Healthy chocolate zucchini muffins made with whole wheat flour and no butter or refined sugars (besides chocolate chips). They&#039;re naturally sweetened with banana and honey or maple syrup for an insanely delicious, perfectly moist double chocolate zucchini muffin!

Healthy Double Chocolate Zucchini Muffins

whole wheat pastry flour flour

cocoa powder

baking soda

salt

coconut oil, melted and cooled (or sub olive oil)

honey, agave nectar or pure maple syrup

vanilla

zucchini (from about 1 medium zucchini)

banana (or you can use 1/4 cup unsweetened applesauce)

vanilla almond milk

chocolate

Preheat oven to 350 degrees F. Line 12 cup muffin tin with cupcake liners and generously spray inside of liners with nonstick cooking spray.

Squeeze shredded zucchini of excess water with a paper towel. This is important, so don’t forget!

In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.

In the bowl of an electric mixer, add coconut oil, honey/maple syrup, vanilla, egg; mix on medium-low until smooth and well combined. Add in zucchini, banana (or applesauce) and almondmilk; mix again. Slowly add in dry ingredients and mix until just combined. Gently fold in chocolate chips.

Evenly divide batter into prepared liners. Bake 22-25 minutes or until toothpick inserted into middle comes out clean. After 5 minutes, remove muffins and transfer to wire rack to finish cooling. Enjoy!

Chocolate Zucchini Muffins

all purpose flour*

dutch-processed cocoa powder

baking powder

soy milk (or almond/coconut/oat)

flaxseeds

sugar

vanilla extract

vegan chocolate chips

Preheat the oven to 350 degrees F. Line a standard muffin pan with liners and spray them lightly with oil so the muffins don&#039;t stick to the liners.

In a large bowl, add the flour, cocoa, baking powder and salt. Whisk well to combine.

In another medium sized bowl, whisk together the soy milk, oil, ground flaxseeds and sugar until smooth. Lightly squeeze excess water out of the grated zucchini, then stir it into the wet ingredients.

Add the wet mixture to the bowl with the dry ingredients and stir until just combined, being careful not to over mix.  Fold in the chocolate chips, saving some for the tops.

Divide the batter among the muffin cups, filling about 3/4 of the way full. Sprinkle with extra chocolate chips, if desired. Bake for 20-23 minutes, or until a toothpick inserted in the middle comes out clean.

Cool in the pan for about 5 minutes, then carefully transfer to a cooling rack. Enjoy!

Muffins will keep for up to 3 days in an airtight container at room temperature, or up to 5 days in the refrigerator. They also freeze well.

tsp pure vanilla extract

skim milk

c. semisweet chocolate chips

zucchini (on the small to medium size)

Preheat oven to 375 degrees F. Spray a muffin tin with nonstick spray or line with muffin liners. Set aside.

In a large bowl whisk together flour, cocoa powder, sugars, baking powder, baking soda, and salt.

Add the egg, melted butter, and vanilla extract. Add skim milk and stir until combined. Fold in shredded zucchini and chocolate chips (batter will be thick).

Divide batter evenly between the prepared muffin cups and place in the oven. Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean. Remove from the oven and let muffins cool in muffin pan until they’re safe to handle, about 10 minutes. Transfer to a wire rack to cool completely.
