sheet with parchment paper or silicone baking mat.

Place pecans on prepared baking sheet. Toast in the oven until fragrant, about 7 to 10 minutes. Pecans will be lightly browned.

Oven method:

In a dry skillet over medium heat, toast the pecans until fragrant, tossing or stirring occasionally, about 2 to 5 minutes. Pecans will be lightly browned.

Stovetop method:

On a lined baking sheet create 18 small mounds of pecans, about 4-5 pecans in each mound.

Combine the unwrapped caramels and the water in a microwave safe bowl. Microwave in 30 second intervals until melted. Stir until smooth.

Spoon 2 teaspoons of melted caramel over each mound of pecans. Allow to set for 2-3 minutes before topping with melted chocolate.

Place chocolate in a bowl and melt in the microwave in 30 second intervals. I prefer to melt at 70% power so as not to scotch the chocolate. When melted or almost melted, stir until smooth.

Spoon 2 teaspoons of melted chocolate over each caramel cluster. Allow chocolate to set completely.

These easy Chocolate Pecan Turtle Clusters are a classic holiday treat. Made with toasted pecans, homemade caramel sauce and chocolate, everyone adores this turtle candy.

Chocolate Pecan Turtle Clusters 

pecan halves

butter

brown sugar

corn syrup

sweetened condensed milk

vanilla

milk chocolate chips

shortening

In a large skillet, toast the pecans over medium high heart for a few minutes.

Line 2 large baking sheets with parchment paper and spray with nonstick cooking spray.

Arrange the toasted pecans in groups of 3 leaving about an inch of space between each group. Set aside.

In a medium saucepan, melt the butter over medium-high heat.

Stir in the brown sugar, corn syrup, and sweetened condensed milk. Cook and stir continuously until it reaches 235-240F on a candy thermometer.

Remove from heat and stir in the vanilla.

Drizzle about 1/2 tablespoon of caramel over each cluster, set aside.

Fill a pot about 1/4 of the way with water, and fit with a bowl that won&#39;t touch the bottom of the pot to create a double boiler.

Heat the pot over medium heat.

After letting it heat up for a few minutes, start to stir the chocolate chips until they are fully melted and smooth.

Stir in the shortening and spoon about 1/2 tablespoon on the top of each cluster.

Once the chocolate has cooled serve immediately or store in an airtight container with parchment paper between each layer of clusters.

These are delicious! The only thing I did different is,  i added almond extract flavoring instead of vanilla

Definitively a more involved recipe than mixing ingredients but well worth the extra time to make. I made this recipe exactly according to direction, except my chocolate only came in 10 oz bags instead of 12 oz and I didn't realize it until ready to melt it, but it was absolutely prefect! We loved these turtles

I made these turtles and they are great!  One of the candies I make for hubby every year.

Made these for the first time, and they were way better than the turtles I get in Savannah Georgia. I would definitely make this again and again.
